Happy Wednesday, beautiful people!

I hope you’re all having a great week! Do me a favor today and send some feel good, alive, and AWAKE vibes my way…I’m off work at 7am and the car that’s taking me to the airport arrives at 11:15am!

Here’s hoping I can get a little shut-eye on the plane so I don’t scare the Greek out of the people at Yoplait! πŸ˜‰

While I’m off to Minneapolis, I thought I’d leave you guys drooling over my little collection of eats from the last couple of weeks…ya know, because I’m nice like that!

And what else are Wednesdays for anyway? Thanks Jenn, for beingΒ the best madam on this side of blogworld! πŸ˜‰

So a couple of weeks ago, I started thinking my Salacious SaladsΒ were starting to lure me into a bit of a cooking rut…a tasty rut, but a rut nonetheless.

Salads CollageWhile I am still enjoying my serving BOWL-sized dose of raw veg weekly, I have actually ventured into cooking my vegetables too!

I started slow by “firing up” the microwave…

Egg & Kale Sandwich

Whole wheat sourdough (from the farmers’ market) with a mix of egg whites, kale, and chopped green onion…topped with apple walnut conserve (of course, a TJ Maxx score)!

Then I got brave and broke out the skillet…

Chicken & Pineapple Stir Fry

Coconut ginger stir-fry with chicken, zucchini, carrots, pineapple, and green onion

With my newfound courage, I cranked up the broiler…

Veggie Nachos

Crispy Flatout flatbread “chips” with melty Gouda, tomatoes, bell peppers, squash, and black olives garnished with Greek yogurt, cilantro, and a drizzle of enchilada sauce.

And then I thought, what the heck, let’s get ROASTIN’…

KETCHUP!

Bet you thought that was hot sauce didn’t you? Yeah, not for this spice weenie! πŸ˜‰

Whew, after all that heat, I could really go for a Blueberry Watermelon Mint Smoothie right about now (or some sleep)! πŸ˜‰

    Woah! Looking at you being all dare devilish in the kitchen these days! && Ketchup… I like the way you think. I mean ketchup just makes everything taste better =)

  2. I put tomato sauce (slightly different here in Australia to ketchup) on EVERYTHING! One of the first things I found out in common with my boyfriend is that we share a love for using a crazy amount of tomato sauce where people always joke ‘Have you got enough sauce there?’ …..We actually buy our tomato sauce in bulk because we use that much of it, not even kidding a little bit!!

  9. Oh man that sourdough bread sounds fantastic. It makes me think of the sourdough English muffins I used to eat as a kid. Such a different flavor and a nice change up from the monotonous white bread πŸ™‚

    I am such a whimp when it comes to spicy sauces, so ketchup it is!
    Since I FINALLY invested in a Magic Bullet, I can not stop blending, so the cooking is a little neglected. I swear, I am obsessed! I feel like a grandma, eating everything in puree-form, hahaha πŸ™‚
    Can not wait for news from Minneapolis!

      Hahaha! Love it! Is it seriously not the best creation ever?? I can’t even remember the last time I used my regular blender!

  15. I think it’s safe to say that ketchup just makes everything better. I refuse to eat fries or grilled cheese of any kind without it!

      Yes!!! Grilled cheese dipped in ketchup is a MUST! I can’t believe I only discovered this a few years ago! I was surely missing out as a kid! Lol

  18. Your flat out “chips” are making me drool – I looove nachos with cheese and lots of toppings!

    I’m really boring and basically only use ketchup for fries, sweet potatoes, and grilled cheese. πŸ˜›

      You’d be surprised how many people DON’T think dipping grilled cheese in ketchup is normal…at least that’s what I’ve run into! I only discovered it a few years ago and could seriously smack myself for missing out all those years as a kid! Lol

  20. That sandwich looks awesome! I love cooking kale with my eggs!

    And ketchup is probably the best condiment around (tied with sriracha?). I love it with my fries (obviously), eggs, and grilled cheese!!

  22. Thats some serious food porn!! While I’ve given up my ketchup addiction as of late, I used to dip my Pringles chips in them in highschool, but only Pringles would do. Needless to say, Pringles are not on my grocery list these days! πŸ˜‰

    My appetite has been wonky lately and I’ve become obsessed with a GF version of vegemite. I’ll eat it with cheese on sandwiches, mixed through rice or pasta and I can’t get enough. I think it’s the saltiness.

  28. Oh my so much veggies! I need to hop on that ban wagon. I really haven’t been cooking I’ve been tooo lazy from the heat but so far I’ve managed to make homemade pizzas. Yum!

      DING DING DING!! You are most definitely the winner there, girlie! I’ve done mustard and ketchup and I’ve done peanut butter (banana, and bacon…mmm, Elvis!), but I’ve NEVER done all three at once! Now I’m curious! πŸ™‚
