Sunshine & Blueberries

I hope you all had a FANTABULA-MARVELOUS weekend!

While my weekend didn’t go exactly as planned, I managed to make the most out of it and I have to say, it carried on the mood that had been going all last week!

And what better way to share it with you guys than to join in with some marvelous, week recapping, and veggie lovin’ fun than with Katie’s, Meghan’s AND Heather’s Monday link parties…hey, if three’s a crowd, four’s a party right?! πŸ˜‰

Β Get out those party hats!

First of all, let me just say that it is im-FREAKIN-possible to not have a good week when 75% of it looks like this…

Spring Flowers

Like I mentioned Friday, I’ve been able to do a lot more in the way of therapy for my knee lately. Well, with the weather being so great, I just couldn’t stand the thought of Β cycling into a brick wall for 15-20 minutes every day so I instead, I took it outdoors!

And I’m SO glad I did, or else I would have missed out on this…

SunsetAll together now, “ahhhhhhhhh!” πŸ˜€

So, with a swell of Vitamin D coursing through my veins,
this is how my week went:

Capt'n Crunch

  • On Sunday, I started the week off right with a bowl of healthy, protein-packed Greek yogurt…I’m not sure HOW that Capt’n Crunch got in there! 😯
Note to self: Don’t tell the man-friend you’re craving something and NOT expect to have it sitting in front of you within 20 minutes.Β
  • Monday, before my shopping spree, I zipped off to the post office first thing to bring some smiles to two lovely ladies! If there’s anything I love more than receiving packages in the mail, it’s SENDING them!

Nails, Chips, and Chaps

  • Tuesday was pretty uneventful except for the best damn breakfast wrap in the world!
  • Wednesday, I gave myself a manicure (Essie’s Coat Azure), discovered a new favorite snack, scored some childhood nostalgia in the form of Manager’s Specials, and witnessed that beautiful sunset!

Yogurt Cereal Coffee

  • Thursday morning, I dined alΒ a front porch.
Note to self: You should accidentally coordinate your socks to match your breakfast more often! πŸ˜‰
  • I also enjoyed my fabulous walk in the park and a LOT of reading.

Ethiopian & Netflix

  • On Friday, I got to spend some time with the man-friend. My stomach was feeling kinda wonky that night so while I did try a little of each of the dishes on our Ethiopian platter, my dinner was pretty much one injera and a KeVita.
Note to self: The man-friend WILL drive to opposite sides of the city to obtain a beverage AND the only food you think you can handle with a queasy tummy.
  • After dinner, we relaxed on the couch and watched this awesome movie.
  • Saturday, I spent the day man-friendless. He ended up getting called into work for SIXTEEN HOURS! πŸ™ Since I didn’t have any other plans, and a cold front had come in, I spent the whole day in my PJ’s catching up on blogs and having the BEST day of intuitive eating since I started my journey…but you’ll have to wait until Wednesday for that!

  • Yesterday, after getting back from my best friend’s baby shower, I was blown away by the hits I got on yesterday’s “Pancake Confessional” post! I had way TOO much fun with typing that up and I’m SO glad you all got a kick out of it. I love making you guys laugh…it seriously makes my day! πŸ˜€
  • After reading through some of your comments, I decided to indulge in a little nap. Even thought it wasn’t the best sleep I could have gotten, I guess it was just enough because after I woke up I took a shower, did some laundry, cleaned the kitchen, and then decided I was gonna bake some muffins!

For this week’s “cook” portion of MMAZ, I had every intention of making Sarah’s Blueberry Coconut Breakfast Loaf, but when it came down to it, I wasn’t feeling very protein-y so I had a look at the other link ups and when I spied Nicole’s Blueberry Surprise Muffins, I KNEW I had to make them…although I created a surprise all my own!

Blueberry Surprise Muffins

I used a mix of whole wheat pastry and whole wheat flour, 1 whole egg instead of a flax egg, almond extract instead of vanilla, decreased the sugar to 1/3 cup, and added a spoonful ofΒ COCONUT PEANUT BUTTERΒ instead of the raspberry filling.

I had visions of sugar plums ooey gooey peanut buttery goodness spewing forth once I tore into the finished product, but unfortunately, that wasn’t the case…

Blueberry PB Surprise Muffin

Still 100% delicious, but I guess next time, I’ll save the PB for the topping. πŸ™‚

Dude, I just remembered that I still have to try Amanda’s blueberry muffins!

What’s your favorite kind of muffin?
Omg, I LOVE muffins…blueberry, strawberry, banana nut, pumpkin, you name it!!

What was the most marvelous thing that happened in your life last week?

  1. first, your man friend rocks!!!! you are one lucky lady. πŸ™‚ and i’m with you on the mufins and i made amanda’s blueberry ones last weekend – they are everything.

  2. Jessie says:

My heavens, that bowl of captain crunch & yogurt just looks magnificent, and filled with lots of sugar that sounds pretty heavenly right about now!!! Nicely done on manfriends part of making that bowl happen!!!

p.s. you got some skillzzzz matching your socks to your breakfast.

  3. My favourite kind of muffin is the ones my mum makes at Easter – just a plain vanilla muffin with a hidden Easter egg in the bottom! Best eaten straight out the oven. Nostalgia right there! And I LOVE your nails! They look super!

  4. You did get a ton of stuff done, especially after seeing all your food creations last week (um, Greek wrap much). I love that you used the whole egg in your muffins (makes me smile), and you added a dollop of peanut butter to your muffins. It sounds good, even if it didn’t spread like you wanted. Congrats on the stats, that beautiful sunset shot, and all your outdoor exercise. I’m glad to hear your knee is finally mending and you’ll be rocking stiletto’s in no time. You’ll just wear flip flops, won’t you? Sigh.

    • kissmybroccoli says:

Haha, yes ma’am I most certainly will! You give me a couple of lessons on HOW IN THE HELL you ladies walk in those things, and maybe I’ll consider it just once…but only for you! πŸ˜‰

  5. Your man-friend sounds like a keeper! πŸ™‚

It must be muffin week this week as you cooking them is I think the fourth post I’ve read on them being cooked in the last few days, makes me want to bake some of my own πŸ˜‰

Looking forward to your next IE update post.

  6. katie says:

You are just a party whore, haha! Love that you are joining all the link up parties! Love you!

I saw your pancake post yesterday, was hilarious! I believe it got high views, wa pretty funny! Loved it!

Our nails look exactly the same! I got the glitter ring finger too, except I am wearing essie ‘avenue maintain’ !

Glad your weekend was fabulous love! YAY for getting some good walking in! Soon you will be all the way healed!

    • kissmybroccoli says:

What can I say, I get around! πŸ˜‰

So glad you enjoyed the post! I had a lot of fun with it! And it looks like you had a pretty fabulous weekend yourself! So excited for you and Mike! Baby G is a lucky little boy to have parents like you two!

  7. It was great seeing my parents this weekend. I too need to make Amanda’s blueberry muffins. I think her pumpkin bread is actually next on my list though. Yum!

    • kissmybroccoli says:

Ohhh, I made that last year! You will certainly NOT be disappointed…well, until it’s gone that is! πŸ˜‰

  8. Your man friend is so sweet!! Haha that’s so awesome πŸ™‚ My boyfriend loves donuts, so after he ran the Tough Mudder, I surprised him with some of his favorite local donuts πŸ˜‰ Isn’t it funny how we all show love through food?

    Love you, girl!

  9. Blueberry muffins are definitely my favorite. If you’ve never tried Betty Crocker’s Wild Blueberry boxed mix… You need to because those things are freaking fantastic. Love the idea of stuffing with peanut butter, too bad they didn’t turn out as great as you expected though.

Hm. Captain Crunch Cereal. Total flashback. Loved all of the flavors of that guy’s cereal line (except for chocolate, never had a desire to try that one).

    • kissmybroccoli says:

My mom bought that mix once when we were kids! It’s the one that comes with a little tin of wild blueberries, right?! Omg, it was sooooooooo good! Wow, I haven’t thought about that in YEARS! Haha!

  10. Mmm Capn Crunch – I totally forgot about that cereal! I’d have to say there’s no muffin as awesome as a chocolate COSTCO muffin. Am I right?!

Lemon poppyseed or blueberry are way up there on my favorites list, too. Did I tell you that I made a pancake recently? I thought of you. πŸ˜€

    • kissmybroccoli says:

Aww, I’m seriously deprived…no Costco here! There’s one in Nashville, but I haven’t been able to get to that side of town to check it out just yet. Plus, I figure once I’m in there, I’m pretty much guaranteed to go absolutely nuts…so yeah, my wallet’s a little skeeeered! Lol

Ahhh, you made a pancake?! Wait, just one?! haha!

  11. Lucie says:

Jjjjjjiiiihaaaaa one more time!! I CAN NOT WAIT FOR YOUR PACKAGE TO ARRIVE!!
And for all the other stuff I think I need to chose the list form:
    1. Your Man is such a sweetheart – keeper!!
    2. I am so happy for you that you make progress and walks with that weather are just wonderful!!
    3. Matching socks and breakfast? I need to start doing that in my life.
    4. I napped as well on Saturday. We probably drooled our pillow right at the same time πŸ™‚
    5. The muffins – oh well, just DELICIOUS!! I did my own chocolate version the other day – recommendable!!

    • kissmybroccoli says:

Oh yeah! I remember seeing those! They look so “sexy” with the addition of the avocado! πŸ˜‰ Love it!

I can’t wait for you to get your package either…though the other day I thought of a couple more things I should have added! Guess we’ll just have to do another swap at some point…oh darn! πŸ˜‰

      Love your face!!

  12. Sounds like you have a pretty fabulous manfriend! And oh god, Lip Smackers. I was all about the Dr. Pepper one back in the day πŸ˜‰

Favourite kind of muffin: morning glory. Because basically, those things have absolutely everything in them so you kind of have to love them. Banana chocolate chip is a close second though!

    • kissmybroccoli says:

Omg, how could I forget about morning glories?! You know I didn’t have my first one until just a year or so ago? I know…totally deprived!

And you were seriously the only person to comment on the Lip Smacker! Haha! Dr. Pepper and Bubblegum were always my faves!

  13. The peanut butter in the middle didn’t work?! Hm..I wouldn’t give up on that one, it sounds like it could be GENIUS! πŸ™‚

  14. Clearly I need a significant other. I ran out of kombucha and had to haul myself to Whole Paycheck first thing Saturday morning. Lame.

Loooove these muffins. Who says you can’t bake?!

    • kissmybroccoli says:

I can bake AS LONG as I’m following someone else’s recipe…when it comes to creating my own, that’s where I do a big fat BELLY FLOP!

Dang girl, how much ‘buch do you drink a day?! I thought you’d pretty much have a constant supply! Lol

  15. Heather, I’ve read your blog foreverrrr and I am so crazy excited that you made my muffins. I know I said this on the ‘gram, but I am still kind of star struck πŸ˜‰ I had no idea that would happen if you baked pb, super bummer! Hope your tummy’s feeling better, and that you have a great week! πŸ™‚

    • kissmybroccoli says:

Awww! Well how about I’m just grinning from ear to ear on the fact that you feel star-struck! Really?! Little ol’ me???! Seriously though, LOVED the muffins! Oh and you should know that I left some with the man-friend to try over the weekend and he texted me this today: “Muffin’s are good. Make more!” Lol

  16. Kat says:

mmmm coconut peanut butter is my absolute FAVORITE!!
And seriously I adore a good muffin. Or any muffin to be honest. Just as long as it is huge and takes me a while to eat. Muffins should be enjoyed not inhaled like my pb toast

  17. purelytwins says:

we love banana or pumpkin based muffins πŸ™‚

  18. Amazing weather! Glad your knee therapy is going well…I’m sure it’s frustrating at times but you’ll be back to your good ol’ self before too long!

Congrats on the site stats too – whoa!

  19. You sure do know your recipes. You have me practically DROOLING all over my keyboard when I visit your site! Your man friend really seems like a keeper. Every lady deserves to be treated well!

P.S. My favorite muffin is banana-nut or any flavor that involves nut butters! Have a phenomenal week.

  20. Dude! Tone down the fabulousness!!! – I never know what I’m supposed to comment on first πŸ˜›

Love, love, love that you got to enjoy some time outside! And love that your man is treating you right – a guy who honors your cravings is definitely a keeper πŸ˜‰

Please stop taunting me with blueberry muffins. They’re my absolute favorite kind of muffin and I’d kill to bake up a batch, but I have -no- blueberries in my possession right now. I guess my habit of popping ’em straight from the bag into my mouth isn’t the greatest habit I have, but they’re just too tasty! Ahh well. At least I still have some leftover chocolate cake from my dad’s birthday this weekend πŸ˜‰

    • kissmybroccoli says:

Haha! Duly noted…next time I’ll be sure to break out the fabulousness in smaller doses! πŸ˜‰

You wanna hear something funny about those muffins? I bought a bag of frozen ones from the store last week JUST so that I would have some one hand when it came down to making my blueberry dish this week, but then I just kept sneaking into the bag all week…I barely had enough for the recipe! Lol

  21. Could a man-friend be any more perfect?! You’d better keep an eye on him or somebody else might steal him ;). Seriously, though, I’m SO happy you two found each other.
Damn, I “aaaah”-ed before reading your caption. What can I say? Nature and pictures of it make me super happy. What’s better than a walk through the gorgeous outdoors?
One of the most marvelous things happening this weekend for me was family time at my parents’. Including good political discussions with my dad – I really like when I feel I can actually stand up to him in terms of arguments :). Oh, and him saying how much he appreciated me visiting made me happy, too.
    Happy Monday!

    • kissmybroccoli says:

Awwwww, MP!!! I love hearing these little snipets of you and your dad…it really seems like you two are getting closer and that makes me so incredibly happy! And seriously girl, I just plain love you!!! Hope that weekend marvelousness is continuing into the week for ya! πŸ˜€

  22. Drooling so badly right about now. I love the sunset too, don’t sights like this seriously make you feel like everything will be alright in the end, no matter what. It touches a deep deep note in my heart. So beautiful I can’t hardly take it.

I love that you coordinated your socks with your breakfast haha you stylish lady you πŸ˜›

    • kissmybroccoli says:

YES! It really does! Like some sort of peace just falls over me in that instant…and there is no wrong in the world!

And I swear, the socks were a total accident! Lol

  23. I have had the hugest hankering for muffins lately – I’m so glad I got some yesterday at TJ’s because this morning’s breakfast was absolutely delic and many more breakfasts this week I bet will be πŸ˜€

  24. LOVE your nails! I am seriously digging the bright blue colors this Spring :).

  25. Susie says:

O geez, favorite muffins would be ALL THE MUFFINZZZ lol. But really any muffin with a mix in–I’m all about texture and variety. Especially if that variety includes mini Choco chips and berries. One of the best muffin recipes I’ve ever made were a riff on Sam at Better than Sprinkles’ white chocolate blueberry explosion muffins. No explanation necessary. However, I am PARTICULARLY proud of my own creations (devised from combinations of multiple recipes): Pumpkin chai chocolate chip protein muffins; lemon beet yo-nana protein muffins; berry cornbread power muffins; and jalapeΓ±o white cheddar cornbread. I love muffins because of the serving size and portability!
And who doesn’t love a solid bakery free muffin top (in the food sense, though one leads to the other, lol!)?

    • kissmybroccoli says:

Hahaha! Very true! Omg, you have me drooling over those muffin creations…pumpkin chai chocolate chip?! And I LOVVVVVVE cornbread…why have I never thought to add berries?! Ahhh, so glad to meet a fellow muffin fanatic! πŸ˜‰

  26. blueberry muffins are at the top, but i LOVE poppyseed! lemon poppyseed is amazing. totally drooling and craving them now.

  27. Holy moly! Muffins?? Well…since you asked…I happened to post a muffin recipe today!!! Tah dah! Mocha-Glazed Banana Mocha Chip Muffins:

PS. Manfriend has SO many points adding up in my book. He’s doing stellar!

    • kissmybroccoli says:

Omg, those are the foodporn ones aren’t they?! Ahhh, I can’t look yet, I need a snack first or I’ll end up gnawing on my keyboard! 😯

  28. Sarah Pie says:

Your muffins look amazing!! Almost as amazing as all the treats from your man-friend, he sounds like a real keeper πŸ™‚

I also love where your socks match your breakfast… I think I may need to start doing that, I have some very exciting socks!

  29. Ah! PB stuffed muffins! That’s unbelievable! It is kinda hard to get that gooey consistency that you imagine when you are baking with it. I discovered that making PB and B stuffed french toast. Maybe if you mixed the PB with some cream cheese it would get the gooeyness? And it would be like PB cheesecake inside! By the way, your man-friend sounds incredible, that man will do anything for you, hold onto that one! πŸ˜‰

    • kissmybroccoli says:

Ohhh, peanut butter cheeeeeeeesecake!! Now you’ve got me wanting to Google stuff! Lol

And thanks girlie…I definitely feel lucky that I snagged a good one! πŸ˜‰

  30. The best thing that happened to me last week was spending the weekend in the gorgeous Sydney city with my man! AND I ate in a restaurant for the first time since being diagnosed as a celiac and didn’t get sick!

  31. Beautiful pics!!!! LOVE & that you got out!!!

OK, those muffins are looking too good!!! OMG!

    Last week – I am still alive – a good thing! πŸ™‚

  32. Your man friend is too sweet girl!! We def need to double date! πŸ™‚
I love the idea of pb surprise muffins. Now to figure out how to make them gluten free…

  33. Isn’t walking the best therapy ever? I’ve been loving my daily walks with Shaz…why wasn’t I doing this before having a dog?

My favorite muffin probably blueberry. But if it’s done right…and it has to be done right….poppyseed muffins are incredible. πŸ™‚

Sounds like the man-friend is wonderful! Good for you! πŸ™‚

    • kissmybroccoli says:

But walking WITH a dog is sooooooo much better! I took the man-friend’s pup for a walk today and we were gone for like 45 minutes and I didn’t even realize it!

  34. Sarah says:

It looks like you had an amazingly MARVELOUS weekend!! Can i just say that your man friend is awesome!!! πŸ™‚ I don’t blame you for not being in the mood for protein powder….I am totally protein powdered out too!! Ugh! Preferring real food much more lately!! Thanks for the shout out though! Those muffins look delicious!!

  35. I love that you added PB to the muffins, that sounds fabulous — too bad they weren’t ooey-gooey in the middle. There must be a way to make that work, right?

    • kissmybroccoli says:

That’s WHAT I’m thinking!! I’m wondering if you would have to inject the pb post cooking like Laura does for her car bomb cupcakes?

  36. Just found your blog and now know my new go-to for meal ideas!

  37. Emily says:

Aww! What a cutie! You definitely chose a winner- referring to the ‘man friend’, of course. (:
It’s always such a bummer when recipes don’t turn out quite how you imagined but, I’m not going to lie, those still look delicious!

  38. Pumpkin muffins all the way! These look incredible though. Blueberry is my next favorite, which I haven’t done in forever! Sounds like you really had a great weekend! I’m so glad you’re taking the time to enjoy life and all the great things around you these days! xoxo

  39. Pingback: WIAW: A Perfect IE Day |

  40. I LOVE the combination of coconut, peanut butter, and blueberries. Now add some pumpkin and maple into that mix…trust me. πŸ™‚

What a great many things to comment on. Where to begin?

Wonky is the best word ever. I’m glad it is taking over the (blog) world.

I’m glad you have a man friend who will indulge you. You deserve it. And you deserve HEAPS of Cap’n Crunch. [I have to say that although I just bought the Cinnamon version–which is yummy–I should have just gone with the original. There is NOTHING like it.]

You are the best care package giver I have ever known.

Hooray for being able to get up and out a little bit!!!

And I love when you catch up on blogs. It totally made my Sunday morning. πŸ™‚

    • kissmybroccoli says:

Haha! Well, GOOD because it’ll probably be happening again either tonight or tomorrow! I don’t know what it is, but I can never seem to stay caught up during the week! But I love your little comment bombs so I don’t mind waiting to spread the joy if that’s what I gotta do! πŸ˜‰

Omg, I bought some of the cinnamon Capt’n Crunch and I thought I was going to pass out from the sweetness…I swear to you, I was DIZZY! Same with the cinnamon Life! πŸ™ The level of sweet you can tolerate amazes me! I wish I could sometimes, but I guess I’ll just have to stick with the “boring” ones! Haha!

Wonky IS the best word ever! I think I started using it after seeing it on Amanda’s (Running with Spoons) blog…funny how we adopt phrases and stuff from people we “hang out with” a lot! Same thing goes for “anyhoodles”…which I got from Melissa (Treats with a Twist). That girl CRACKS me up!

You’ve got me intrigued by the pumpkin coconut peanut butter blueberry maple combo! Mmmm, what a delicious-sounding mouthful! πŸ˜€

  41. Even if it wasn’t ooey gooey, the center of those muffins look deliciouuussss

  42. calee says:

I love you because you say things like this: “FANTABULA-MARVELOUS”.

Also, I must mention that if you are going to intuitively eat fro yo any time soon, I highly recommend doing captain crunch on the bottom of a tart yogurt. I passed up my old candy bar toppings for some cereal (same amount of sugar, but hey, it’s fortified).

    • kissmybroccoli says:

I am surely no stranger to the cereal and fro-yo combo…I would actually take that over candy bar/cookie toppings ANY day, but I’ve never tried it with the tart before…I’m always sucked into all the froo froo flavors! Lol
