Cranberry Orange Pancakes (Gluten-Free)

Good morning guys and Happy Pancake Sunday!

The recipe I want to share with you today is an idea I’ve had for while now. Warm and fluffy orange cream pancakes, that you would never guess to be gluten-free, chocked full of dried sweetened cranberries. The warm syrup I chose to drizzle over them is a cinch to make and it will also give you a chance to use up all those cranberries leftover from the holidays…what, you mean I’m the only one who still has those?

Guess that’s what I get for buying three pound bag!

Regardless of any produce hoarding tendencies, this is a recipe you’ll definitely want to try!

Cranberry Orange Pancakes (Gluten Free)

Prep Time: 15 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1 hungry person)

  • 1/2 cup brown rice flour
  • 1 Tablespoon coconut flour*
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon xanthan gum
  • 1/8 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 large egg white, whisked until foamy
  • 1/2 cup + 2 Tablespoons almond milk
  • Juice of 1 orange (approximately 1/3 cup)
  • 1/2 Tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 Tablespoon sweetener of choice (optional)
  • 1 teaspoon orange zest
  • 1/4 cup dried sweetened cranberries

Instructions

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine all of your dry ingredients and whisk together to break up any lumps from the coconut flour.*
3. In a separate bowl, add the egg white and beat with a wire whisk until foamy (about 30 seconds to a minute).
4. Add orange juice, almond milk, vanilla, and melted coconut oil to the beaten egg white and stir to combine.
5. Add wet ingredients to dry ingredients and stir well.
6. Fold in dried cranberries and orange zest.
7. Transfer batter to skillet to make 4 medium-sized pancakes.
8. Cook 4-5 minute per side or until you can start to see the under side edges turning golden brown (batter will not bubble).
9. Serve with warm cranberry-orange syrup (recipe to follow).

*If you don’t have access to coconut flour, you can omit it and cut the almond milk down to only 1/4 cup OR if you don’t want to miss out on the wonderful coconutty flavor in the recipe, you can throw some unsweetened shredded coconut in the batter when you add the cranberries and orange zest.

After spooning the batter onto my much loved pancake griddle (no, it is not an electric griddle in Casa de Broccoli…it is a PANCAKE griddle), I got started on the sauce.

A couple of minutes later, I got a familiar whiff of citrus cream cookies. After dismissing the momentary thought that I was having a stroke, I bent down and sniffed the pancakes and realized…

THEY SMELL JUST LIKE COOKIES!!! 

It’s ok if you’re drooling because I was then and after typing that I am again! 😉

As much as I could’ve just picked these babies straight off the griddle and started eating them like giant cookies, I just knew this syrup was going to be a winner!

Cranberry-Orange Pancake Syrup

Prep Time: 2 minutes

Cook Time: 5 minutes

Ingredients (Serves 1 hungry person)

  • 1/2 cup fresh cranberries (or thawed from frozen)
  • 1/4 cup water
  • 1 Tablespoon pure maple syrup (or more depending on tastes)
  • 1/4 teaspoon cinnamon
  • 1/2-1 teaspoon orange zest

Instructions

1. Heat a pot over high heat.
2. Add cranberries and water, cover, and allow to steam for 4-5 minutes or until the cranberries start to “pop”
3. Drain all but about 1 Tablespoon of water from the cranberries and transfer to a mini food processor, blender, or magic bullet.
4. Add maple syrup, cinnamon, and orange zest
5. Blend until smooth, adding more water to thin if necessary.

Friday’s Pop Quiz

Happy Friday loves!

I hope you all had a great end to the week and are ready to have a nice relaxing weekend. BB is out of town for the week so I was sure to make some BIG plans for the next couple of days:

1. Paint my fingernails

And speaking of my favorite purple bird blogger, it seems I’ve been tagged in a random question/quiz post…and I’m sorry, but of all the things in this world I can never resist,  free samples and random quizzes are at the top!

1. When I was little, my hair was platinum blonde, but over the years it got darker and darker and then one day, it turned red…what can I say, I’m a natural born calico.

And yes, I was also the cutest kid ever and totally rocked the side-pony! 😉

2. I was a serious hoarder as a child. Everything from old school papers to McDonald’s toys that I got with my cheeseburger 3 years ago…now, I’m a dedicated purger. I keep ONLY the bare minimum…I don’t collect anything (unless you count dishes…but that’s more of an obsession, not a collection) and I’m notorious for throwing things away that, I later discover I need. Oops!

3. When I graduated college, I didn’t even know how to fry an egg.

4. I paid my entire way through college by working at GNC for 4 years…which is where I first discovered my love for health and fitness.

5. My only New Year’s Resolution for this year was to be on time to work (for the record, it’s not really a huge deal if I’m late, but it was starting to become a bad habit)…that lasted until last Friday:

And in the last week, I’ve been late THREE times! Ugh…time to start fresh next week!

6. I’ve never been much of a sports fan, but there’s just something about the energy at a hockey game!

That being said, I refuse to go see any of our Nashville Predators home games because every time I go to a game, they lose…I’m bad luck! 🙁

7. Like Christin, I was traumatized at a young age by a horror film…I saw Stephen King’s “It” when I was about 6 or 7 and have been deathly afraid of clowns ever since.

8. When I was little, my aunt bought me some tap shoes at a local thrift store and I tapped to my little heart’s content…on the tile floor in the bathroom for months.

9. The toilet paper roll must always be situated so that the paper pulls from the top. NOT from underneath…ugh, it makes my eye twitch!

10. I recently tried Marmite.

And I didn’t like it 🙁

11. A few years ago, I cut 13 inches off my hair and donated it.

And for the last couple of months, I’ve been toying around with the idea of doing it again…but not quite sure yet.

Most of the time, no…but I quit eating citrus right before bed because I ALWAYS have the weirdest dreams…usually involving work…as if I don’t already get enough of that place!

Today at work…I love the people I work with! We are always cracking jokes and acting silly whenever we can!

3. What band/album are you most smitten with right now?
El Camino by The Black Keys…or actually, ANYTHING by them…they are quickly becoming my favorite band!

I’m a total boring person, I know, but the first thing I would do is invest it…what can I say, I’m a planner!

Love the One You’re With by Emily Giffin…yeah, remember that one…the book I read last summer when I went to California? One of my new year’s resolution last year was to read a book a month and I read ONE in a YEAR! #fail

My cell phone…I swear the thing is attached to my hip at all times! 

7. Who is your favorite comedian?
Hmm, that’s a bit of a hard one…either Jeff Dunham

No, I’m much to fickle…I might get one some day, but it will definitely have to be something with GREAT sentimental value…have you seen what tattoos look like on 80 year olds?! lol 

9. Do you like your middle name?
Love it! It’s Lanee’…pronounced “La-nay” 🙂 

10. What is your favorite animal?
Ok, so this question could go a few different ways…I’m gonna go with flamingos at the zoo, jellyfish at the aquarium, and cats in my house!

11. What is the worst food you’ve ever eaten?
Anything they serve out of the hospital cafeteria for lunch.

Things Up to Thursday

Hey boos!

So, by the looks of the comments on yesterday’s post, not a single person celebrated National Fro-Yo Day with me?!

Well, as long as you’re not vegan, you BETTER be celebrating this weekend:

I’m trying my best, but I just can’t eat enough for all of you 😉

Oh yeah…that would be THREE different cups of fro-yo…all with different flavors and toppings…ALL eaten within the last week!

So howabout a Thursday Things post?…a “catch up” post if you will to let you guys see a little from my week so far.

Here are just a few of the things that have gotten me through this week and will hopefully continue on for one more day…who’s ready for Friday?! I know I am!

Running with Broccoli…

…Babe, that is! 😉

BB and I went on our first long run together Sunday afternoon and it was great!

Thankfully he slowed down his pace a little for me (I still can’t believe an 8 minute mile is a SLOW pace for him!). The weather was a little cold (see the chill bumps?) that day, but having someone to run with definitely takes your mind off things. It reminded me how much I enjoy running with a partner.

Proven fact: good conversation makes the miles FLY by!

A Mid-Week Date Night

BB and I went out last night to one of my favorite places in our little town called The Blackhorse…it’s a local brewery with some of THE BEST pizza I’ve ever had!

We ended up getting a beer a piece (vanilla cream ale for me and a red ale for BB), beer-cheese dip and chips, and

“The Tunisian”: Garlic butter, honey and curry topped with roasted chicken, roasted red pepper, red onion, mozzarella & provolone

Mmmm!

And what was even better was having enough leftover pizza today for lunch along with my delicious fruit-topped salad:

Spinach topped with oranges, dried cranberries and almonds..can’t believe I haven’t thought of this combo before!

Unfortunately, after a week of fun running, beaver humor, pizza, beer, and salads,

Ever feel like you get blindsided by a cold/sinus/whatever-the-heck-is-going-on-with-my-body-causing-me-not-to-breathe-normally thing?

Well, such is the case with this.

And that is where “The Boyfriend” comes in to play:

I’d say in about an hour, I’m going to be face-plantingslurping…daintily consuming a warm bowl of chicken and dumplin’s!
