Pumpkin Pie French Toast

So, who’s seen enough pumpkin this month?

Anyone getting tired of it yet?

Because I could just keep this lovely plate of deliciousness all to myself!

But I’m going to venture to say that there are at least a few of you out there who aren’t already sporting an orangish glowΒ just yet, so please, allow me to introduce you to…

Your new favorite French toast recipe! πŸ˜‰

Pumpkin Pie French Toast

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

  • 2 whole eggs (or 1 whole egg + 2 egg whites for a lighter version)
  • 2 tablespoons pumpkin puree
  • 1/2 teaspoon maple extract
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 tablespoon milk of choice
  • 1/2 tablespoon butter
  • 2-3 slices whole wheat bread (I used this low calorie bread so I had 3 slices)

Instructions

1. Set a non-stick skillet over medium heat and add butter to melt.
2. In a small bowl, combine eggs, pumpkin, extracts, spices, and milk and whisk well.
3. Transfer mixture to a shallow dish and allow bread slices to soak* (30 secs – 1 minute) before transferring to pan to cook.
4. Cook each side approximately 5 minutes or until brown and crispy.
5. Plate and top with pumpkin butter, nut butter, cranberries, walnuts, and/or maple syrup.

*The trick to making PERFECT French toast is allowing the bread enough time to really soak up your egg mixture…don’t dip…SOAK! You’ll thank me later! πŸ˜‰

While in St. Louis, my friend,Β Eric, had mentioned that French toast was the ONE breakfast from his childhood that he always looked forward to the most. Since I’d already blown his mind (his words, not mine) with the Pumpkin Pecan Pancakes, it only made sense to see if I could wow his tastebuds with a French toast version!

And we were BOTH fans! The pumpkin flavor was spot on. The buttery crisp crust was the perfect complement and the addition of the maple extract really took it to a whole new level.

Seriously, you HAVEΒ got to make this!

And for all my no egg eaters out there…try my VEGAN version!

I topped mine with a big spoonful of pumpkin puree, dried cranberries, and toasted pecans and then added a drizzle of pure maple syrup post photo!

Mmmmmm!

  2. French toast of my mom’s homemade bread was my childhood dream-breakfast. And the soaking is for sure the trick! She’d let it sit in the the egg mix until it nearly fell apart.

    Never enough pumpkin! I’m hoping for a glow that’s so orange I won’t need extra coats of spray tan for my comp. LOL! If only I could eat this… 9 more days and then it #getinmybelly time!!! #stoptemptingmeevilwoman

      Haha! You wanna know something funny? I FINALLY got all your goodies together and thought about shipping them to you early (since I THOUGHT I was going to be flying down and didn’t want to have the extra haul), but THANK GOD I remembered that you’re still a few more days out from your comp! How mad would you have been if I sent you a box full of stuff you couldn’t touch? Lol

      Mmmm, homemade bread makes the BEST French toast! My mom never made homemade bread…I’m pretty sure I thought bread just existed…like maybe there was a bread tree somewhere where all the slices hung from! πŸ˜‰

      • I would have DIED. Actually, I probably would have set up a little shrine to it and lit candles around it until it was time to eat. That would have just been creepy, so it’s probably best you waited. speaking of… I need to mail Lauren’s stuff! Doh.

    The breakfast I remember most from my childhood is pancakes. My mom and my brother weren’t fans (crazy, I know) so I only really got them whenever we went out for breakfast, which wasn’t very often (usually only when we were travelling). Because I loved them and rarely got them, they always felt like a huge treat.

      My mom rarely ever made pancakes when I was growing up, but it was my grandma’s specialty…she would always form them into cute little shapes for us!

    French toast was always a big breakfast food growing up. I’m not sure how my mom did it, but dang she has the “special touch” when it comes to french toast. Ok now I could so go for some of her deliciousness!!

  5. These look fantastic! I love French toast and I love pumpkin, so why haven’t I thought of combining the two?!

    When I was a kid I loved my mom’s homemade waffles from her old, falling apart Fanny Farmer cookbook! I think I need to dig that up when I’m home over the Christmas holidays – I haven’t had them in years. πŸ˜€

  7. I alwaaaays ate french toast when I was younger. My family made it much more often than pancakes or anything. This is right up my alley!

    I was never much of a french toast fan, until I made it with my homemade bread. The bread I make is nice and sturdy compared to wheat bread from the stores. I used to HATE how those would always fall apart, because like you, I dont dip, I SOAK my bread. SO my homemade bread can take it, which makes it taste oh so glorious πŸ™‚

  13. We always ate cereal for breakfast. [I still love it. :)] Except for Saturday mornings my dad would sometimes make pancakes. I liked to make my own, and I liked them so they weren’t really cooked and the insides would run out when we cut them. I was always a weirdo.

    PS I haven’t opened a can of pumpkin yet!

      Hmm, semi-raw pancakes? Yeah, that’s a little weird…but I still love ya! πŸ˜‰ My dad never cooked when I was growing up (unless you count manning the grill). I didn’t even realize he COULD cook until after I moved out…that man makes a KILLER chili! I can’t believe he kept it to himself all those years!

      And you may not have cracked a can, but it KILLS me to know you have that pumpkin powder! Must.get.my.hands.on.now!!

  14. The last question is rhetorical, right ;)? There is no such thing as too much pumpkin! Your French toast looks sooo good – can you believe I’ve never had French toast before?

    As children we always ate the hugest bowls of cereal mixing all varieties we had on hand – delicious messes. What I loved most, though, was having breakfast in company with my mom and sister.

      Awww, that’s so sweet! My mom rarely ever sat down with us to have breakfast since she was always busy with trying to get my sister and I dressed, lunches made, and out the door. Plus I think most days she subsisted off coffee alone! :-/

      You know, the concept of “cereal mixing” was something I JUST discovered since finding blogworld! I can’t believe (being the cereal addict that I am) that I’d never thought to combine my favorites into ONE bowl! Haha!

      Never had French toast? What a shame! *shaking my head*

  15. I think I had french toast almost every day growing up, and I’m still not tired of it. What a great idea to throw in the pumpkin and the maple extract. I must find this extract. Wow!
