Green Eats & Hippopotamuses?

Hey hey hey!

I want to thank you all SO much for the sweet comments on Monday’s post and I’m SO glad you guys didn’t judge me for bringing out the hoes!

Ahh, pain meds…such a FUN ingredient in the recipe of recovery!

So, it’s been slow, but I can tell I’ve made some definite progress over the last couple of days. I’m still not able to bear weight on my leg (thus causing me to mutter obscenities every time I have to reach for those *&^% super helpful crutches), and I get a little dizzy if I’m up for more than a few minutes at a time, but my digestive system is finally “moving” along (um, TMI?), my appetite is back, and, as of yesterday I was finally allowed welcomed back the world of the showered and shampooed!

Wait, what was that about my ability to type run on sentences appetite?

Oh yeah, it’s BACK!

WIAW GOES GREEN

And JUST in time to celebrate another GREEN-filled Wednesday with Jenn and all my other fellow foodies! After checking out my eats, be sure to mosey on over to Peas & Crayons to see how everyone else is greening it up this month!

Now you won’t see any of my usual Snacky Kathy-ness going on here because well, honestly, for the last two days, I’ve only been awake long enough to pee, eat, and mumble something (coherent or not) to my babysitter of the day (my family is taking shifts) before it’s off to La La Land with my two hoes! 😉

But as interesting as THOSE escapades sound, I’m willing to bet you came here today to see some food! So, without further hoe talk ado, let’s see
some GREEN eats!

Breakfast:

PB & Blueberry Smoothie

Luckily, I’ve been able to manage my own meals as long as I keep them simple. While I don’t mind having some help around the house, there are few out there who can be trusted with the consistency of a GOOD smoothie. So while I DID enlist the hand of my babysitter/kitchen assistant in the production of one of the best GREEN smoothies I’ve made in a while, I was sure to handle all the controls! 😉

And lucky for YOU, I wasn’t flying high on pain meds at the time, so I actually remember what all went into the blender!

Two words: PB&J Sandwich!

Wait, is that two words or would it be five due to abbreviation…yeah, NOW I’m on pain meds…please excuse any typos! 😉

Lunch:

Egg SandwichEgg whites, sprouts, and my next #strangebutgood concoction sandwiched between two slices of perfectly toasted wrinkly cinnamon raisin English muffin.

Dinner:

Sweet Potato Soup

Sweet & Spicy Sweet Potato Soup with spinach and cilantro, a sprinkle of nutritional yeast, and a little crunchy addition provided by these beauties…

Apple Crackers

Sweet apple flavor, crisp-crunchy texture, and absolutely PERFECT with the warm, spiciness of the soup!

Dessert:

Key Lime Chobani Flip

Now I’m not usually much of a dessert person, and I’m REALLY not much on Key lime, but, when I got a craving for something a little sweet the other night, I just couldn’t resist throwing in another GREEN eat so I thought I’d try another of the
Flip flavors that Chobani sent me last week…

Verdict: HOLY YUM!!!

The graham cracker and white chocolate chip topping was ahhhh-mazing…and surprisingly, not too sweet at all! Hmm, I think I’m seeing some pancake-spiration coming from this! 😀

But for now, how about some PB&J?

PB & Berry Smoothie

Prep Time: 5 minutes

Cook Time: N/A

Keywords: raw blender beverage breakfast snack high protein dairy-free vegan vegetarian

Ingredients (Serves 1)

  • 1/4 cup peanut flour
  • 1/2 cup frozen mixed berries (I used half blueberries/half cherries)
  • 1/2 frozen banana
  • 1 cup ice
  • 3/4-1 cup unsweetened almond milk
  • 1 handful fresh spinach (optional)
  • 1/8 teaspoon xanthan gum (optional, adds thickness)
  • 1/8 teaspoon guar gum (optional, adds creaminess)
  • cereal and peanut butter for topping

Instructions

1. Combine all ingredients in a blender and blend until smooth and creamy.
2. Transfer to a bowl and top with your favorite cereal and a drizzle of creamy peanut butter.

    Oh God, the hoes…..you make me LAUGH!!! Really, I think I have to postpone reading your posts to when I’m home (whooops, did I just opened up as a at-work-blog-reader??!!)….I am bursting all the time and everyone can be sure that it’s not about workstuff.
    I want that recipe for that sandwich!!! Yumm! Fair enough on Friday, so I have a good lunch on Sat. Darn bad, Swizzies don’t sell English Muffins……

  2. Yum that soup looks good! Chobani Australia are hopefully releasing those flip packs here in the next few months.

    I’m obsessed with yonanas banana ice cream so whenever I make it I love it 🙂

  4. No more hoe talk?! How disappointing ;). Good thing your overabundance of delish-looking foods makes up for that. How can you make even a green smoothie look good to me as somebody who can’t wrap her head around that idea?

      Haha! Awww, come on now! You’ll experiment with baking with avocados, but you won’t give a little sweet spinach a try? 😉 I PROMISE you can’t taste it…and now, I’m going to pester you until you try it! Lol 😛

  6. I didn’t come for the food; I came for the hoes, and the run-on sentences because those are the best, along with your green smoothie and that Key Lime Chobani (How’d I do?). Seriously, I love Key Lime anything so I may need to try one of those hoes (I meant Cho’s, I swear 😉 ).
    Hang in there (not literally; that’s be dangerous).

  8. Glad you are feeling better! That Peanut Butter and Jelly Smoothie turned out looking awesome. I’m impressed by your kitchen assistant. Whenever I try to direct one of my family members in the kitchen, I usually end up having to get up and do it myself. Not the best listeners 😉

    Favorite green fruit— kiwi… Is there any other? Lol. (Oh geez. So I typed “green fruit” into yahoo! and whatdoyaknow! There are other green fruits. Apples and Pears. Haha. So ya, I’d pick apple… Can’t believe I didn’t think of either of those 😀
    Favorite green vegetables— sweet peas!

      Hahaha! Funny how our minds can draw blanks when put on the spot like that, no? 😉 I’ve recently rediscovered my love of pears annnnd I can never get enough avocado!

      The kitchen helpers do their best, but sadly, most of the time, they’re basically just acting as my go-fors…”get this, get that, I need a spoon, can you hand me that bowl?” Lol

  9. The smoothie sounds delish! I always add a handful of spinach in my smoothies….it’s such an easy way to get in some extra greens.

    Favourite green vegetable would be green beans, favourite green fruit…ugh…limes, I guess? At least lime juice :-p

    My favs: green veggie = kale or alfalfa sprouts. green fruit = avocado or granny smith apples or grapes or kiwis. I like fruit. 😉

      Aww, thank you Cheryl! So glad you “found” me! Sprouts are seriously underrated…and do me a favor and eat a few extra kiwis for me…I’m allergic to the green ones, but the yellow ones just aren’t as good! Boo!

  23. Can I just say everything looks GORGEOUS!? man. I wish my eats ever looked so pretty, haha. Your photography is top notch. Anyway, PB&J is the way to go! I haven’t had one in a while though and I do prefer almond butter but that’s almost the same thing anyway 😉

  25. Doctor Kracker? More like GOD of Krackers. [Even if I hate when things are purposefully misspelled. That man knows how to make a dang good crisp.]

    I really have been craving English Muffins for some reason. Toasted. With honey. I’ve been obsessed with honey lately, which is not green. Nor is it a vegetable. Although drizzled on avocado somewhat makes it so. Maybe? No. OK, not at all. But the avocado is a vegetable. Nope. Wait. Fruit, right?

    (Sigh)

    That was an example of how I think.

    And now I want some more honey avocado cinnamon toast.

    Green fruit… green fruit… why can I not think of any green fruits. Oooo!! Thank you Google Magic! Alright. My favorite green fruits are definitely green grapes and pears, anddd as for green veggies… baby spinach, mostly because it doesn’t cause me the grief that some of the other veggies give me.

  33. I want that soup now! Nooch and cilantro are two excellent flavour additions – yummy. I made some butternut squash and sweet potato soup the other day, maybe I’ll top that with the cilantro and nooch too. They make everything taste amazing!

      Thank you so much Celeste! Believe it or not, it was my FIRST soup all season! And I immediately fell in love with it! So rich and creamy!

      I’m not sure if they Cho is available in stores just yet since the company was gracious enough to send me this sample (and a few others) for free. I know ever since my mom and I tried the coconut one earlier this week, we’ve both been scoping out all the stores in anticipation! Lol

    My favourite green fruit is green apples… especially on a panini with turkey and brie cheese. 😉 As for green vegetables, it’s gotta be kale. Massaged kale salads are seriously the best!

    I’m so glad your appetite is back. I’m so glad you posted the smoothie recipe because Sarah gave me guar gum and xanthan gum and I had no idea what to do with them!

      Oh girl, you are in for a treat for SURE! I swear I could never go back to a gum-less smoothie! Just make sure not to over do it…a little goes a LONNNNNG way, but it definitely takes it to a whole new level of creaminess! The xanthan gum is also good for thickening up cooked sauces/gravies and salad dressings too! 🙂

  39. I had a green smoothie this afternoon and am thinking that peanut four would have made it so much better! Luckily there are a few hours left in the day to make up for it so I will be sure to stuff my evening snack full of foods of the peanut variety. 😉

    I’m the same way with never putting the fate of my smoothies into the hands of anyone else. It has to be the perfect balance of ice to liquid to gums to achieve maximum spoonable-ness hehe.

      Definitely! What’s sad is RIGHT after posting this, the next day I totally goofed up a smoothie…it went from way to thick to WAY to runny in seconds! I was SO bummed! If I hadn’t been so hungry I would have put it in the freezer, but instead I just ate/drank it as is while I sat there and pouted! Haha!

  40. I’m currently green with jealousy over that chobani 😉 I love that english muffin idea! My boyfriend has been asking for a healthy version of an egg McMuffin… maybe I can make that happen 😉

      Oh TOTALLY! I went on a little McMuffin kick a couple of years ago mixing it up with Canadian bacon or sausage…and sometimes I’d even through a little jam in there to sweeten it up! Love a good mix of sweet and savory!

  42. I am so glad you are feeling better 🙂 Yesterday, I ate at this vegan place in d=Dallas- everything was spectacular and i wish i could go for more!!! My fav green smoothie- has spinach, avocado, peanut butter and almond milk and sometimes banana.

  47. Glad you’re feeling better, surgery is never fun! I’ve been wondering about those flip things, our grocery finally got all the new Cho stuff in. I’ve held back…so far!

    That smoothie sounds awesome! I never want them when it’s cold out, but now that spring (seems) to be finally coming around, I’m starting to get a hankering.

      The flips are great…though I kinda wish they had a bit more of the granola/crunch in them! So far the key lime has been my favorite…which is weird because I don’t even LIKE key lime pie! Haha!

      I love my smoothies…even on a chilly day, but sometimes when I just can’t bear the thought of bundling up in three separate layers just to enjoy breakfast, I whip up one of these bad boys! http://www.kissmybroccoliblog.com/2013/01/11/sippin-on-a-soupie/ It’s a smoothie that is ricotta based so you pop it in the microwave for a minute or so and BAM you’ve got yourself a soup + smoothie…SOUPIE! 😉
