WIAW: Mugs, Munchies, and Moochy Meals

Sorry…NO idea where that one came from! I hope you are all having a fantastic week so far. And well, I hope I didn’t scare too many of you away with yesterday’s rather blunt post. While I’d like to say I was off to wino dreamland shortly after hitting publish, the truth is I’m running on about 3 cups of coffee AND a can of Zeviaย right about now! #fakeittillyoumakeit #ordieofaheartattack #eyetwitch ๐Ÿ˜‰

Sooooo, how about we talk about food while I’m still alive? Sound good? I mean, it IS Wednesday which could mean only one thing…

I woke up Saturday morning feeling fully rested (oh the memories) and hit the gym first thing for some kind of workout that I can’t actually remember right now! #goldfish All I know is that when I got back to the house, I was ready to gnaw my arm off!

Edited to add: WAIT, how could I FORGET?! I started Jamie Eason’s LiveFit again! And it was great!! And THAT’S why I was so friggin’ hungry! Lol

Eggs & Beet Greens with Avocado

Luckily this plate of scrambled eggs, onions, and beet greens topped with avocado was ready within minutes…and not only delicious, but also my two favorite colors!

Coffee & iPhone

All washed ย down with a cup MUG-o-Joe…and oh look at that, my shiny new iPhone says hi! ๐Ÿ˜‰

I realized after the fact, but since I was up and down and in and out of the house for the better part of the day, lunch was more of a series of snacks than an actual meal, but that’s fine by me…especially since it all started with this EPIC deliciousness…

Graham Cracker PB&J 2

That my friends, would be a PB&J graham sandwich…a childhood favorite brought back from the past and is very much here to stay…especially with blueberry jam! ๐Ÿ˜€

Lady Alice Apple

And a sweet and crisp Lady Alice apple which I picked up when in ATL last weekend! Anyone ever tried them?ย They’re REALLY good! Kinda like a Honeycrisp only a little less sweet!

Then, before gracing my mom and dad with my presence at dinner that night, I ate a carrot the size of a small child…but I forgot to take a picture…so hmm, maybe I didn’t! ๐Ÿ˜‰

Enchiladas with Chips & Cheese

Dinner was my mama’s mouth-watering beef & bean enchiladas (one of the first recipes I learned when I moved out the house a million years ago) topped with sour cream, avocado, and salsa along with some corn tortillas topped with warm queso blanco
x two DOS!

Beer

With HALF a bottle of gold star…I was so full from dinner, I ended up letting my dad finish it! Ha!

And that’s it! A full Saturday’s eats…well, along with two-ish un-pictured liters (33oz) of water! By the time I made it home a couple of hours after dinner, I was heavy-lidded and ready for bed…only to fall asleep and begin a week of insomnia battles! More on that later though…there is HOPE on the horizon!

But today, I’d like to take a minute to wish my mom and dad a HAPPY anniversary!! Kind of an old pic, but it’s my favorite! Thirty one years ago, they said their “I do’s and forever will’s” and are even happier and more in love today! <3

What was one of your favorite snacks as a kid?
I was a BIG lover of cinnamon toast or (don’t laugh) crackers with Cheeze Whiz! ๐Ÿ˜ฏ

Are you more of a meal or snacky type of person when it comes to lunch?
I have to say, most days I’d rather just grab & go. And when I do sit down,
it’s mostly with aย snackPLATE!

    Your scrambled eggs look so good! I love the colour, too. We’re going to have enchiladas tomorrow for dinner, and your post just made me so excited for them!

  2. One word: yum. I wish I could get into more savory breakfast choices, but when I wake up all I want is sweet and nutty and sweet.

    I loved dunkaroos as a tot, but I never ate them by way of dunking. I would eat the cookies, then use my finger to scoop out the frosting. Class. Act.

  4. I LOVE snack plates for lunch, but it’s kind of difficult since I have to eat lunch at work – the smaller tupperware the better.
    Your Mom and Dad are so cute! How wonderful for them to celebrate a 31st anniversary!
    I loved a bowl of Rice Crispies with sugar and milk for a snack when I was little. I know, weird, but that’s how I am , LOL.

      Soooo not weird! Actually, I thought I was the only one who added sugar to Rice Crispies (and well, pretty much EVERY cereal) when I was little…I swear it’s a wonder I’m not diabetic! haha!

    When it comes to lunch I am ALL about the snack plate! I try to eat a more traditional lunch when I have the time, but for the most part its just grab whatever feels good and shove it in my mouth. Ok, maybe on to a plate first, but if Im being entirely honest here, half of it never makes it to the plate….

      One of the many struggles in life: Refraining from eating half your meal BEFORE it hits the plate! Lol

    I was a graham cracker kiddo as well but I like the cinnamon ones topped with butter (don’t ask me why my mom thought that was an appropriate snack but it was delicious!). That jam leaking out of your sandwich looks amazing though.

      Ohhh yeah, the cinnamon ones were always my favorite too…but now? Mmm, I love me some chocolate ones! And funny, one of the alternatives to my favorite cinnamon sugar toast was sugar toast! As in sugar, mixed with food coloring, sprinkled over a piece of toast with butter…so yeah, right there with ya on questioning the parentals! Haha! I’m just surprised I wasn’t bouncing from freaking wall to wall! Haha!

  9. I used to love cinnamon sugar on toast when I was little, okay I still like cinnamon on toast! Your dinner sounds so good! I love Mexican food and that plate looks perfect.

  10. scrambled eggs and BEETS? oh my what a combination would never have thought of that, looks so colourful and healthy!

    some snacks that stick out to me from elementary school days were raw itchiban noodles crushed up.. oh god how disgusting but I know they were a staple. I also ate a substantial amount of peanut butter sandwhiches.. not by choice but my mom never bought lunch meat or made us very good lunches lol..

  11. PB&J was my favorite snack as a kid and even to this day. When it comes to lunch, I’m a snacker on the weekends and full meal during the weekend probably cuz I’m working.

  12. Oh man, childhood snacks were graham cracker dunked in milk until they were unrecognizably soggy! Or Ritz crackers (eaten by the packet full) where you nibble around the edges slowly and then slap some chedda cheese on it!

    I want your grammich now! Maybe throw a spoonful of marshmallow fluff in that bad boy, just for good measure ๐Ÿ˜‰

    Can your family adopt me so I can join the next enchilada fiesta night? You know you’ve always wanted a mocha-licious step sister ๐Ÿ˜‰ haha <3

      Soggy grahams! Oh the memories! And you know, I was just telling myself that the other day…my life is definitely missing the mocha-liciousness! ๐Ÿ˜‰ Oh girl, I <3 you and you are going to get the BIGGEST hug come June!! #blendorbust

  13. Yum, I’ve NEVER had PB&J on a graham cracker. I feel like I haven’t lived…I’ve probably had it on EVERYTHING else!! As a kid, one of my favorite snacks was peanut butter toast…but my Dad’s version…where he would cut up some marshmallows and put them on top then stick it under the broiler until the marshmallows got all puffy and brown and delicious! I still make it as a special treat once in a while when I have marshmallows lying around!

      Oh my lawwwwd! I’ve GOT to try that! I’ve had a fluffernutter sandwich before, but I’m just not a really big fan of marshmallow fluff anyway…but toasted marshmallows?! Oh yes! And I bet it would be even better with toasted coconut marshmallows!! Oh sheeeeez, on the list!

    Favourite snack as a kid as gotta be ritz crackers or basically anything I could bake. I remember inviting my friends over and we would go through an entire box of the things as just a “little” snack. Yikes. I used to be a snack-y person when it comes to lunch but now Im more of a meal girl. I just find them a lot more satisfying; Thats not to say there aren’t still multiple snacks enjoyed throughout the day ๐Ÿ˜€

    that’s so funny you mentioned childhood snack, because the other day I was talking to Barbara about how I was craving mine, which is kinda like YOUR snack.. club crackers, with pb&j. ahhhh so nostalgic. I used to eat WAYYY too many with my dad as a child. worth the memories tho!

      Now when it comes to CLUB crackers…I’m all about some ranch dressing! I seriously used to make a meal out of that in high school! Hahaha!

    Our snacks are the same! I love PB&J now. I never liked it as a kid. I always ate Fuji apples back then.

    I’m trying to sit down and eat more meals than snacking all the time. That gets me trouble…

  20. OMG. All you needed was apple juice with that graham cracker. That used to be my favorite snack. That or ants on a log.

    Seeing you going Live Fit makes me a little giddy. Don’t be a wuss with the weights or I’ll come beat you – I know how strong your back is! ๐Ÿ˜‰

      Doooooooooode! I totally killed myself with the leg workout last week! I was a little nervous about how much weight to do with my knee, but carefully kept bumping up the weight and really surprised myself when it came to the dumbbell squats! *happy dance*

    Loving your eggs! Took me a minute to figure out why they were pink! I just recently started eating beets and I actually talked to someone today about how to cook them. I’m hoping to incorporate them into my upcoming eats! Thanks for the eggcellent idea! ๐Ÿ˜‰

    When my brother and I used to stay at our grandparents’ house, we would eat boiled hot dogs with Cheeze Whiz and bacon bit (as in, those freeze dried bits of ??) for lunch. Oh man, those were the days!

    favorite childhood snack was definitely Dunkaroos! Fruit by the Foot was a close 2nd though!

      Oh my gosh, I completely forgot about Dunkaroos! I always wanted them, but the closest thing my mom would ever buy where those little cheese and cracker packs with the red stick…what were those called? But I was totally OBSESSED with fruit by the foot! Haha!

    I never knew beet greens actually had a purple hue too…I thought they were green! And now I really am craving some solid enchiladas!!

    I’m trying not to be snacky these days because my current work situation doesn’t allow it and also would rather eat and move on and not eat…and then want to eat 2 minutes later lol! It’s a mental mind game!

      I think it’s more from the red/purplish stems than the actual greens themselves…though the veining in the leaves has that same color. It’s actually a little embarrassing how amused I was by the final color on my plate! #eastereggsftw ๐Ÿ˜‰

      As far as the snacking goes, it really is a hard habit to break when you’re body is used to eating smaller meals more times a day. Then you feel the discomfort of overfullness at times when you’re making the transition. Definitely a big mental game! Maybe you could just do some small bars or other pocket-friendly snacks until you can shift your eating??
