For the record, it’s basically what I would imagine if Earth Balance’s coconut peanut butter and a Butterfinger bar made a baby (minus the chocolate coating)…and in case that needs further explanation…it’s FREAKIN’ AMAZING!

I’ve been in a bit of a recipe rut lately, so I decided to go with something quick and easy…

Blueberry Coconut Almond Sauce with YogurtAnd besides, who doesn’t love a good sauce?

Blueberry Coconut Almond Sauce

Prep Time: 5 minutes

Cook Time: N/A

Keywords: microwave breakfast snack appetizer no sugar added blueberries bananas

Ingredients (Serves 2)

  • 1/2 cup fresh or frozen blueberries
  • 1 medium fresh or frozen banana, chopped
  • 2 teaspoons coconut flour
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon cinnamon
  • 2 tablespoons dairy or dairy-free yogurt (optional, but delicious!)
  • 2-4 Tablespoons unsweetened almond milk to thin

Instructions

1. Place blueberries and banana in a small microwave-safe bowl and cook on high for 30 seconds.
2. Combine fruit with the remaining ingredients and process in a small blender or mini food processor until creamy.

I used frozen blueberries and frozen bananas for this, but feel free to use fresh, you may just have to add a bit more liquid to get things nice and saw-seeeeey! πŸ˜‰

You could use this sauce for just about anything: pancakes, oatmeal, the contours of a spoon…

French Toast with Blueberry Coconut Almond Sauce

Or it makes for oneΒ MOUTH-WATERINGΒ addition to French toast!

Or perhaps VEGAN Coconut French toast?

    I am loving that you haven't shared too much about the manfriend on the blog yet. Are you getting a lot of people asking about him? Personally, I just think it's not the time and it's not like they opted to have thousands of people looking at their face you know? Like, it was OUR decision and they just happened to meet us πŸ˜‰ lol

      Oh I hear ya girlie! This sauce was made from the VERY last of my stash of frozen blueberries from last year’s farmers market…I was forced to go to the store today and pay $4 for a tiiiiiiiiiny bag of frozen organic ones JUST so that I can make Sarah’s blueberry coconut bread…but I have a feeling it’ll be totally worth it! πŸ˜‰

  7. Oh YES!! I’m glad you went with simple today too, I’m finding that it can be just as good (and sometimes better). And the suggestion to make with french toast…oh yum. I love the way you made your vegan french toast, I’m going to have to try that. Then maybe a french toast tasting party between your recipes & Meg’s. Oh this is sounding like a fun Saturday morning. Why is it only Monday?! πŸ˜‰

    And good job with your grocery shopping! Sticking to a food budget is one of my goals this week and it’s much easier said than done. PS: That EatPastry cookie dough is un-freakin-believable. Swoon…

      Oh my gosh, thank GOD! I was SO nervous about getting it…it was by far the most expensive thing I bought but I really wanted a cookie dough without eggs…because well, I have no intention of actually baking any of the dough! πŸ˜‰ #noshame

  11. I need that giant sheet of Rice Krispie treats in my life. Oh. man. First you find a bag of Lucky Charms marshmallows, and now a huge sheet of my favorite treats?! Clearly I’m living in the wrong place. And I totally remember “smoking” candy cigarettes as a little kid and thinking I was too cool for school πŸ˜† Ohhhh good times.

  12. I loooove the Kevita Mojita!! It was one of my spiciest market discoveries last week. Initially I just bought one, because I wasn’t so sure about probiotics mixing with a cocktail-wannabe, but I’ve been chugging one during my 5 o’clock cocktail hour every day since. Let’s plan on clinking bottles in Park City, k? πŸ˜€ I would also suggest following up our bottle clinking with a hula-hooping marathon in WalMart (I used to get into so much trouble in that store in high school!), but I’m guessing Park City isn’t WalMart worthy, so we might need to search for fun elsewhere…Maybe a cowboy bar?

    The Blueberry Coconut Almond Sauce looks uuuhmaaazing. I haven’t seen any blueberries in the store lately, but once I do, this is going to happen.

      Oh I know, I used up the last of my frozen stash from last summer’s farmer’s market…I was forced to go out and buy a $4 bag of organic frozen ones today to replenish…because I just HAVE to make Sarah’s coconut blueberry bread! Did you see it? It looks amazing!

      And I am all about some bottle clinking in Park City! But if we do it in a cowboy bar…I have one request, there HAS to be a mechanical bull involved! πŸ˜‰

  13. I love the recipe! I have a ton of coconut flour that I have been trying to use up, and I never thought to use it to make a sauce, but you have now inspired me!

    My husband was given that poop book for his birthday! It is too funny! Being that Keenan is potty training right now, that book is SO appropriate for our household, as that is all we seem to talk about these days, ha!

      Haha! Too funny! I never actually looked at the inside of the book…I was too busy running around the entire store snapping pictures of all the things that reminded me of my childhood! Lol

      Coconut flour makes some of the best sauces! I do a mix of coconut flour, almond milk, and stevia to put on pancakes all the time…you can also add in spices like pumpkin pie spice or ginger to mix it up a bit too! πŸ˜€

  22. Holy crap! What’s in the container that says “cookie dough”???
    Totally would die in those heels! I wore some 3” ones the other night and was MAX’d out! They had a peep toe, which is normally fine, but omg, because of the slant, my toes were steadily being squeezed through the peep! Omg, absolutely terrible, like my toes were having a “tube of tooth paste” moment. I’m just so classy like that πŸ˜‰

    I’m glad I’m not the only one who has that much fun in candy stores. I always love reminiscing about all my old childhood favourites and checking out all the whacky candy. I can’t say I’ve ever seen bacon gumballs before though – I’m intrigued!
