Blueberry Mustard Flatbread

FLATBREAD!

And now, while you hum Little Richard’s tune for the rest of the day, you can daydream about this flatbread (which is not to be confused with a pizza…because I did that
LAST week…and because, well…obviously, this one isn’t round! πŸ˜‰

This week’s #strangebutgood recipe was inspired by one of my fellow weird foodies AND my favorite salad from last summer…

Blueberry Mustard SaladMixed greens, Lauren’s Beet Burger (I seriously need to make those again), cottage cheese, blueberries, annnnnnd…

MUSTARD!

But not just any mustard…

Horseradish Mustard Sauce

The sweet kind of, spicy kind of, BEST-FLIPPIN-STUFF-IN-THE-WORLD mustard!

Seriously you guys, if you ever spot this at my second home (TJ Maxx), do NOTΒ pass Go, do NOT collect $200 hesitate…buy TWO…and then send one to me! πŸ˜‰

There’s just something about the tangy taste of mustard mixed with sweet, juicy berries. And while I know MOST of you are just gonna have to trust me on this, at least I know when it comes to mustard onΒ pizza flatbread, Lauren’s got my backΒ πŸ˜‰

I’ve been a fan of combining different (and sometimes strange) flavors for a while now, but this one has GOT to be one of my favorites!

Along with satisfying my craving for sweet and savory (AND my longing for warmer weather and all the good things produce that comes with it), this also gave me a chance to try a new-to-me-product that the man-friend introduced me to last week…

Quorn Tenders

I was honestly surprised at how good these were AND how much the texture and taste reminded me of chicken! I would definitely consider buying these in the future. And no, I didn’t get paid to say that…the company doesn’t even know who I am!

Of course, it would be just as good with some crumbled tempeh (or chicken for the meat-eaters out there) OR you could leave it out and just add more veggies…but PLEASE give peace bloobs and mustard a chance! πŸ˜‰

Blueberry Honey Mustard Flatbread

Prep Time: 5 minutes

Cook Time: 10 minutes

Keywords: bake entree appetizer high protein

Ingredients (Serves 1)

  • 1 flatbread or tortilla of choice (I used P28 High-Protein Flatbread)
  • 2 Tablespoons garlic-flavored hummus
  • 1/8 teaspoon ground mustard
  • 1/8-1/4 cup grated mild-flavored cheese (I used Babybel)
  • 1/2 cup meatless tenders (or chicken)
  • 1/8 cup sliced red onion
  • 1/8 cup blueberries (fresh or thawed from frozen)
  • 1 Tablespoon mixed berry jam + water to thin
  • 1 Tablespoon honey mustard + water to thin
  • chopped fresh cilantro for garnish

Instructions

1. Preheat oven to 400F.
2. Place flatbread on cookie sheet, spread an even layer of hummus across and sprinkle with ground mustard and black pepper.
3. Add cheese, meat(less) tenders, onion, and blueberries.
4. Bake for 10 minutes or until cheese is melty and edges are crisp.
5. Drizzle with jam and mustard and top with cilantro.

  1. Ok. I am home in 10 hours – do you think you make it here by then and have this reday for me? Cheeez, this looks SO good. I really want it! Maybe tomorrow……and Berries???? I am OBSESSED!! I am SO thankful that they are back, fresh and colorful in the supermarket. Blueberries all over. And Strawberries. These 2 I can eat all day. Happy Weekend love! PS.   2. Craving summer fruit? Ha, I’ve been going crazy about blueberries lately and – totally unlike me – been buying boxes every week. Talk about feeling guilty for all the unseasonal produce – but then again: If it’s on offer πŸ˜‰ …

    Please don’t hate me but … I don’t like mustard. At all. Still, I think your recipe sounds pretty damn strange, um, good :D. Rather good than strange.

      Aww, ok…but I’m only making this exception ONCE! Just as long as you don’t go saying you don’t like peanut butter or something, because, I’m sorry, but THAT is where I would have to draw the line! πŸ˜‰

      Hey, if you’re getting a good deal AND they actually taste good (around here, most of the ones they sale out of season taste like air), then HAVE at it! Just know that I’m totally jealous!

    my favourite summer fruit is definitely strawberries, i cannot get enough of them! <3
    strawberries + balsamic vinegar are meant to go really great together maybe that could be another strange yet good topping for the flatbread. nom!

      Oh my gosh, I KNEW I liked you for a reason! Mustard lovers UNITE! πŸ˜‰ The crazy thing is I used to HATE mustard as a kid…I mean, seriously…if it touched ANYTHING on my plate, it was a no-go! Now I’m completely OBSESSED! I won’t even tell you how many different jars I have stuffed in my pantry right now! Haha!

      Oh my gosh, strawberries and balsamic is the BEST! And with a little goat cheese? Ahhhh, pure HEAVEN! πŸ˜€

      Seriously, I LOVE it! The bread and bagels are so dense and soft! I’ve had these flatbreads hidden in my freezer for months…I can’t believe I JUST NOW tried one…I’m totally smitten!

    soo, you do not know how much I am thanking you right now! I saw those meat-less soy-less nuggets in the grocery store over here in Kuwait the other day but was a bit to skeptical to purchase them. Now I know they are good πŸ™‚

      And you can thank the man-friend! I had heard of the nuggets before, but didn’t even know about the rest of the line…now I want to try everything! I still can’t get over how much the texture really is like chicken! And I LOVE that they are soy-free (I swear they put that shit in everything!)!

  6. That pizza looks beautiful and delicious. I LOVE flatbread pizzas! I’m a huge blueberry and blackberry fan. I’m so ready for summer. This back and forth weather is not good at all! It has my body and tastebuds completely confused!

      Thank you Sarena! And I hear ya…just today it got up to like almost 60 degrees, but by nightfall, it started raining and dropped to 50! Spring cannot get here soon enough!

  7. I think I’m stealing this idea. Though my finished product will not look as pretty as yours. I just need to figure out what kind of dough to make for the base . . . maybe roasted garlic to pair with the hummus?

      Oh yes, that sounds fabulous!! We have a local pub/brewery here that serves the BEST pizza on garlic-infused crust…I’m totally obsessed with it!

    i can def. dig the mustard and bloobs. and i feel you.. all i want lately it fresh salads the size of my head with fresh fruit. my fav dressing is acv + mustard over a salad like that. now im drooling looking at the flat bread!

    I love Quorn–they are definitely my favorite fake-meat company, good flavor and texture and they don’t just rely on “salt” to give it taste. Can you believe I still haven’t been to TJMaxx for food goodies? I mean, you have me MORE than convinced I need to by now! Weird or no, I love the idea of mustard and berries together.

      I can’t believe I’m only JUST now discovering Quorn! I can’t wait to try some of the other stuff in the line! Have you tried the cranberry and goat cheese chik’n cutlets? I saw them at Kroger the other day and practically slobbered all over the freezer door! Lol

  12. Mustard and fruit are a match made in heaven!!! I love all your strangeness. And diving into a chest of bloobs. Haha!!! I just bought strawberries… Found them on sale for $2. It must have been a pricing mistake… So I bought 2!

  13. Mustard + pizza = YES, PLEASE!
    I have not tried mustard + fruit though… well, maybe honey mustard I have? I use plain ol’ yellow mustard for pizza- it’s the best! I’ve never met a mustard I didn’t like though. Best condiment ever!
    I haven’t made the beet burgers since the FIRST time. I am totally ashamed.

      Seriously, I LOVE that you introduced me to mustard on pizza! I get the strangest looks, but damn, it’s good!! And don’t feel bad…I’m the WORST at remaking my own recipes! And I have absolutely no idea why…guess I feel like I should be using the time to create new ones! Lol

  15. Blueberries are my absolute favourite! The imported ones I’ve been buying lately just aren’t the same as the fresh local ones – I can’t wait for summer!

    And I’ve never thought to put mustard on pizza before… you have me curious now!

      Oh I know! I got some of the BEST blueberries over the summer from a farm just right down the road! Luckily I thought to freeze some, but my stash is dwindling…and I know the ones at the store just aren’t even worth it!

      Yes, you have to try mustard on pizza! It sounds so weird, but it really works…it’s kind of like a ketchup and mustard thing with the tomato sauce!

    I really go to town on blueberries when I get the chance, especially because I don’t get the chance very often! I went to a U-Pick at the largest blueberry farm in eastern Canada once and made sure I got my money’s worth for the $25 box I was filling by eating two handfuls for every handful I put in the box. The box was five pounds. It was gone in two days.

    Although we sadly don’t have many blueberries growing here on the west coast, we do have an incredible abundance of blackberries every summer. They’re an invasive species, really – they grow everywhere. You can just go to any roadside blackberry bush and pick pounds of them for free. I had a blackberry feast last year where every course was based on blackberries, and the main course was pizza on homemade whole wheat flatbread crust with blackberries, assorted cheeses (some blue cheese, some goat, and some brie), onions, peppers, and fresh basil. Berries + basil + cheese = one of the most divine flavour combos ever. I love mixing sweet and savory!

      Ohhh, I would LOVE to find a farm around here to do some blueberry pickin’! I finally got the chance to go to the strawberry farm we have here over the summer and yeah, I DEFINITELY got my monies worth…and may or may not have went home with a bit of a tummy ache! πŸ˜‰ Haha!

      My parent’s property is lined with blackberry bushes, but unfortunately, last summer was so dry that they didn’t produce at all! So sad! Your blackberry feast sounds like so much fun! And that flatbread sounds AMAZING!! Note to self: try basil, berries, and cheese together! πŸ˜€

      You got me curious so I checked out the packages when I went to the store over the weekend…the breaded varieties do have wheat gluten, but these tenders are gluten-free!! YAY! πŸ˜€

  20. Alright this one sounds delicious and it helps it looks as pretty as a picture. I’m kind of addicted to all fruit, but raspberries are my favorite. This week alone though I’ve had apples, oranges, clementines, bananas, blueberries and strawberries. So good, all of it.

  23. You know that I know the glory of fruit + mustard. I am still pretty darn impressed with myself for not only stuffing squash with both bluberries and mustard over Christmas, but that I was able to get my meat-and-potatoes stepdad to love the combination too!!

    I’m on the hunt for that mustard…
