Peanut Butter & Peppers

I’d like to retract last week’s statement that peanut butter and salsa
don’t go together…

Coconut Peanut Butter

ESPECIALLY when it’s THIS peanut butter…

Salsa

And THIS salsa!

After my disappointment with the combo of peanut butter and plain restaurant-style salsa, I just couldn’t let it go I decided to do a little taste-testing…

Chip

Little did I know that that single tortilla chip would spawn into such deliciousness…AND my breakfast for the next THREE days!

PB & Pepper Omelette

Behold the beauty of my sweet and spicy PEANUT BUTTERYย omelette! ๐Ÿ˜€

Nothin’ ticks tastes like a Timex Thai-Mex!

Sorry…couldn’t help myself! ๐Ÿ˜‰

Ingredients (Serves 1)

  • 4 large egg whites (2/3 cup)
  • 1/4 medium red bell pepper, sliced or diced

Instructions

1. Heat a small, non-stick skillet to medium heat and coat with cooking spray.
2. Add egg whites to skillet and swirl around until the eggs coat the sides of the pan about half way up.
3. Allow to cook for 3-4 minutes and then add veggies, cilantro, and salsa.
4. Cook for another 2 minutes (egg will start to pull away from the pan a bit) then carefully fold over (or roll) omelette closed.
5. Plate and top with thinned peanut butter.
6. Garnish with more diced pepper and onion, peanuts, and chopped fresh cilantro.

PB & Pepper Omelette

My mind is STILL reeling from the flavor combo…coconut, peanuts, sweet peppers, spicy cilantro!

But it didn’t stop there.ย

Anyone catch a glimpse of that orange-drizzled toast in the background?

Pepper Honey

Remember this guy?

Seriously, go to TJ Maxx….after you find that mustard, you have GOT to get this honey!

Perfectly sweet with just a ย little kick behind it…

Finger Food

Yes, I will make anything into finger food! ๐Ÿ˜‰

And if your omelette-making skills fail you you want to take the Thai-Mexican fusion even farther?

  1. That is my very favorite PB – just had to say that. :)

  2. I KNEW there had to be a way for that combo to work! Coconut and fruit… brilliant. Now… when are you coming back to ATL to cook for…. errrr… come see me again? :)

You are the most delicious strange goodness ever, my friend.

I wasn’t gonna let it get the best of me…by gone-it…peanut butter WILL go with EVERYTHING!! Well, except kittens…that could get a little messy! ๐Ÿ˜‰

I really need to start planning to come cook…er, SEE you! We’ll definitely talk after my surgery! Who knows, if I’m miraculously healed before I can go back to work…? Score! ๐Ÿ˜€

I never have egg crispies to eat lol. I love Asian food. And this past week I had a PB and egg sandwich and it was da bomb!!!

    • kissmybroccoli says:

Woo hoo! PB and eggs ftw!! How about this…egg, cheese, and jam? And it’s even better on cinnamon raisin toast! ๐Ÿ˜€

  4. intriguing… I am going to need to try this when The BF isn’t around.. He already thinks I’m insane! :)

  6. purelytwins says:

whoa!! both of these recipes sound amazing!!! we like egg crispies :)

  7. I dont like egg crispies lol but I do make my whole eggs crispy when I cook them, simply by not whisking it when I make an omelette. That Thai-Mex thing sounds really good!

  8. Heather: I have to admit that it doesn’t SOUND good, but it looks fantastic. Maybe I need to think outside the box. err, taco.

    • kissmybroccoli says:

Haha, exactly! If it helps at all, I made this for my man-friend yesterday and he LOVED it! ๐Ÿ˜€

  9. I’m officially making it my mission to make a coconut almond butter or soy nut butter – I get jealous every time I see that PB!

I was debating this last night and I seriously can’t decide on a favourite international cuisine! Italian, Mexican, Greek and Japanese are all so good!

    • kissmybroccoli says:

Oh my gosh, how could I forget GREEK?! Man, I could really go for some falafel right now!

Mmm, coconut almond butter sounds soooo good! I might have to make some myself! As much as I LOVE peanut butter, I’ve been on a bit of an almond butter kick lately! …though I guess it’s kinda hard to tell from THIS post! ๐Ÿ˜‰ Lol

  10. I am completely addicted to that peanut butter! My mother-in-law saw it at her local discount store and texted me to see if I wanted to try it. I said heck yeah, so she bought me 20 jars! I am loving it! It feels like frosting to me. I love the coconut peanut butter combo…so good!

    • kissmybroccoli says:

HOLY CRAP!!! 20 jars?!?! How much did she get them for? Wait, don’t tell me…I’ll just be green with envy! Lol

  11. So very interesting!!! :)

  12. This sounds amazing! I think peanut butter can go with anything! I also really want to try this flavor peanut butter and coconut, yes please!

    • kissmybroccoli says:

Thank you, Nicole! And oh my gosh, YES…you have GOT to get your hands on some of this! By far, my favorite peanut butter! And the crunchy one is even better!

  13. Wow, you’ve outdone yourself truly. It looks so pretty too and don’t hate me, but I’ve never tried the egg crispies. The grilled cheese crispies on the other hand, I demolish.

    • kissmybroccoli says:

Ohhh, what you NEED to try…CHEESY egg crispies! Those, my friend, are pure perfection! And yes, I’m totally kissing my fingers Italian-style right now! ๐Ÿ˜‰
