Birthday Wishes…

I woke up on Friday morning craving pancakes something fierce!

Since it was my birthday, I figured it was about time for MY favorite cookie to join in on all the pan-COOKIE fun

Almond shortbread!

Almond Cookie Protein Pancakes

Prep Time: 5 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats, ground into flour
  • 1 Tablespoon coconut flour*
  • 1/2 teaspoon sodium-free baking powder
  • 1/4 cup no-salt-added low-fat cottage cheese
  • 2 Tablespoons unsweetened almond milk
  • 1/2 medium ripe banana
  • 2 egg whites
  • 1/2 teaspoon almond extract
  • 10 drops butter-flavored Capella drops (or 1/8 teaspoon butter extract)
  • 1-2 tablespoons chopped or slivered almonds (optional)
*Coconut flour gives these pancakes that smooth, cookie-like texture, but if you don’t have access to it, just use 1/2 cup oats instead of 1/3.

Instructions

1. Heat a non-stick skillet to medium heat and coat with cooking spray.
2. Combine oats, coconut flour, and baking powder in a blender or small food processor and process oats to a fine powder.
3. Combine cottage cheese, milk, banana, and extracts in a blender or small food processor and blend until smooth.
4. Add wet ingredients to dry ingredients and stir until flour is incorporated.
5. Fold almonds into batter if using.
6. Spoon batter onto skillet, forming 3 small-medium-sized pancakes.
7. Cook 5-6 minutes per side or until golden brown with crisp edges.
8. Plate and top with slivered almonds, fresh fruit, and/or maple syrup.

Now, originally, I was going to keep these from you guys
for at LEAST a week or so. I know, I’m horrible, but hear me out…

Since Nikki and I still haven’t had time to bond, I knew if I wanted to take pictures, my phone was my only other option. So, seeing as the breakfast sushi shots came out pretty well with the ol’ iPhone, I thought I’d give it a go…and oh my gosh, they came out TERRIBLE!

I couldn’t do it. I’m just too much of a perfectionist to have allowed those pictures to make it to the blog…especially for pancake Sunday (it’s like hallowed ground ya know)! 😉

Then, on a whim, I decided to pick up Nikki and take a shot. I looked at the display and I couldn’t believe my eyes…

IT LOOKED PERFECT!

After that, I celebrated by taking about 3986 more pictures (only a mild exaggeration…just be glad I was able to narrow it down to seven for this post)! 😉

I’m still at a loss as to why the pictures turned out so well since I still have no idea what I’m doing, but for now I’m perfectly content with thanking the birthday fairy for granting me my ONE birthday wish!

    Loving these birthday pancakes! I wish I could still find fresh figs around here, but nope!

    I am so happy you got a new camera, I need to get my looked at and fixed still. Maybe just get a new one, not sure 😉

      Me too! A little almond extract just takes it to a whole other level! I love adding it to my oats and smoothies! And I totally lucked up and found them ON SALE at the Publix here in town…only $4 for a pint! Guess they were giving me a birthday present! 😀

If I could have one wish today, it would probably be to be lying on a beach in Hawaii. It’s -23C here this morning aaaaaaand I wouldn’t mind a little warmth and sun.

      Oh man, I am right there with ya! In fact, I was JUST telling a friend of mine tonight how I’m not ready for the cold weather and need to “fly South” for the winter! Lol

    As always, your pancakes look amazing – I’m going to make KMB inspired pancakes this morning, but minus the figs since I haven’t seen them for sale lately. I have fig goat cheese right now – maybe I could kill 2 birds w/ one stone & use it in place of the cottage cheese! 😉

      Aww, thanks girlie! Mmm, fig goat cheese! Did you try it in the pancakes? I might have to give it a go with my cranberry cinnamon goat cheese! 😀

      Mmm is right! These were so darn good…I can’t believe I didn’t make them sooner!

      I actually got a really good deal on Nikki from Best Buy for Cyber Monday…I got the camera body, stock lens (18-55mm), and extra lens (55-200), camera bag, memory card, charger, and two DVDs all for only $450! I had a Canon Rebel XS before this one and was really hoping to get another one since I think Canon is more user friendly and I’m already familiar with them, but I just couldn’t pass up a deal this sweet! 😀

  8. Ohh yum, I need to find myself some butter extract now! These look so pretty with the fresh figs. I haven’t been able to find figs in a few weeks, so I was super excited when I came home on Friday and found some at the grocery store near my parents’ house – I snatched up a few and then cringed when I was told the total at checkout. 😛 I hate that they’re so expensive!

    My wish would be for me to somehow absorb all the material for clinical nutrition so that I can ace my exam on Friday without studying!

      At the beginning of the season I was paying $6 per container…I seriously can’t believe the store where I found them has had them on sale for weeks at $4! I’d be lying if I said I haven’t gone back TWICE to buy more! Lol

  11. I’m so glad to hear you and Nikki have finally bonded. It’s been like a hot minute, so it was time. My camera is at the repair shop (Boo Hiss) for another week or so. I’ve been using my iPhone but it’s not the same.
    I’m also loving almond extract lately. My latest (and greatest, obviously) batch of granola has almond extract and cherries. I can’t wait to dig in, which is very much how I feel about your pan cookies. I need to get coconut flour stat.

      Oh I know! I can’t believe when I first started the blog, ALL I used was my iPhone! I’ve seriously gotten spoiled! Almond and cherries is one of my favorite combos, but I swear a little almond extract added to anything makes it about 9359875 times better! The pan-cookies are calling to you…get that coconut flour girl! lol
