Well, I just thought I’d go ahead and crank up some tunes…

Because it’s time to parrrrrrrtay!

This week marks the second in our “Summer Staples” theme for the month and it is definitely alive in this post. I just can’t get enough of this season’s fresh produce from my local farmer’s market!

I got this morning started off (slash ended for me since I’m now a professional zombie) right with my newest g0-to breakfast…

Laura’s 150 Cal Protein Cake!

I made mine with a combination of my favorite GNC powders and topped it a drizzle of coconut flour sauce (coconut flour thinned with water), fresh cherries, and a few coconut flakes!

Protein-packed PERFECTION!

After that, I was off to dreamland!

Once I woke up, I chugged some water and hit the gym for a quick cardio and abs workout. I prefer working out on an empty stomach, but let me tell you, the drive home felt RIDICULOUSLY long!

Fortunately, that gave me just enough time to think about what I wanted for lunch. By the time I pulled into the driveway, I knew exactly what I wanted…

RUNNY EGGS!

I call this my summer breakfast sandwich extraordinaire!

toast
cottage cheese
sun-dried tomato spread
steamed kale
perfectly fried egg with runny yolk
bell peppers
tomato slices
fresh ground black pepperΒ 
toastΒ 

Mmm mmm MMM!

On my way to the hospital a few hours later, I enjoyed one of my Coconut Cranberry Protein Bars with a much-appreciated although un-pictured cup of coffee! πŸ˜‰

And as if I didn’t cram enough fresh veggies into my glorious breakfast sandwich, I made myself a mother of a salad for dinner that was nothing short of spectacular…

kale
cottage cheese
sprouts
okra
bell peppers
tomatoes
red onion
fresh ground pepper
nutritional yeast

Don’t you just wanna dive right in?

But wait, that’s not all!

What’s a ginormo salad without a bit of crunch?

I felt like I won the lottery the other day when I found one of my favorite flavors of Pop Chips on sale at Kroger…love love love that spicy flava!

    Ahhh, there’s the cake I’ve been reading so much about! I think I really need to try that! I love runny eggs! The yolk makes a great ‘sauce’ for just about any veggie you mix with it. Haha! I don’t think I’ve ever heard that Outkast song! I’m pretty much stuck way back when with ‘Roses’….that was the shiz!

  10. the fresh cherries look amazing! i never have the patience to actually prepare cherries for toppings, etc. i just fill a bowl with them & go to town.

  14. I used to work overnight too…it definitely screws things up! Are you able to sleep for a full 8 hours after your shift?

    And I want that sandwich. Like now. πŸ™‚

      On a good day I can. Usually, I’m out for about 6 or 7 at the absolute most but of course that’s with waking up a few times. It’s definite progress though from when I started and couldn’t seem to sleep more than 4 or 5. Yeah, those were rough! I’m sure I could sleep more soundly if I tried taking something and although I’ve taken melatonin a few times before (and it helped) I just really don’t want to become dependent on something to sleep normally, ya know?

      Yes ma’am!! And I am in LOVE with the sun-dried tomato spread! Picked it up on a whim at the store the other day and the jar’s already half gone! Lol

  23. I am in love with your entire day. Coconut and cherries are my top flavors right now, I am an avocado addict, and shut the front door… Why don’t we have jalapeno pop chips here?

      I can NEVER get enough coconut! Which is so weird since I used to despise it when I was younger! And this was the first I’d ever seen of the jalapeno chips on my turf! I had a friend mail me some before, but now I can finally buy them myself! These and the BBQ are my faves!

    Your Runny Eggs Sandwich looks yummy and I am going to have it for my Sunday Breakfast Lazy Marathon (catching up with the papers mail, putting on only good music, and sipping Chai tea latte). Better have extra ingredients on hand though , otherwise my housemates will eat all of mine. RATS!!!! Your salads look lovely and I bet taste spectacular. Makes my being healthy fun………..

      LOVING salads lately! I randomly threw some blueberries in a salad for dinner tonight and it was amazing! Love contrasting flavors!
