So, I’ve been working on a lot of recipes lately, some looking promising, others…
Obviously needing a bit more work.
First official pancake fail of 2o13!

Since I’ve been a busy little bee in the kitchen lately, I haven’t really had the time to take pictures of a full day’s eats, but I DID manage to find some drool-worthy snapshots taken over the last couple of weeks…
Unsurprisingly, they’re all pictures of my breakfast…
Breakfasts?…

Great…now I’m thinking of pie! 😉
While I haven’t had any pie, I did enjoy a little coconut cupcake the other day…which we will refer to as a MUFFIN for all breakfast purposes! 😉
Topped with a bit of Greek yogurt and shredded coconut, it was a nice quick eat before jumping into bed after a LONG night shift at the hospital.
A few other quick and easy/prior to face-planting eats:
Warmed peanut flour sauce topped with sliced banana and obligatory cinnamon (of course more was added after the photo) 😉
Coconut Banana Bread with SF Mountain Berry Jam and warm coconut butter drizzle.
And on a more savory note…
A BIG bowl of spaghetti squash topped with thinned hummus, tomatoes, cilantro, and fresh ground black pepper
Quick, easy, and not requiring too much from my zombie mind!
Of course, even on days where I DO have more brain capacity to whip up a creative meal, I’d rather just be lazy…
This amazingly SUPER THICK Greek yogurt mixed with almond milk and topped with this CRACK-TASTIC cereal
I may be lazy, but this took less than five MINUTES to throw in a bowl and kept me full for five HOURS…oh yeah, gotta love a big bowl of GREEK!…just don’t tell Cho I cheated on him! 😉
Because we had a date just a few days ago…
A Running with Spoons approved breakfast of Chobani Greek yogurt (I SWEAR it’s in there somewhere) topped with this cereal, sliced banana, persimmon, and creamy almond butter.
Seriously, one of the BEST combos ever!

It’s a little strange, a LOTTA good…
And umm, yeah, you might wanna bring that bib back with you! 😉

Oh Gosh, can it be Friday now? I mean like NOW??? Whatever that is, I want it. Is it mean, that I am a bit relived that you had a tiny pancake fail too? I mean, I am the pancake-failer in person and it’s just always nice to know that even perfectionists like you have a messed up pancake once in a while (1 in 5 years I suppose) 🙂
Lazy breakfast is oatmeal with banana and protein powder or a smoothie. But lately I am all about breakfast bakes (buckwheat bowl, breakfast cookie) or……guess what…pancakes.

Gah, I used to be OBSESSED with breakfast bakes…I’d have at least two a week, but then I got lazy (and impatient) and quit making them! But I pinned that recipe for Lisa’s microwave buckwheat bowl the other day and DEFINITELY plan on making it soon!
Yum! Love the greek yogurt mixed with almond milk cereal combo. BTW: Do you buy the Greek plain non-fat..or a flavor?
The flavored varieties tend to be a little too sweet for my tastes so I usually stick with the plain. And I mix it up with non-fat and 2% depending on what I’m loading up my bowl with! Mountain of nut butter = non-fat…fruits and cereal = 2% 😀
I’m hungry & I just ate! 😉
Pancakes are the ultimate breakfast but I do love a good smoothie as a go to breakfast!
I had so many things to comment on but got toally distracted by that last pic. Can you bring me some of that this weekend?
Fav lazy breakfast: cottage cheese with cereal, almond milk, peanut flour, and an ass-load of cinnamon. (I always add more post-picture too!)

Oh yeah! Just goes to show…even a {pancake} queen can (momentarily) fall from glory! Of course, showing proof also just fuels the motivation to conquer this recipe once and for all! 😉
And seriously, I may be a little biased, but I SWEAR this banana bread will change your life! It is soooooooo good!

I definitely approve of your cereal and yogurt bowl! But then again… I approve of this whole post in general – nothing but breakfast for a week sounds good in my books 😀 And is it bad of me to admit that my lazy breakfast and my best breakfast are one and the same? I’m never really up for making anything more complicated than a bowl of cereal in the morning anymore, but at the same time, there’s nothing I would rather eat. Except maybe oatmeal on occasion… with jam… and nut butte. Swoon.
Oh, and Friday needs to get here, stat.
Oh my gosh, I’m seriously on the lazy/best breakfast bandwagon! I used to always keep my yogurt bowls pretty simple with one fruit and a little bit of something for crunch, but lately I’ve been combining different fruits, mixing cereals, and even throwing some pumpkin puree or peanut flour into the mix! Absolute Heaven! I should have known you knew the secret to bowls of deliciousness…I mean you DID introduce me to sweet/savory oats! 😀
I laugh at myself because when I go to look back at my photos, they are always ALL of breakfast or my nightly bowls of cereal/yogurt. I sometimes purposely focus on making something interesting for dinner just so I have something to post on WIAW. [True confessions…]
I need to get my Strange But Good on. For the supposed queen of weird, I have been slacking on the creatively odd recipes as of late.
Yeah, I’m definitely guilty of changing my food choices just for the sake of variety for WIAW!

Aaaahhhh!!! I finally made your peanut flour soup with banana, except I used frozen banana slice and it was amazing!! It makes the “soup” kind of cold and slushy like ice cream. Mmmm….
Ohh, I have a TON of frozen bananas! And I LOVE contrasting temperatures/textures…definitely gotta try that!
lol, you are just too funny! Crack-tastic. I love it…my lazy breakfast def is some granola, with banana and w.e non-dairy milk I have. But I honestly make it a point 99.9% of the time to pre-make my bfasts!
I need to start doing that again…starting with some nice creamy overnight oats! Mmm, it’s been TOO long!

Omg, I have SERIOUSLY been putting away some peanut flour this week! Peanut flour, pumpkin puree, and banana is my new favorite combo!

Also this post has me excited for breakfast tomorrow! One of the best ones I’ve had lately was peach Chobani with a banana, some chopped mango, Kashi cereal, and coconut butter. It felt so tropical!
Oh yeah, I would never post a recipe unless I could stand behind it 100%! Sometimes I get lucky and have a winner on the first try, but most of the time, I like to do a little “fine tuning” 😀
Mmm, that combo sounds GREAT! Tropical fruit sounds SO good right now with all the rain and gloom we’ve been having around here. I picked up a starfruit the other day (man, forgot how good those are) and threw it in a mix of peanut flour and pumpkin puree…sounds weird, but it was actually pretty flippin’ delicious! 😉

I’d call you a tease, but the beauty of being behind in blog reading is I can just jump to Friday and see what this peanut buttery deliciousness is all about.
Lazy breakfasts: toast, mimosa (mmm), cereal, fried eggs…not necessarily all together. Sometimes those are my lazy dinners too.
