Brownie Points

Back in the day, when I just was a wee little lass…

What the heck, three days into March and I’m already talking like a leprechaun?!

Anywho!…Each week, I donned a little brown uniform, complete with a skirt, vest, and a sash FULL of patches painstakingly sewn on by my mother.

I was a “Brownie”

Along with my fellow scouts, I did my best to be honest and fair, friendly and helpful, considerate and caring…

Until it came time to earn that badge for cookie-selling.
Then, all bets were off!

Thin Mint Cookie Pancakes

The troop masters were sure to teach us well.

Stare them down

Politely introduce yourself.

Reel them in with those sad puppy dog eyes

Tell them about our mission to do good.

Prey on their weakness for sugary delights

Ask them if they’d like to contribute to our cause.

Thin Mint Cookie Pancakes 2

Little did I know that those deeds would come back to haunt me in my adult years….ha, and some people don’t believe in karma!

Every year, it’s the same story. I come out of the grocery store and get totally blind-sighted. It’s almost like she knows, but I can’t do it, I can’t let her get to me…because while some of you may be able to practice restraint around such sugary treats, over the years, I seem to have developed a little problem…

And well, as much as I’d LOVE to stand there and convince myself that my favorite green box of crack goodness is calorie free and that a serving size is an entire SLEEVE, it is most definitely NOT!

Pop Quiz: Who knows the ACTUAL serving size on a box of Thin Mints?

Any one…?

Any one…?

Four…count them…1, 2, 3, FOUR?!?! 😯

Ok, so why don’t we take a quick look at the nutrition label on those four little, and I do mean LITTLE, cookies?

Screen shot 2013-03-02 at 10.50.35 PMSee! I freakin’ told YOU!!

So this year, I decided to make amends…

To right myself with the cookie gods…

Ok, I’m lying…I really just wanted an excuse to slather something else in
Healthy Chocolate Sauce. 😉

Thin Mint Cookie Pancakes

By: Heather @ Kiss My Broccoli

Prep Time: 10 minutes

Cook Time: 8-10 minutes

Keywords: fry breakfast high fiber high protein GLUTEN-FREE GRAIN-FREE VEGAN vegetarian buckwheat flour cocoa powder Pancake Sunday

Ingredients (Serves 1)

  • 2/3 cup unsweetened almond milk
  • 2 teaspoons apple cider vinegar
  • 1/4 cup buckwheat flour, ground from groats
  • 3 Tablespoons (30g) hemp protein powder (optional)*
  • 2 Tablespoons unsweetened cocoa powder (I used Hershey’s Special Dark)
  • 1/2 teaspoon sodium-free baking powder
  • 1/8 teaspoon xanthan gum
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon mint extract
  • 5-7 drops liquid vanilla stevia (I used NuNaturals)

*If omitting, reduce almond milk to 1/3 and vinegar to 1 teaspoon.

1. Preheat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. Combine almond milk and vinegar and allow to set for 5 minutes.
3. In a bowl, combine flour, cocoa powder, protein powder, baking powder, and xanthan gum, stir with a wire whisk.
4. To the almond milk/vinegar mixture, add applesauce, mint extract, and stevia and stir well.
5. Add wet ingredients to dry ingredients and stir until combined.
6. Spoon batter onto skillet, forming FIVE medium-sized pancakes, and cook for 4-5 minutes per side (batter will not bubble).
7. Plate and top with several servings of Healthy Chocolate Sauce! 😉

**Edited to add: Any protein powder would work for this so long as it weighs the same. And for those of you out there who AREN’T gluten-challenged, oat flour would be PERFECT (it has the same fluffiness that fresh buckwheat flour has)!

Gluten-free, grain-free, and VEGAN!

Thin Mint Cookie Pancakes 3So what do you say, have I earned my brownie points? 😉

  1. OH MY!!! YES!!! This is better than any cookie!

Can I challenge you? Make a caramel delight cookie pancake…errr…I think they call em samoas now?! 😉

  2. Yummmm these look like heaven – im also addicted to healthy chocolate sauce at the minute – i literally put it on everything <3!
we don't get girl scouts that sell cookies in the UK! we have scouts etc but no cookies :( how bad is that! (although maybe good for my waist haha)

    • kissmybroccoli says:

Guess it does depend on how you look at it. I mean, really…these US girl? No one even knows what they do all year until they show up with armfuls of cookie crack…ah, drug dealing at such a young, young age! Such a pity! Lol

Omg, I’m SO glad to know I’m not the only one who is seriously addicted! I swear I just ran through an entire container of cocoa in less than a month! o.O

  3. I actually used to LOVE selling girl scout cookies. I remember walking around door to door with my sister. This will age me a bit, but that was before the girls set up outside of grocery stores (or at least no one did that in our area at the time). Tagalongs were me favorites! Peanut butter and chocolate heaven. Since none of us can have girl scout cookies now, I think it’s time for me to start making some gluten/dairy free clones. Tony and Max would go crazy over these pancakes! Thin mints are their favorites!

    • kissmybroccoli says:

Now WHAT were you doing in my SPAM folder, Sarena?! You can’t be hiding from me like that! lol

Don’t worry about aging yourself, we never set up outside of grocery stores either when I was a scout. And for all our school fundraisers, we still went door-to-door too! And seriously, you’re the Non-Dairy QUEEN! I’m surprised that you haven’t already made your own GS cookies! You could totally do it!

  4. When did you say you’d start your delivery service?! Not just for breakfast but lunch, dinner and snacks, too, that is. Though, yes, mostly pancakes ;).

Seeing as girl scouts around here don’t sell cookies – laaaame, Germany – I have no favourite but thin mints sound good. And there’s always peppermint chocolate as a replacement, I guess.

    • kissmybroccoli says:

They don’t sell cookies? Well! What good are they?!?! Haha!

Delivery service is still in the works, but once I’m up and flipping it’s up and running, I’m pretty sure I’ll be able to take payment in the form of speculoos cups! 😉

  5. So…these will definitely be appearing for breakfast this week. They look incredible!
I don’t actually know when cookie season is up here, but I keep hoping to spot a girl scout so I can pick up some Thin Mints. Buuuut with the pancakes, maybe I won’t have to :-p

    • kissmybroccoli says:

Girl, I’m not even kidding…I was totally Jonesing for some Girl Scout cookies the other day, but once I made these…craving SQUASHED! Mmmm, now I want squash! 😉 Hahaha!

  6. I’m thinking those are dessert tonight! And I KNEW those cookies had crack in them!!!

Wonder if these pancakes are just as good from the freezer… Hmmm…

    • kissmybroccoli says:

Haha! Well, actually…I could let you know since I goofed on a batch and forgot the protein powder…they’re in the freezer now just waiting to be crumbled into some Greek yogurt (gotta sub in that protein somewhere!) Haha!

  7. katie says:

YES I want, nope I do not have buckwheat! Regular oats work?!

My favorite girl scout cookie, thin mints! You need to make some peanut butter tagalong style pancakes too! YES!

Love ya girl! Happy Sunday! <3

  8. I have one question… Will you marry me?

  9. You are hilarious & these look amazing!!!!!!!!!!!!!!!! I was more into the other cookies but the thin mints were “crack” too! 🙂

  10. AH!!!! I feel deprived of cookies. NOW. From the moment since I saw these (know the song from Leona Lewis? That would fit for your genius inspirations: ‘ A moment like this, some people wait a lifetime – For a moment like this, some people search forever ‘ >> and the ‘some people’ would be….ME. Hahaha :-)).
I baked some really delicious cookies this weekend, but now they seem like crab and I want yours. Please. Please. Please. Hmmmmmm. I KNEW there was crack. I mean, why do I have a dealer if not???
What about the hemp seed protein powder, could I use brownrice protein powder too? And flour – oats? Sorry, I am Swiss and we always have questions. Stupid ones. Have a wonderful Sunday Darling!
    PS. Ifyouwantyoucouldsendmetherecipesafewhoursearliersoicanactuallymakethemforsundaymorningbreakfastsinceiam100000hoursahead……:-)
    Love ya!

    • kissmybroccoli says:

Haha! Ok, you’ve got a deal…next week, watch your inbox…but don’t go sharing our little secret with just ANYONE, mmkay?

And don’t worry about the questions…actually, I should have included it in the post, but I forgot…brown rice protein powder can be a little tricky since it’s finer and ends up weighing more per scoop, but if you try it, just be sure to watch the amount of milk you use…you might not have to go with the full 2/3 cup. And oat flour would be perfect (I love how light and fluffy it is…just like the fresh ground buckwheat flour!)

PS, I love it when you sing-comment to me! 😉

  11. I just squeeled with JOY!!! It makes me sad that Girl Scout cookies are so unhealthy… but they are also not gluten free! I mean… I don’t mind to splurge every now and then, but I can’t compromise the gluten. So… wanna make me some gluten free samoas??

    • kissmybroccoli says:

Wanna know something? I totally had you in mind when I made these! Annnnnnnd…just WAIT until next week! Eeeeeeeee! 😀

  12. purelytwins says:

drool!!! hands down girl scout thin mint favorite 🙂 that why we created our protein thin mints hehe
those pancakes look to good be true 😉

    • kissmybroccoli says:

Oh I can’t even TELL you how many times I’ve drooled over THOSE! …I really need to get around to making them!

      Thanks so much girls! xoxo

  13. Mmm yes!!!

I was a Brownie back in the day too. I actually stayed in the program until I was a Ranger when I was 17. Haha yeah I’m a dork. But really I just liked the cookies. 😉 Here in Canada we only have 2 kinds: the thin mint kind and chocolate or vanilla sandwich cookies. The thin mint kind are the best! But it’s kind of lame that we don’t get the variety you guys have.

    • kissmybroccoli says:

What?! No Tagalongs? No Do-si-dos? No SAMOAS?! Total blasphemy! You should really consider writing to your government officials about this! 😉 Lol

Aww, I probably would have stayed with the scouts at least until middle school, but my parents decided to move and we never looked into transferring to another troop.

  14. Melissa says:

These look amazing! Do you think they would work with other flours, though? I don’t have any buckwheat flour and I don’t have a place close by to get any (it’s a rough life I live, I kn0w). Do you think regular oat flour would work?

    • kissmybroccoli says:

Horrible life…absolutely HORRIBLE! Ha! Yeah, oat flour would work great in these! Let me know what you think! 🙂

  15. Jessie says:

I may or may not of just drooled all over my shirt…..

if your past recipe post (which I’ve eaten 3 days a in row, and don’t plan on stopping), wasn’t amazing enough.. you’ve just topped it 🙂

  16. I almost fell out of my chair when I saw the Thin Mints actually had crack in them. I suspected as much and you completely confirmed my suspicions. Bad girls scouts bad, and have you seen the boxes lately. They are half the size they used to be and double the price. Again I say bad girl scouts bad.
These pancakes on the other hand look ridiculous. Chocolate and mint together equals match made in heaven. I have no idea how you come up with this stuff. I bow before you Pancake Queen.

  18. OMG, I’m drooling all over my desk at work. I ran out of cocoa powder a while back and keep forgetting to buy more. This is definitely a good reason for it!

    • kissmybroccoli says:

Correction, the BEST reason for it! 😉 Seriously, my addiction is out of control…I plowed through a WHOLE container in less than a month! 😯

  19. Oh My goodness Heather. This recipe is un-freaking-believable!. It has got to be because of the crack. Please make this for me.

  20. So, about a year and half ago (or some time when I lived in Austin…it is all becoming a bit blurred) I made Thin Mint Brownies. They were in NO WAY healthier, just, you know, delicious. I actually am not a huge cookie person, because I like soft and chewy treats (hence I turned the flavor into brownies), so a chocolate mint pancake? I might be able to handle that.

Favorite girl scout cookie? I think I like Tagalongs. But I don’t know…there is something to be said for the good, old fashioned shortbread. And I mean, those new(ish) lemon ones are fantabulous. And Samoas? Frozen? Have you ever tried those??? Oh, and let’s not forget the straight up peanut butter cookies (as opposed to patties). Do they even still make them?

OK, maybe I’m a liiiiittle bit of a cookie person after all.

    • kissmybroccoli says:

I’m definitely more of a chewy treat kind of gal myself…brownies, blondies, slightly underdone cookies? *swoon* Thin Mints are one of the few exceptions…especially if they’re frozen! Ohh, I’ve never tried a frozen Samoa…WHY did you have to tell me that?! And the only peanut butter ones I’ve ever seen are the Doe-si-dos…which, even with my PB obsession, I’m not a huge fan of…I know, shocker!

  21. Erika says:

Girl. Your pancakes are INSANE. I love that they’re so healthy but indulgent looking! I can’t believe that chocolate sauce is just cocoa powder + water + stevia?! How do you get it to look so perfectly glossy? Love.

    • kissmybroccoli says:

Thank you so much, Erika! And the secret? La-ooooooooooots of whisking! Haha! The longer it sits (waiting for someone to finally have the plate photo-ready), the more it thickens up, so you just have to add a little more water at a time and whisk away! 😉

  28. LOVE these. So glad I found an awesome use for my hemp protein powder. For when I am not in a chocolate-y mood any ideas what I can sub the cocoa powder for?! I tried looking for other pancake recipes of yours with hemp powder but I think this is it 🙂 xo

    • kissmybroccoli says:

Yeah, the hemp protein powder is still kind of new to me…I’ve realized it’s not easy working with vegan protein powder…completely different thank using whey protein. You could always leave out the cocoa powder…if you’re ok with the earthy flavor of the powder, but so far, I haven’t experimented enough with it to see what else would work well. Sorry, love!
