After a whirlwind of a day, the Yoplait peeps STILL had more fun in store for Katie, Brianne, and me…not only did we get to play around with the new Greek yogurt flavors in the Betty Crocker test kitchen, but we also got to spend time with the photographers on site which and learn a bit about what goes on behind the scenes of all those drool-worthy pictures you see in cookbooks and magazines!

Inspired by all the new yogurt flavors, the three of us donned our red aprons and set to work…mixing, chopping, spreading, and plating!

Of course, before finishing, there was some SERIOUS time spent contemplating how to fit an entire shelf of plates in my suitcase selecting just the right dish for my recipe. 😉

So, anyone out there curious as to what’s in my FAMOUS chicken salad? Oh come on, you didn’t expect me to leave you hanging, did you? Especially after allowing me an entire week to wax poetic about my trip? And ESPECIALLY since this is like the
PERFECT SUMMER RECIPE?!

You’ll LOVE it…the sweet of the pineapple…the crunch of the peppers…the tang of the fresh ginger…and if you don’t have access to a flavored yogurt, just use plain and stir in a bit of honey and some chopped fresh pineapple!

Pineapple Pepper Chicken Salad

Prep Time: 15 minutes*

Cook Time: N/A

Ingredients (Serves 2)

  • 1 1/2 cups cooked chicken, cubed
  • 1 6 oz container pineapple-flavored yogurt
  • 1/2 red bell pepper, chopped
  • 1/2 jalapeno pepper, diced
  • 1/3 cup diced red onion
  • 1 Tablespoon grated fresh ginger
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • salt and pepper to taste

Instructions

1. Combine all ingredients in a medium-sized bowl.
2. Garnish with more cilantro.
3. Serve stuffed in bell pepper halves, over salad greens, or enjoy as a wrap!

*Note: While not absolutely necessary, I will say that after an hour in the fridge (while skipping up and down aisles of prop closet shelves), the flavors have a better chance to come together!

Yo’ PLAY day!!!

I only WISH I could take credit for such incredible wit, but alas, I owe it all to Aly! 😉

And a PLAY day it was!

From the tour of the General Mills headquarters to the exploring of the photography prop closet…from the sampling of Yoplait’s new blended Greek to the homemade fro-yo bar complete with every topping imagineable…from the structured interview scenes to the moment they let me run WILD in the Betty Crocker kitchen…I have to say, by the end of the day,

…Thoroughly bubble-bathed, wrapped in a fluffy robe, propped up by feather pillows and ready to spend my night with free HBO The Food Network!

But as tired as I was, I’d do it again in a HEARTBEAT! So surely, you’ll allow me a minute (or quite a few of them, depending on how fast you read) to relive my Christmas morning…I mean, I’m sure you guys are at least a LITTLE curious about how the weather was that day that mind-boggling fro-yo bar, right? 😉

The morning started early…I woke up at 7am after about four hours of sleep (damn you night shift!), took a pic of my pretty lil’ self (and the modest award goes too…), and stood to ponder the hotel’s choice in artwork (obviously a male designer…never satisfied with just a handful! ;)) before heading downstairs to be driven to headquarters.

Shortly after arriving, we met with the CEO of Yoplait and toured several of the floors learning more about the history of the General Mills division.

Yoplait Breakfast BuffetAfter our tour, we were presented with a buffet-style breakfast…fresh blueberry muffins, yogurt with berries, and crunchy granola, eggs, crispy bacon, and COFFEEEEEEEE…which you know, was acknowledged WORSHIPPED…oh and look, Brianne decided to match the decor! 😉

As we nibbled on our plates, the camera crew geared up to tape our meetings with some of the behind-the-scenes peeps at Yoplait…VIPS if you will since they were all responsible for the launch of the newest yogurt line.

And speaking of yogurt…afterwards, it was time for some SAMPLING!

I don’t normally buy flavored yogurt…unless we’re talking CRACK…since it tends to be too sweet for me. Knowing that and having tasted some of Yoplait’s Greek 100 in the past, I’ll be honest, my expectations weren’t that high. I did find the berry-flavored ones to be a bit sweeter than the rest, but I was pleasantly surprised to see that I could handle the others. I was also surprised SHOCKED to see that they fit the bill in the thickness category…because let’s face it,

If it ain’t THICK, it ain’t GREEK!

We sampled all six flavors along with the plain base (which I’m hoping they push onto the shelves because it was great!) and then went along playing and mixing flavors in true foodie fashion…oh, and for the record,

Coconut + any flavor = Smack Yo’ Mama Good! 😉

After we just about OD’d on thick and creamy yogurt deliciousness, we had the chance to look around the main floor…

We snuck a peek at the General Mills Store (think convenience store filled to the brim with cereal, cookies, baking mixes, cereal, chips, snack bars, cereal, soups, yogurt, and did I mention CEREAL?!

We walked past what we later found out to be the largest Caribou Coffee in the NATION!

And then I LITERALLY jumped a foot off the floor when we spotted

Once back with the group, it was time for MORE FOOD delivered by The French Bakery!

Fish TacosI chose the fish tacos (of course), but once I sat down, I decided to hold on to it for later when I realized I was still pretty full from sampling…or at least that’s what I THOUGHT my reason was!

Lo and behold the fro-yo Gods were signaling me because shortly after lunch, Katie, Brianne, and I were ushered over to the Betty Crocker Kitchen to meet the staff who just happened to have THIS waiting for us…

What can I say, homemade fro-yo and UNLIMITED toppings brings out the gangsta in me! And can we take a minute to appreciate the fact that they put out the Golden Grahams and Cinnamon Toast Crunch JUST for this cereal killer right hurrrr?!?!

See?…I’m tellin’ ya…totally gangsta!

After we got to know the ladies of the kitchen over our bowls of fro-yizzle, we donned the signature red aprons and set out to channel Betty herself…but since I’m OBVIOUSLY a bit delirious and in need of sleep at the moment, that story will just have to wait until tomorrow…

What I Ate in Minneapolis

HOOOOOOOO-kay…

So I did some processing…AND some pinching…and I’m back to tell you more about my amazingly wonderful fantabulous trip to Minneapolis last week! And well, since it’s Wednesday, of COURSE today is going to focus on the food! 😀

After arriving in Minneapolis and FINALLY getting a chance to meet Seth face-to-face after emailing for months, Frank, my driver, took me to meet the rest of the Yoplait crew! Once there, I made small talk with some of the ladies, got all makeup-ed, and threw down a glass of liquid courage (aka, white wine…thank you Tanya!) before my VIDEOTAPED interview.

After the interview, there were various shots the videographer set up for me…working at the computer, walking around downtown…if I was half as cool, I’d say I was like totally Carrie Bradshaw, but I’m sure this little country girl more resembled Felicity Porter…let’s just hope my hair looked a bit better! 😉

Afterwards, I did a lightning fast hotel check in/wardrobe change (we’re talking like 7 minutes here people!), snapped a pic of my welcome “gift” (a few snacks, a notebook, and an itinerary for the next day’s events…again, thank you Tanya!) and met everyone for dinner at one of BEST restaurants in Minneapolis, 112 Eatery.

Conversation was definitely NOT lost during our two-hour dinner…especially after a bottle of un-oaked Chardonnay (my favorite) was poured for the table. As for dinner, we had a sampling of appetizers and sides to go along with our individual entrees…and of course in a place like this you HAVE to order dessert!

I ordered the roasted halibut topped with pickled fennel, watercress, and a pistachio cream sauce and it was JUST as delicious as the wedding halibut…I think I just found my new favorite thing to order out! As for the sides, apps, and desserts, there were PLENTY more that went around the table (#foodcoma), but these were my favorites…

Fresh ricotta with white truffle honey and toasted baguette (I could eat this every day for the rest of my life!), caramel budino spiked with Maker’s Mark (holy yum!), roasted carrots with honey and pecorino (I seriously could have eaten a plate of these for dessert!), strawberry rhubarb tart (sweet perfection), and seared scallops served over oyster mushrooms (DIED and GONE to HEV-NNNN!)

After dinner, we walked back to the hotel and said our good-byes until the morning…and then I carried my overfull tummy down to the hotel gym to walk off my foodbaby!

Nothing like having a mini YMCA all to yourself at 10:30 at night! 😀

Course, I would have barfed had I played on any of the equipment only had the capacity to take a little leisurely stroll on one of the treadmills, but it was still nice to have some quiet time to myself. Anyone else like a walk after a big meal?

The next day was JAM-PACKED with activity…ten hours to be exact! And now that I think about it, it’s going to take far longer than this post (or your attention spans) can handle, so I’m going to skip it for now and move on to some tequila!

Margarita

I mean DINNER!!

Sadly, Brianne had to leave that night to make her flight, but since Katie and I didn’t fly out till the morning, we decided to head down to Rosa Mexicano for dinner. We shared a VAT of some of the freshest guacamole I’ve ever tasted (at a restaurant) and each ordered a simple margarita…tequila, agave, and lime! #yum

For the record, guacamole should ALWAYS be chunky!

In true blogger fashion, Katie and I jabbered the night away, but we DID manage to fill our bellies with more than just chips, dip, and liquor…

Veggie Enchiladas

After a day of basically eating non-stop, I was ready for something veggie-filled and fresh so at the recommendation of our waiter, I ordered the off-the-menu veggie enchiladas with mushrooms and spinach…unfortunately, I couldn’t really tell you how they tasted since they were drowning in red sauce, baaaaa-ut, I’ve had worse…and HEY, at least they were pretty! 😉

Honestly, I wish I’d gotten Katie’s duck tacos…or at LEAST a picture of them! She let me steal a bite and they were SO good…not at all the greasy consistency I’ve experienced with duck in the past!
