Honey Mustard Quinoa Corncakes

Hey hey hey!

I hope everyone is having a fabulous weekend. And even more, I hope that everyone who is fortunate enough to have tomorrow off for the holiday enjoys a nice day with family, friends, and good food!

Speaking of good food…have I got a recipe to share with you guys!

Hmm, what could those possibly be?

It all started with my latest obsession in the condiment department:

Yes, I must categorize my obsessions: condiments, nut butters, phone apps, websites…what can I say, I have a very addictive personality! 😉

Trader Joe’s Hot & Sweet Jar of Heaven Mustard

This jar’s been in my pantry for months now…not sure exactly what I was waiting for, but when I came home the other day with a bag of unsalted pretzels from Kroger (yes, I said UNsalted…I know I’m a freak), and I knew EXACTLY what to dip them in!

And here I am, six days later, with a half a bag of pretzels and

NO mustard! 🙁

But not before I had the chance to create a delicious recipe with it!

Now this isn’t a typical “Pancake Sunday” recipe, but after not one, but TWO failed attempts at trying to make my idea fit into a traditional pancake recipe, I gave up and took a different approach. You live…you learn…you open up the fridge and have an epiphany!

Honey Mustard Quinoa Corncakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients (Serves 2)

  • 1/2 cup cornmeal
  • 1/4 cup cooked quinoa
  • 1 large egg, whisked
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons your favorite honey mustard
  • 1/4 cup unsweetened almond milk

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. Combine all ingredients in a medium-sized bowl.
3. Spoon batter onto skillet, forming 4 small cakes and cook for 4-5 minutes per side or until lightly browned and crisp.
4. Serve alongside a dinner-sized salad or your favorite soup for a complete meal.

It seriously couldn’t get any easier!

And I love the fact that the egg and quinoa give you a protein boost…these aren’t your standard simple carby corncakes!

With a little schmear of some sunflower seed butter or a slice of cheese, I can see these making their way into my regular snack rotation!

But this time, I decided to make it a meal and served them alongside a colorful salad of romaine, zucchini, red bell pepper, orange heirloom tomato, and LiteLife’s Smart Sausage
(Amazing…you’d never guess it’s faux meat!)

Mmm!

I actually used to hate mustard, but now I’d have to say it’s one of my top three condiments of choice…right next to ketchup and hummus (which is totally a condiment! I only wish restaurants would realize this and stop charging extra for it!)

California Friday #1

Happy Friday my friends!

I figured the best way to recap the big events of my California trip was to take the Flashback Friday approach so allow me to introduce to you:

California Friday: The Impromptu 10 Mile Hike!

Last Monday, Emilia and I set off on a hike at Nisene Marks State Park.

We planned to be out for a couple of hours…hike about 5 or 6 miles…get some good pics and call it an afternoon so I figured it be a great opportunity to break in my frog feet shoes!

When we first entered the park we spotted the ranger station and made our way up to it to grab a map

You ever seen those shows on the Discovery Channel where the two hikers go into the forest without a map and only ONE bottle of water?

Are you like me and yell at the TV to them, telling them they are complete morons and are going to get lost?

Well, don’t be so hard on them…it all started out so well in the beginning…

Happy hikers ready to hit the trails!

I had an excuse to play with “Big Bertha” (aka the DSLR):

We went over some unique paths and bridges:

I saw my first banana slug:

And proceeded to stalk for 10 minutes while jumping up and down and saying
“Ewwwww!” 500 times!

Haha! Love the nature, but I can be such a girly girl sometimes! 😉

Then, we found a MAP!

Yeah, to scale, that would be about 5 more miles or so until all the trails even START!

We were still in the “entry” of the park after 3 HOURS of hiking!

But that’s ok, we just used the pay phone and had someone come pick us up!

Haha! NOT!

Who puts a pay phone in the middle of the forest? Correction…who puts a NON-WORKING pay phone in the middle of the forrest?!

By the time we got back to the house about an TWO HOURS later, we were barely able to walk up the steps to the door, about to gnaw our arms off, and I had a blister in the oddest of places…thank you Five Fingers!

Note: I still love ’em…I just don’t recommend hiking over 10 miles in them within the first week of owning them!

Stay tuned next Friday to hear what we did the following day to “recover” from our half day excursion!

Santa Cruz: Wordified

Otherwise known as “the answers to yesterday’s wordless post” but hey, that just sounds a little boring, don’tcha think?

After Emilia taught me the ways of power yoga via a Nikki Wong podcast (which was more of a workout than I thought it was gonna be…I was actually starting to sweat at one point! I totally take back everything I ever thought/said about yoga being an easy workout!), she whipped us each up a big glass of some fresh juice!

Carrot, apple, ginger, cilantro, a little spinach with a side of creepy smile!

And since I’ve been home, I’ve seriously been scoping out Amazon.com for a juicer of my own!

Any suggestions? Preferably under $100?

After juicing, we quickly got ready and were out the door in less than an hour to make it to Acai Cafe for acai bowls!

Essentially, an acai bowl is a thick smoothie blended with frozen acai pulp and fresh juice with optional add-ins like protein powder, flax, or maca and then topped with granola and fresh fruit.

I ordered the Amazon Bowl (7th one down) and added avocado while Emilia went with the Da Silva (1st one).

Being the bargain-hunting foodies that we are, we brought along our own protein powder + chia seeds and the baristas had no problem taking them and adding them to our bowls.

Mine was definitely tasty, but I have to say Emilia made the best choice…the spices included in her bowl were out of this world! I later found out that they sell the frozen acai pulp at Whole Foods so I can’t wait to get some on my next trip to Nashville and recreate it for myself!

After breakfast, we made our way to the Santa Cruz Beach Boardwalk and spent hours screaming our heads off on roller coasters, walking along the beach, and laughing at all the typical fair fare:

Seriously, those doughnuts were the size of my face!

As tempting as the chocolate covered bacon was, I had my heart set on a different treat…

If you guessed that I indulged in deep fried Oreos, you were right on the money!

Unfortunately, I think my expectations were a little too high…the cookie was a bit soggy and the batter simply tasted like a funnel cake (which I’m not a huge fan of), but I’m still glad I got to try them…next on the list, deep fried PB&J! 😉

After walking along the beach…

Stopping to listen to a boardwalk musician…

Spotting a sea lion over the pier…

And getting our picture taken next to a HUGE pelican (yes, he is real and yes, we know he could’ve pecked our eyes out!)…

We made our way into downtown Santa Cruz for some shopping and fun!

I forgot to mention yesterday, that we also enjoyed a little “appetizer” before dinner….shots of balsamic vinegar from The True Olive Connection!

I seriously think I tried EVERY single vinegar they carried! And I WAS kicking myself for not buying the espresso flavor but then I looked at their website and noticed that I can get it online! Woo hoo!

And the perfect ending to a fun-filled day in Santa Cruz…dinner at the blogger-made-famous Cafe Gratitude, “an organic vegan restaurant that specializes in raw and uncooked cuisine” (taken from website).

There were so many delicious sounding dishes to choose from! After about 15 minutes of deliberating, we finally decided to split the “I Am Fulfilled” Salad with the fig balsamic dressing (as if we hadn’t had our fill of balsamic already!)

For our entrees, I ordered the “I Am Hearty”

“Deep-dish pizza with sun-dried tomato marinara, pesto, olive tapenade, Brazil nut Parmesan and ricotta cheese on our live onion sunflower pizza crust”

And Emilia decided on the “I Am Elated”

“Enchilada in a live spinach tortilla with a sprouted seed filling, topped with spicy mole, cashew sour cream and scallions. Served with spicy Mexican coleslaw”

I could NOT get over the amazing flavors of both of these dishes! I could pick out each flavor from the layers of my “pizza: and Emilia’s “enchilada” was a little pocket of spicy goodness!

I was amazed at how the vegan ricotta and sour cream tasted too…you could definitely win a dairy-lover over to the “dark side” with those additions!

If you ever find yourself in California, I definitely recommend going to Cafe Gratitude! It was everything I thought it would be and more!

So there you have it…my fun and food filled day in Santa Cruz!
