Microwave-Steamed Spaghetti Squash

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients (Serves 2-4)

  • 1 medium spaghetti squash
  • water

Instructions

1. Slice squash in half lengthwise, scrape out seeds, and place cut side down in a microwave-safe dish with 1 inch of water in the bottom.
2. Cover with plastic wrap, leaving one corner open to allow steam to escape.
3. Microwave on high for 10 minutes.
4. Carefully remove dish from microwave, peel back plastic wrap, flip squash over and allow to cool for 2-3 minutes.
5. Scrape flesh out with a fork and serve as desired.

Peanut Butter Squash Mug Cake

Prep Time: 2-3 minutes

Cook Time: 2 minutes

Ingredients (Serves 1)

  • 1/4 cup peanut flour
  • 1/4 cup cooked spaghetti squash
  • 1 egg white
  • 1 tablespoon unsweetened applesauce
  • 2 tablespoons unsweetened almond milk
  • 3-5 drops liquid stevia (or other preferred sweetener)
  • Greek yogurt, strawberries, and peanuts for topping

Instructions

1. Coat a small ramekin or mug with coconut oil.
2. Combine all ingredients in a bowl and stir well.
3. Transfer batter to ramekin or mug and microwave on high for 2 minutes.
4. Carefully remove, turn cake out, and top with Greek yogurt, strawberries, and chopped peanuts.

  3. This cake looks SO good! But… please don’t hurt me…. I tried spaghetti squash last week and did not like it at all. I found it really bitter and weird tasting! I think after eating butternut squash all my life I just couldn’t compare! How am I even allowed to be a HLB!

      Bitter? That’s odd, I’ve never really thought it had much of a taste on it’s own. But yeah, it’s DEFINITELY different from a butternut!

      We won’t revoke your HLB card under one condition…you have to drink a green smoothie! 😉

  23. No way!! I never would have thought of making a mug cake with spaghetti squash, that is so creative!! I don’t know how people manage to cut it open raw without killing themselves though. I always stab it a few times, throw it in the microwave for 12 minutes and then cut it open when it’s nice and soft 🙂

You left a comment about PB&J spaghetti squash on my blog, so just the other day I took a bowl of cooked squash and mixed it with a heaping T of peanut flour, and then placed a dollop of jam on top.       Yes, but it’s hardly noticeable. If you prefer though, you can puree the squash before mixing it with the other ingredients! 🙂
