One Word: WEEKEND!

Sorry, I may or may not still be riding the high that was my weekend! I sincerely hope that each and every one of you had as great a time as I did! Even without an INKLING of a plan, I was surprised to see that this weekend was yet another deserving of the title of wonderful…perfect…and yep, you guessed it, MARVELOUS!

Strawberry Bliss Roll: Tempura shrimp, snow crab mix and avocado topped with fresh strawberries and strawberry sauce sprinkled with finely chopped peanuts.

I thought the first movie was good…I’m a sucker for Nicolas Cage so I wasn’t really sure if the sequel was going to be any good without him, but OMG, my friend and I laughed our ASSES off!

Ok, so I’ve been saying for YEARS that Clarksville really needs a GOOD Mexican restaurant…well, we FINALLY got one…and they have CHEESY mashed potatoes…in a serving the size of a small child!

I’m not complaining! 😉

After MONTHS of not seeing this girl, after a quick text Thursday night, we realized that our work schedules would finally sync up! I volunteered to work an extra (day) shift on Saturday, but after I got off at 8pm, Tori and I met at the casa for some MUCH NEEDED sister-sister bonding (and picture) time.

I’m SO excited I got to see my bestie this weekend! She invited me over to Easter lunch with her family yesterday and it was so much fun! After watching the kids go crazy stumbling all over the yard looking for eggs, we sat down to one HECK of a meal…her mom is one of the best cooks and has been for as long as I remember!

Our Easter spread was absolutely delicious…the most tender and juicy roast I’ve EVER had, cheesy squash casserole, cheesy spinach, cheesy macaroni, and a dinner roll to soak it all up! The only thing missing? Deviled eggs!

I seriously can’t even remember the last time I had cool whip…I mean strawberry shortcake…omg, I love cool whip…I mean STRAWBERRY SHORTCAKE!!

Before the “workweek” started last night, I made sure to soak up the last bits of sun (it got up to 86F (30C) yesterday!!) while I savored each and every ounce of that coffee!

LOVE!

The perfect end to the weekend: A free Redbox rental code emailed to me yesterday! Seriously, if you haven’t seen this movie, you need to rent it right NOW! I laughed, I (almost) cried, I basked in all the girly glory and painted my nails while I watched! 😉

Yeah, so I triiiiiied the whole “one word” thing, but that didn’t really work out, did it?

  1. So much deliciousness in your post I feel like I don’t know what to call out love for first. Actually yes I do my heart always lies with sushi and the pb and j style kind you had sounded amazing. One day I will live out my dream of eating true American style Mac n cheese as that looks delicious!

    I’ve not heard of About Time but you’ve made me intrigued to want to watch it now.

      Oh girl, you HAVE to see the movie…it’s so good I think I’m gonna buy it! <- And that is REALLY saying something since my movie collection is pretty particular! 😉 I tagged you in a sushi post I found on Instagram...I hope you see it...pornorific for sure! Lol And I'll give you a bit of advice on the traditional mac n cheese...try a stovetop version. The baked ones almost always end up dried out...in my opinion anyway!

  8. Holy buckets that’s one heck of a weekend!! I LOVE cool whip…might have to add that to the grocery list this week haha. Not sure what I will use it for..aside from eating it with a spoon..

    Glad you had a great Easter weekend! I got home to Nebraska to see the family and it was so good seeing everyone…especially my nephew who is the cutest kid I’ve seen in my life.

  11. OMG I almost totally went psycho on the comments section of your Easter food on IG. I thought it was funny in my head and then I just knew someone would get upset…;)
    But it had something to do with “omg is that vegan, gluten free, grain free pound cake with fresh organic locally sourced strawberries and dairy-free rice whip?!” and I know only YOU would get our joke so… 😉

      No, I’m with you on the movie thing…they’re almost to the point where they’re just so predictable. I feel like if you’ve seen one you’ve seen them all. I really liked the twists and turns in this and how the love story wasn’t actually the MAIN story but you didn’t feel shortchanged.

  20. I actually want to see Kick Ass 2. This would come as a bigger shocker to you if you were with my brother and I when I was forced to watch the first one. Such a good story line but just a tad too much for me. And sans Nicholas Cage might actually make it a little more appealing for me. Sorry, he’s great, but I prefer him in standard heroic roles (National Treasure for instance) and not as some psychotic hero/dad. Haha.

    That Easter spread does look amazing. We had Chinese on Easter. Yes, really. Since my grandparents are getting older we have started eating out on most holidays (except for Christmas).

    Well, I guess anything with cheese and potatoes works well- but that’s just standard! I find it fascinating that you’re savouring the coffee- When I cut something out temporarily and brought it back, it really did highlight the ‘savour’ factor.

    3 words- Home sickness cured. Or Saffron Chicken overload.
