Happy Friday, my little beans!

As you are reading this, I am either STILL running around like a chicken with my head cut offΒ …ohhh, too graphic for today’s post… how about like a crazy woman? Yeah, that’s better! πŸ˜‰ OR I’ve finally managed to cram everything into the MAMMOTH of a suitcase the man-friend let me borrow and am on my way to Blender and better things!

BUT!! Before I go, I just HAVE to share the recipe I whipped up while scurrying to empty out the fridge before my trip! I have to tell you guys, it was SO hard not to spill the beans (teehee!) on Wednesday, but this recipe was TOO #strangebutgood not save for Friday!

After mixing up my newest yogurt combo, I couldn’t help but start daydreaming of other ways to have my “cake”Β and eat it too.

And then it HIT me…

Red Velvet Cake Hummus

By:Β Heather @ Kiss My Broccoli

Prep Time: 5 minutes

Cook Time:Β 1-2 hour chill time

Keywords: food processor appetizer snack high fiber no sugar added vegetarian vegan beets beans #strangebutgood

Ingredients (Serves 4)

  • 1 cup canned black beans, rinsed well and drained
  • 1 medium beet, peeled, roasted, and chopped (about 1/2 cup)
  • 1 Tablespoon almond butter
  • 2-3 Tablespoons unsweetened cocoa powder
  • 5-7 drops liquid stevia (or other preferred sweetener)
  • 2 Tablespoons water to thin
  • Cacao nibs or chocolate chips for garnish

Instructions

1. Combine all ingredients (except nibs/chips) in a food processor and process until smooth and creamy.
2. Garnish with nibs/chips and serve with graham crackers, apples, or a spoon!

I’ll admit, you can still taste a bit of the earthiness at first, but after a couple of hours in the fridge, the chocolate takes over and you’ve got yourself a winner!

      It’s a little earthy, but sweet in the undertones, but the main flavor is the cocoa…rich dark chocolate! πŸ˜€

      Well, I will say that the beet flavor isn’t fully masked in this, so it may not be for you…BUT you could always leave them out and make CHOCOLATE HUMMUS! πŸ˜€

    I fear I would polish it off in one day as well, Heather! This sounds so good. Black beans and beets…two of my faves although I have never officially bought a beet (Except in cans) This sounds so delicious and it would be Very WW friendly for me. I’m excited! Can’t wait to hear all of the fun that you and Laura will be having in SLC. I’m jealous and wish I could be there. Maybe when I grow up I’ll be allowed to go to Blend, too. πŸ˜‰ Travel safe!

      Awww! Well, I guess you should start working on your good behavior now then, huh? I hear the best way to start with that is to go the store (or your farmers market) and pick up a handful of beets! πŸ˜‰

      Actually, Trader Joe’s sells them pre-roasted! You can find them in the pre-made salad/sandwich section! πŸ˜€

      Haha, sometimes I amaze myself…I swear this one came to me in my sleep! I woke up one morning and was like, “must.make.beet.hummus!” Lol Never tried those cookies before. I’ll have to check them out…I mean, cinnamon? You don’t exactly have to twist my arm for that one! πŸ˜‰

  20. YUM! I have made a beet hummus before, but it definitely wasn’t sweet. To be honest, when I’ve tried to make sweet hummus I haven’t been too impressed with the results. Maybe I just need to stick to nut butter. Beet butter? Hmm….. πŸ˜‰
