WIAW: The Best of Atlanta (Part Two)

You KNOW what time it is…

WIAW TealBoom! Woo hoo! Hurrah! Yee-haw! Chicka-POW!

Sorry, I always get a little excited on Wednesdays! But who could blame me? Thanks to Jenn, we have a WHOLE day dedicated to linking up and drooling over foodporn!

Foodporn: (noun). The sight or mere description of food that instantly rouses the appetite, regardless of the time since one’s last meal, causing immense salivation, longing, and a desire to eat.

So be sure to head on over to Peas & Crayons and “excite yourself” a bit on this “hump” of a day…and if that’s not enough, I’m sure my guest post from yesterday is enough to get you fanning yourself!

Now, who’s ready to get hot and heavy hungry? 😉

Believe it or not, after our MORE than decadent dinner at The Spence, the man-friend and I woke up the next morning STARVING! Luckily, our hotel was right around the corner from a little diner called The Majestic and as much as everyone touted it as
“drunk food,” I have to say, I was pretty impressed with my breakfast…

I sipped on some hot (always decaf) coffee while I waited for my order.

The Olympic Omelette with spinach, mushrooms, tomato, peppers, onion, feta and topped off with some of the BEST tzaziki sauce I’ve ever had!

I had a few bites of the grits (definitely been a WHILE since I’ve had those), but the toast went pretty much untouched since this was one mammoth of an omelette! The man-friend tore into a plate of pancakes and sausage before I was able to snap a picture, but since his plate was practically spotless afterward, I think it’s safe to say he enjoyed it! 😉

After breakfast, we met up with a friend of the man-friend and headed off to the Buford’s Farmers Market! And well, since I can NEVER say no to free samples…

Queso fresco, nachos, pork dumpling, black bean noodles, cinnamon tortilla, aged Gouda, kimchi dumpling, more queso fresco (what can I say, I love my cheese), and Finnish butter cookies.

Obviously since Buford had just taken care of MY lunch, I wasn’t really feeling hungry, but since the boys practiced a bit more restraint the face of the freebies, after we checked out, we headed down the road to one of our friend’s favorite Asian restaurants, Bo Bo Garden.

Bo Bo's - 1I sipped on some jasmine tea and took a few bites of the fried calamari appetizer that the boys ordered. It was some of the best I’ve had…then pieces of squid were HUGE and not greasy at all!

After that, the boys demolished a plate of shrimp fried rice (well, almost…the plate was seriously twice the size of my head!) and we all shared the sautéed Asian greens which were AMAZING!

After that, the man-friend and I headed back to the hotel for some much-needed chill time…there may or may not have been a two-hour nap involved! 😉

And then…it was time for MORE FOOD?!!?

We met up with Laura and a friend of hers for dinner at a place called Seven Lamps. Knowing it would be too hard to choose from all the delicious selections, we went with a variety of tapas again…

A complimentary plate of butter-dipped radishes with pickled ramps and mortadella mousse-filled pistachio macaroons 

I tried one of the pickled ramps and thought it was pretty tasty, but radishes are one of the ONLY vegetables I don’t like and the thought of eating them with cold butter? Yeah, not really my thing.

BUT let me tell you about those macaroons!

Ever taste something that IMMEDIATELY takes you back to your childhood where you get all nostalgic and sappy and stuff? Yeah, that’s what happened with these babies…this is going to sound SO weird, but the mousse tasted straight up like mashed Vienna sausages! And paired with the sweet macaroon (my FIRST ever!), it was almost like eating a sweet bologna sandwich! It was so mind-blowing that I was just sitting there like a goof trying to figure it all out! Lol

Buttered lobster bun with celery aioli, served in a steamed brioche bun and sashimi of smoked wild salmon with grapefruit, orange, avocado, and basil

These two dishes were everyone’s least favorite of the night. While I LOVED the celery aioli and the soft spongy texture of the steamed bun, the lobster seemed to be missing something and the “smoked” salmon sashimi didn’t taste smoked at all.

Luckily, our next round of plates made up for the disappointment…

Smoked ruby beets with medjool dates, bacon jam, o.j. fennel, and bucheron and hand-cut cottage fries served with Duke’s mayonnaise

The beets were not only my FAVORITE of the night, but my favorite dish from the ENTIRE weekend! The sweet/salty/smokey/cheesy flavor had me on my KNEES! I swear I could eat a plate of this every single day for the rest of my life!

The fries were REALLY good…amazingly spiced and SERIOUSLY addicting.

Seven Lamps 5Spicy lamb meatballs with cranberry beans and parmesan and savory crepes with filled with wood-grilled kale and Vidalia onion, and SMOTHERED in Gruyère gratin

The meatballs had a good flavor but weren’t as spicy as I expected but the crepes were fantastic…and those cottage fries may or may not have been used to clean every last bit of that melty Gruyère off the plate!

Instead of sharing in our last two plates, the boys ordered a secret, off-the-menu selection…

Seven Lamps 4A 50/50 burger made from brisket and top round, and topped with house-made thousand island, caramelized onions, bread-and-butter pickles, and a grilled cheese gratin

I had a small bite of the burger and thought the flavors were great, but to be honest, I was totally tapa-ing 😉 out at this point and I kinda felt like this!

We spent the rest of the night hanging out and chatting it up at The Victory Sandwich Bar where I was content nursing a root beer spiked with ABSINTHE until I saw this baby…

Needless to say, the next day’s meals were pretty slim and definitely involved a lot of green. It’s always nice to let loose while on vacation but it felt SO good to get back on track! 😉

A Marvelously Healing Weekend

Hello dolls!

I am LOVING the response to yesterday’s #strangebutgood pancakes…you guys really didn’t see that one coming did ya?

*insert evil laugh here* 😉

So how was your weekend? Was it good? Was it great?

Was it MARVELOUS?!

I gave myself a much needed break over the last few of days since it seems I’m starting to develop a penchant for turning bad weekends into good ones…

Nope, I started my weekend with an appointment with the orthopedic to go over the results from the MRI on my knee..which meant…

PantsIt was parachute paper pants time!

Can’t touch this! 😉

Of course my sense of humor died right about there.

IMG_1566The doctor informed me that I have a torn lateral meniscus. I had two options at this point…schedule and arthroscope to evaluate the extent of the damage and “possibly” (no guarantees) repair the meniscus OR get an aspiration (where they drain the fluid off) along with a cortisone shot and take it from there.

The pain I was in was so frustrating…it had gotten worse the last few days before the appointment and I was SO tired of limping around so I decided to take the less invasive (and faster) approach and agreed to have the aspiration and cortisone.

And that my friends was the most excruciating pain I’ve felt in a LONG time! They numbed the skin before placing the needle, but as they started to drain the fluid, I swore they had stuck the needle THROUGH my knee cap and was sucking the bone out! They were able to get a significant volume out and then administered the shot (which only hurt HALF as much as the first part!), but it remained swollen, red, and painful the rest of the night.

After a fitful night’s sleep (yeah, remember that bout of insomnia I mentioned?), I woke up feeling only a little better, BUT luckily the man-friend new exactly what to do to cheer me up!

We met up with some friends at J. Alexanders (first time for me) and I ordered the Croque Madame: Toasted French bread stacked high with shaved ham, Gruyere, and a PERFECTLY fried egg on top!

Omg, you guys…it was a cheesy, yolky HEAVEN!

Zombies & KombuchaAfter dinner, we headed to the theater to catch a movie we’ve been DYING (haha, get it?) to see, but not before stopping in Whole Foods and picking up a little something to help Heather digest all that glorious (yet heavy) cheese! 😉

The movie was awesome…we were rolling the entire time…and the kombucha was perfect! First time trying this flavor and I LOVED it!

The next day, the man-friend came over bearing gifts…

And contrary to how it appears, I do not have a stomach bug…

But I DO have a couple of new obsessions! 😉

After falling in love with the mango ginger chews (and proceeding to demolish my bag in less than a week!), I was on a mission to find more and he just happened to spot these peanut butter ones at TJ Maxx the other day and KNEW I would flip for them!

After the I got over my giddiness, we had a quick lunch…

Absolute HEAVEN! Stuffed with chocolate eggfruit pudding, crunchy coconut peanut butter, banana and cereal crumblies…it seriously had my eyes rolling into the back of my head with the first bite! Lol

After we were properly fueled, we rolled up our sleeves and got down to business…

In the box AND sealed…oh yeah, I totally dominated that evergreen! And that was WITH a bum leg! Oh and just for the record, I hammered TWO whole nails into the dresser! Ha, how’s that for contribution? 😉

After all that, we managed to work up quite the appetite and were pretty tired…

And then back to the casa for some more kombucha drinking and movie watchin’…

The lavender was better (so glad I’ve got two more) and the movie was just…ok, but it was the company that mattered most! 😀

Yesterday I woke up and was surprised to find my knee feeling MUCH better! It’s still a little swollen and I still have to be careful with side-to-side movements, but it’s a VAST improvement from how I felt on Thursday!

Must’ve been the healing powers of the kombucha! 😉

Pancakes & Hearts

I heart you guys.

During a bout of insomnia the other night…I got in the kitchen determined to perfect these lil’ cakes.

On the FOURTH(!!) batch, I finally got it right AND I made them a little more festive for the upcoming holiday! 😉

Because, since I love your little hearts so much and I want you to grow up big and strong, I hid something in your pancakes this morning, but you’ll never EVER guess what it is…well, unless you saw Friday’s post! 😉

Coconut Cauliflower Pancakes with Pomegranate Cream

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

    For Pancakes

    • 2 Tablespoons coconut flour*
    • 1/2 scoop vanilla protein powder (30g scoop)
    • 1/4 teaspoon sodium-free baking powder
    • 1/4 cup packed “riced” cauliflower (pulse in food processor until fine)
    • 2 large egg whites, whisked until frothy
    • 2 Tablespoons unsweetened apple sauce
    • 2 Tablespoons unsweetened almond milk
    • 1/2 teaspoon vanilla extract

    *If using regular flour instead, omit one egg white.

    For Pomegranate Cream

    • 1/3 cup cottage cheese
    • 2 Tablespoons pomegranate juice

    Instructions

    For Pancakes

    1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
    2. In a medium-sized bowl, combine flour, protein powder, and baking powder and stir to mix.
    3. In a separate bowl, whisk egg whites until frothy (about 5-6 seconds) then add “riced” cauliflower, apple sauce, and almond milk and stir to combine.
    4. Add wet ingredients to dry ingredients and mix well.
    5. Spoon batter onto skillet forming 3 medium-sized pancakes and cook 5-6 minutes per side (batter will not bubble).
    6. Serve layered with pomegranate cream, pomegranate seeds, and coconut flakes.

    For Pomegranate Cream

    1. Combine ingredients in a small blender and blend until smooth.
