A Noodle-ly Foodie [Pen Pal]

Hey guys!

I know I don’t normally post on Wednesdays, but today is a special day…

It’s Foodie Pen Pal Reveal Day!!

A HUGE thank you goes out to Lindsay from The Lean Green Bean for putting so much work into this program! I’ve been participating since March and have had SO much fun!

This month, I got matched up with Brooke from Brooke Not on a Diet…if you’ve never checked out her blog, definitely do! Having lost over 140 pounds the RIGHT way, she is so much of an inspiration…and such a beauty! 🙂

I was super excited to see the goodies Brooke sent me this month…especially the Mrs. Renfro’s salsa (my absolute favorite one…how did she know?) since I can NEVER find it around here!

It made the PERFECT addition (along with some Greek yogurt) to my
Southwestern Cheessy Egg Cups for breakfast the other day!

And as you saw on yesterday’s WIAW post, the cobwebs NOODLES were definitely put to good use. I’ve tried them before, but forgot how fun they are…I love the texture!

And topped with bat wings, eyeballs, and zombie skin, it makes for one spookalicious lunch! 😉

I debated on saving the hummus packet for whenever I’m traveling, but I couldn’t resist.  I’m a total sucker for anything with a sun-dried tomato flavor!

Spinach, TJ’s harvest grain mix, grilled turkey breast, tomatoes, tomato basil almonds and a good drizzle of hummus…

DEEEEEELICIOUS!

I also adore the teas she picked out! I’ve always liked the Tazo Passionfruit flavor, but the Stash Pomegranate Raspberry was a new one for me and it was SO good…definitely more of a summertime tea as it tasted better iced, but I’ll have to keep that in mind for next year!

Along with my foodie goodies, she also slipped in a bar of all natural tea tree soap from her local farmer’s market.

It smells like Heaven and has actually been helping with some recent breakouts I’ve been getting.

As for MY pen pal match, I was hooked up with blog reader, Pamela. After she told me how much of a chocolate lover she was, I did my best to pack up a box FULL of
chocolately goodness!

Bam!

Here’s what she had to say about her package:

“This month I received a package from Heather. I got an assortment of bars and and chocolate. My favorite was the justins hazelnutspread. I like it better than my usual go-to nutella. It is a lot healthier and I enjoyed it on top of a banana for a snack. I travel a lot for work and the bars were a good pick-me-up after a flight. I also tried my first spinning class this week and I had one to recover after class. Thanks Heather for introducing me to a ton of products.”

I’m so glad she liked them!

Spookalicious

Hey hey hey!

Well, it’s that time of week again…

Time to break out the party hats and noise makers scary masks and rubber knives and celebrate our last Halloween-themed WIAW in style!

After you get a look at my spook-tacular eats, head on over to Peas & Crayons, no tricks, now…she may not have any candy, but I’m sure she can spare a few Scarrots! 😉

I woke up Sunday morning feeling great…

Even BETTER after a cup of my new DECAF chocolate raspberry coffee!

But, there was something funny about this cup.

Because by the time I finished cooking breakfast, I had started to get these sores all over my body…

I lost my ability to speak…

I started dragging my right leg behind me as I walked…

And all of a sudden I had this intense craving…

For pumpkin-flavored brains and BLOOD!

And apparently, peanut butter…who know the two could go so well together! 😉

Then, while I was prepping my breakfasts for the week, I decided to whip up a bowl of warm stringy cobwebs!

But what to top them with?

How about eyeballs, batwings, and a side of zombie skin?

Oh yeah, that’s the ticket!
…to a nice big room with padded walls.

Though I have to say the skin was probably my favorite part!

Later on I found myself feeling snacky…

First, I went for some baby fingers.

You better not lay a finger on my Butterfinger baby fingers!

Apparently, they’d been eating a lot of pumpkin.

But while they were good and crunchy, I still felt hungry for more…

So I grabbed a bag of vampire fangs and went to town!

For dinner, I decided to round out the day with a big salad…

Topped with braaaaaaains, witches nails, and some rich imported Italian blood!

Once I finished my bowl, I finally started to feel like myself again…or so I thought.

My leg started to feel a bit better…

And not only could I form words, but honestly, I had the strangest urge to SING!

Marvelous Meal Prepping!

Hey guys!

I’m so so glad you all got just as much of a kick out of yesterday’s pancake post as I did! I guess I’ve reached the point where my pumpkin consumption is starting to make me delirious!

Darn! ‘Cause I was really hoping for that tan! 😉

I hope you all had a fantastic weekend FULL of pumpkin lovin’, some fun and exciting activities, and of course, a little R&R!

While I handled the pumpkin lovin’ and the R&R rather well this weekend, (Can I get a heck yeah for 10 hours of sleep on Friday AND Saturday…all on my own?! No pills or sleepy teas or anything…oh yeah!), the festivities were lacking. It seems our lovely 80 degree weather has decided to abandon us rather abruptly this season as it hasn’t gotten over 55 degrees in over a week!

Brrr!

I did manage to go out with some friends from work on Saturday night and had a delicious dinner of chicken tacos and grilled veggies from our local Mexican restaurant (sorry, no pics as I didn’t want to be “that girl”). I’m just proud of myself for showing some restraint with the free basket of chips and salsa instead of face-planting in it like I use to. Lol!

Yesterday was spent lounging around the house for the good part of the day (you know, before the bad part where I had to get ready for work…boo!), but believe it or not, I was pretty productive for a person who stayed in her pj’s all day!

Pretty productive at some “marvelous” meal prepping!

I normally have the hardest time finding the motivation to prep any of my meals ahead of time. Which is why most of what I eat ends up being a random bowl
(or “bug” as Sarah so geniusly coined) of whatever I grab from the fridge in my I’m-about-to-chew-my-arm-off-need-food-right-now state.

But I’ll admit, lunch and dinner?…they aren’t really my problem.

It’s breakfast.
(Or whatever you call that meal I eat after I get off work, before I face plant into my pillow while everyone else is getting their day started). Sometimes I have the energy to whip up something brilliant, but most of the time I just want to cram something in my mouth and hit the hay!

So I set to work on a recipe that would solve that problem…

AND give me a chance to break in the new whisk! 😉

Pre-oven lovin’…

Cheesy, eggy VICTORY!

Southwestern Cheesy Egg Cups

Prep Time: 10-15 minutes

Cook Time: 25-30 minutes

Keywords: bake breakfast low-carb high protein sugar-free eggs egg whites

Ingredients (Serves 4)

  • 4 large eggs
  • 6 large egg whites
  • 1/4 cup milk
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomato
  • 1/4 cup chopped fresh cilantro
  • 1 1/2 tablespoon of your favorite salt-free Mexican blend (I used Mrs. Dash)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 4 oz shredded/crumbled cheese

Instructions

1. Preheat oven to 350 and coat a regular-sized muffin pan with cooking spray.
2. In a large bowl, whisk eggs, egg whites, and milk.
3. Add veggies and spices and stir well.
4. Transfer mixture to muffin pan, filling each cup 3/4 full.
5. Top cups with cheese.
6. Bake for 25-30 minutes or until edges start to brown.*
7. Allow to cool completely before removing from pan.
8. Serve warm or at room temperature topped with your favorite salsa.

*Note: The cups will naturally rise during baking, but will “deflate” (like a souffle) after you take them out of the oven…which creates a nice little “nest” for salsa or other toppings!

Nutrition facts for one serving (3 egg cups):

Fat content will differ depending on the cheese you decide to go with. I used my
roasted garlic cheese curds…which I will now refer to as “nuggets” since it sounds more appealing! 😉

Certainly not the most photogenic breakfast, but I’m pretty sure you’re tummy won’t care after you’ve had your first taste!

Although I really have no idea what I plan on doing with that grain mix, but I’m sure with some help from the shelf below, it shouldn’t be a problem…

It’s official, I AM the condiment QUEEN! 😀
