I know, I was a total tease ending Monday’s post the way I did! But I’m sorry, there was just TOO much marvelousness to share it all!ย So here’s a deeper (again with the dirty minds? Please!) look into Sunday’s kitchen happenings thanks to the amazing

I’ve been reading Meghan’s blog for some time now (Do you? because you SHOULD!). Between her witty commentary, her give-it-to-ya-how-it-is attitude, and the fact that her mind pretty much doubles as a juke box, I just can’t seem to stay away.

And her recipes?

Well why don’t I just SHOW you? ๐Ÿ˜‰

I’ve been saying I was going to make her Cheddar Cauliflower Soup for MONTHS now…so a few weeks ago, I went and picked up a fresh head of cauliflower at the store. Then I proceeded to make half a dozen Cauliflower Dessert Pizzas and no telling
HOW many batches of Cauliflower Pancakes!

Um, ADD much?!

So last week, I went BACK to the store and bought ANOTHER one and proclaimed Sunday as…

Soup BowlSOUP DAY!…see, the bowl even says it! ๐Ÿ˜‰

I gathered my ingredients…

Leek & CauliflowerUm yeah, how about those leeks are from the same batch I bought back when I made THESE?!ย Don’t worry, I peeled back the funky bits!

Holy shelf life Batman!!! ๐Ÿ˜ฏ

I used my garbage bowl…

I played with a new seasoning mix…

HerbsMeatloaf, dip, potatoes, and MORE? Got it! ๐Ÿ˜€

Annnnd well, since I didn’t have any cheddar cheese on hand, Iย decided (in true Heather fashion) to make a few minor tweaks…I actually decreased the liquid a bit, omitted the flour, and used nutritional yeast in the soup which actually made it VEGAN!

But then I found THIS little guy lurking in the back of the fridge…

But the fun did NOT stop there…after seeing the drool-worthy pics of her Broccoli & Cheddar Quiche that she seduced me withย all week with a link to the easiest crust recipe I’ve ever seen, I figured what the heck!

Again, I had no cheddar…and with not much more to spare of the one that mounted topped off the soup, I decided it was time for Heather to get down and dirtyย eggy! ๐Ÿ˜‰

I mixed up my crust…

Quiche Crust

Seriously? Easy as pie quiche! You CAN’T mess this up folks!

And then it was time to clean out the fridge to add my well thought out combination of ingredients…

Quiche Spinach

Spinach?…always!

Quiche Tomatoes

Tomatoes?…of COURSE!

Quiche Onions & Peppers

Remnants of peppers, onions, and celery from the crisper?…sure why not?ย

Eggs, milk, and BACON?!…you bet your sweet ass! ๐Ÿ˜‰

Off to the oven and in less than an hour I had THIS:

It’s so fluffy I’m gonna diiiiiiiiiiiiiiiiiiiiiiie!!!

Sadly, it went limp deflated shortly after…

Spicy “BLT” Quiche

Prep Time: 15 minutes

Cook Time:ย 50-55 minutes

Keywords: bake breakfast entrรฉe high protein eggs

Ingredients (Serves 6)

  • Prepared quiche crust
  • 2 cups chopped fresh spinach
  • 1/4 cup chopped fresh cilantro
  • 1 cup grape tomatoes, halved
  • 1/4 cup chopped onions
  • 1/4 cup chopped bell pepper
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 2 teaspoons salt-free seasoning (I like Mrs. Dash Extra Spicy)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili pepper flakes (optional)
  • 3 slices pre-cooked bacon, crumbled (I like Trader Joe’s nitrate free fully cooked stuff)
  • Greek yogurt (or sour cream) for serving

Instructions

1. Preheat oven to 350ยฐF.
2. Prepare quiche crust and spread into a 9 inch pie pan.
3. Layer ingredients from spinach to bell peppers.
4. Combine milk, eggs, and spices in a medium-sized bowl and whisk well.
5. Pour contents over veggies.
6. Top with crumbled bacon.
7. Bake for 50-55 minutes or until egg is set.
8. Allow to cool for at least 10 minutes before slicing.
9. Serve with a dollop of cool Greek yogurt (or sour cream) and enjoy.

Inspired by Meghan’s Apple Pie Granola…is too good NOT to share, this post is already LONG enough and I’m sure I’m about to hit a climax overdo it with the euphemisms and innuendos! ๐Ÿ˜‰

  2. I don’t even know where to start…all the recipe and link love is amazing, and the quiche crust. It really is the easiest ever. I mean it’s one thing to say it, but truly it’s so simple and pretty freaking delicious. I really want a slice of your pie (not that pie, although you know I highly approve of all the double dirty talk) even with the bacon. Bacon always was my Achilles heel.
    I can’t wait to see you go nuts (and another one) with the granola. Just wait until you start using melted nut butters and healthy chocolate sauce in there….I can see it now.

    By the way, I totally caught your leaving on a jet plane reference and now I’m singing it.

      I know, right? Is it weird that I thought the dough itself smelled like Heaven? I seriously had to stop myself from sneaking a taste! Weeeeeeeeeeirdooooooo! ๐Ÿ˜‰ And hey, you could have some of my pie anytime! We could do bacon bits? They’re VEGAN! <- I've known that for months now but it still amazes me! Seriously, that batch of granola has definitely got the gears turning...you may have just created a monster! Lol

      And seriously, this is only the second quiche I’ve ever made…can’t believe I don’t whip them up more often…it’s SO easy and such a great way to use up extra veggies!

      I only WISH there were fro-yo shops around here that were worth their salt…but the man-friend DID just bring over some Arctic Zero! ๐Ÿ˜€

  12. LOL! I love me some innuendo, b/c I have the humor of a 13 year old boy. Glad I’m not the only one! “So Fluffy!” <3 This looks awesome, and I definitely need to try this out, since I'm quickly getting sick of my sometimes 2x a day egg scrambles, but I still love eggs. (And run on sentences). Think you could sub out oat flour, or a blend for the quiche crust? I have smoked gouda with bacon that I planned to use up in some mac n' cheese for the bf this weekend, but he won't know if I use some to make this. Can't wait!

      Oh man, smoked gouda and bacon? When should I be over?! I think any flour would do just fine since the recipe is so simple…I bet it would even work with gluten-free flour!

      So glad I’m not the only one with an immature mind…I just can’t help myself sometimes! Lol

      Thank you, Madison! I have to say I was impressed with it myself…this was my first crusted quiche and only the SECOND quiche I’ve ever made! And Meghan totally rocks my socks! Anytime I need a laugh, I know exactly where to go! ๐Ÿ˜€

    Victoria Gourmet seasonings are some of my favorites! The Tuscan Herb is to die for, her Herbes De Provence are the best I’ve tried, and I’m pretty sure if you got your hands on the Toasted Sesame you would DIE. [Keep a look out on those Marshalls/TJ Maxx shelves…]

      Great…just GREAT! Now I’m kicking myself, because I KNOW I’ve seen that toasted sesame at least a handful of times! Now watch, I’ll go back and they won’t have any…it’ll be like the great Ginger Chime search of February! Lol

      And I’m never scared to use the bottom-of-the-barrel produce…either that, or I’m just that cheap… ๐Ÿ˜‰
