Sunshine & Blueberries

I hope you all had a FANTABULA-MARVELOUS weekend!

While my weekend didn’t go exactly as planned, I managed to make the most out of it and I have to say, it carried on the mood that had been going all last week!

And what better way to share it with you guys than to join in with some marvelous, week recapping, and veggie lovin’ fun than with Katie’s, Meghan’s AND Heather’s Monday link parties…hey, if three’s a crowd, four’s a party right?! πŸ˜‰

First of all, let me just say that it is im-FREAKIN-possible to not have a good week when 75% of it looks like this…

Spring Flowers

Like I mentioned Friday, I’ve been able to do a lot more in the way of therapy for my knee lately. Well, with the weather being so great, I just couldn’t stand the thought of Β cycling into a brick wall for 15-20 minutes every day so I instead, I took it outdoors!

And I’m SO glad I did, or else I would have missed out on this…

So, with a swell of Vitamin D coursing through my veins,
this is how my week went:

Capt'n Crunch

  • On Sunday, I started the week off right with a bowl of healthy, protein-packed Greek yogurt…I’m not sure HOW that Capt’n Crunch got in there! 😯
    Note to self: Don’t tell the man-friend you’re craving something and NOT expect to have it sitting in front of you within 20 minutes.Β 
  • Monday, before my shopping spree, I zipped off to the post office first thing to bring some smiles to two lovely ladies! If there’s anything I love more than receiving packages in the mail, it’s SENDING them!

Nails, Chips, and Chaps

  • Tuesday was pretty uneventful except for the best damn breakfast wrap in the world!
  • Wednesday, I gave myself a manicure (Essie’s Coat Azure), discovered a new favorite snack, scored some childhood nostalgia in the form of Manager’s Specials, and witnessed that beautiful sunset!

Yogurt Cereal Coffee

  • Thursday morning, I dined alΒ a front porch.
    Note to self: You should accidentally coordinate your socks to match your breakfast more often! πŸ˜‰
  • I also enjoyed my fabulous walk in the park and a LOT of reading.

Ethiopian & Netflix

  • On Friday, I got to spend some time with the man-friend. My stomach was feeling kinda wonky that night so while I did try a little of each of the dishes on our Ethiopian platter, my dinner was pretty much one injera and a KeVita.
    Note to self: The man-friend WILL drive to opposite sides of the city to obtain a beverage AND the only food you think you can handle with a queasy tummy.
  • After dinner, we relaxed on the couch and watched this awesome movie.
  • Saturday, I spent the day man-friendless. He ended up getting called into work for SIXTEEN HOURS! πŸ™ Since I didn’t have any other plans, and a cold front had come in, I spent the whole day in my PJ’s catching up on blogs and having the BEST day of intuitive eating since I started my journey…but you’ll have to wait until Wednesday for that!

  • Yesterday, after getting back from my best friend’s baby shower, I was blown away by the hits I got on yesterday’s “Pancake Confessional” post! I had way TOO much fun with typing that up and I’m SO glad you all got a kick out of it. I love making you guys laugh…it seriously makes my day! πŸ˜€
  • After reading through some of your comments, I decided to indulge in a little nap. Even thought it wasn’t the best sleep I could have gotten, I guess it was just enough because after I woke up I took a shower, did some laundry, cleaned the kitchen, and then decided I was gonna bake some muffins!

For this week’s “cook” portion of MMAZ, I had every intention of making Sarah’s Blueberry Coconut Breakfast Loaf, but when it came down to it, I wasn’t feeling very protein-y so I had a look at the other link ups and when I spied Nicole’s Blueberry Surprise Muffins, I KNEW I had to make them…although I created a surprise all my own!

Blueberry Surprise Muffins

I used a mix of whole wheat pastry and whole wheat flour, 1 whole egg instead of a flax egg, almond extract instead of vanilla, decreased the sugar to 1/3 cup, and added a spoonful ofΒ COCONUT PEANUT BUTTERΒ instead of the raspberry filling.

I had visions of sugar plums ooey gooey peanut buttery goodness spewing forth once I tore into the finished product, but unfortunately, that wasn’t the case…

Blueberry PB Surprise Muffin

Still 100% delicious, but I guess next time, I’ll save the PB for the topping. πŸ™‚

Dude, I just remembered that I still have to try Amanda’s blueberry muffins!

  3. My favourite kind of muffin is the ones my mum makes at Easter – just a plain vanilla muffin with a hidden Easter egg in the bottom! Best eaten straight out the oven. Nostalgia right there! And I LOVE your nails! They look super!

  4. You did get a ton of stuff done, especially after seeing all your food creations last week (um, Greek wrap much). I love that you used the whole egg in your muffins (makes me smile), and you added a dollop of peanut butter to your muffins. It sounds good, even if it didn’t spread like you wanted. Congrats on the stats, that beautiful sunset shot, and all your outdoor exercise. I’m glad to hear your knee is finally mending and you’ll be rocking stiletto’s in no time. You’ll just wear flip flops, won’t you? Sigh.

  9. Blueberry muffins are definitely my favorite. If you’ve never tried Betty Crocker’s Wild Blueberry boxed mix… You need to because those things are freaking fantastic. Love the idea of stuffing with peanut butter, too bad they didn’t turn out as great as you expected though.

    Hm. Captain Crunch Cereal. Total flashback. Loved all of the flavors of that guy’s cereal line (except for chocolate, never had a desire to try that one).

      My mom bought that mix once when we were kids! It’s the one that comes with a little tin of wild blueberries, right?! Omg, it was sooooooooo good! Wow, I haven’t thought about that in YEARS! Haha!

  10. Mmm Capn Crunch – I totally forgot about that cereal! I’d have to say there’s no muffin as awesome as a chocolate COSTCO muffin. Am I right?!

    Lemon poppyseed or blueberry are way up there on my favorites list, too. Did I tell you that I made a pancake recently? I thought of you. πŸ˜€

      Aww, I’m seriously deprived…no Costco here! There’s one in Nashville, but I haven’t been able to get to that side of town to check it out just yet. Plus, I figure once I’m in there, I’m pretty much guaranteed to go absolutely nuts…so yeah, my wallet’s a little skeeeered! Lol

    Favourite kind of muffin: morning glory. Because basically, those things have absolutely everything in them so you kind of have to love them. Banana chocolate chip is a close second though!

I bought a bag of frozen ones from the store last week JUST so that I would have some one hand when it came down to making my blueberry dish this week, but then I just kept sneaking into the bag all week…I barely had enough for the recipe! Lol

    Damn, I “aaaah”-ed before reading your caption. What can I say? Nature and pictures of it make me super happy. What’s better than a walk through the gorgeous outdoors?
    One of the most marvelous things happening this weekend for me was family time at my parents’. Including good political discussions with my dad – I really like when I feel I can actually stand up to him in terms of arguments :). Oh, and him saying how much he appreciated me visiting made me happy, too.

    O geez, favorite muffins would be ALL THE MUFFINZZZ lol. But really any muffin with a mix in–I’m all about texture and variety. Especially if that variety includes mini Choco chips and berries. One of the best muffin recipes I’ve ever made were a riff on Sam at Better than Sprinkles’ white chocolate blueberry explosion muffins. No explanation necessary. However, I am PARTICULARLY proud of my own creations (devised from combinations of multiple recipes): Pumpkin chai chocolate chip protein muffins; lemon beet yo-nana protein muffins; berry cornbread power muffins; and jalapeΓ±o white cheddar cornbread. I love muffins because of the serving size and portability!
    And who doesn’t love a solid bakery free muffin top (in the food sense, though one leads to the other, lol!)?

  29. Ah! PB stuffed muffins! That’s unbelievable! It is kinda hard to get that gooey consistency that you imagine when you are baking with it. I discovered that making PB and B stuffed french toast. Maybe if you mixed the PB with some cream cheese it would get the gooeyness? And it would be like PB cheesecake inside! By the way, your man-friend sounds incredible, that man will do anything for you, hold onto that one! πŸ˜‰

  30. The best thing that happened to me last week was spending the weekend in the gorgeous Sydney city with my man! AND I ate in a restaurant for the first time since being diagnosed as a celiac and didn’t get sick!

      Omg, I bought some of the cinnamon Capt’n Crunch and I thought I was going to pass out from the sweetness…I swear to you, I was DIZZY! Same with the cinnamon Life! πŸ™ The level of sweet you can tolerate amazes me! I wish I could sometimes, but I guess I’ll just have to stick with the “boring” ones! Haha!

      Wonky IS the best word ever! I think I started using it after seeing it on Amanda’s (Running with Spoons) blog…funny how we adopt phrases and stuff from people we “hang out with” a lot! Same thing goes for “anyhoodles”…which I got from Melissa (Treats with a Twist). That girl CRACKS me up!

      You’ve got me intrigued by the pumpkin coconut peanut butter blueberry maple combo! Mmmm, what a delicious-sounding mouthful! πŸ˜€

    Also, I must mention that if you are going to intuitively eat fro yo any time soon, I highly recommend doing captain crunch on the bottom of a tart yogurt. I passed up my old candy bar toppings for some cereal (same amount of sugar, but hey, it’s fortified).

      I am surely no stranger to the cereal and fro-yo combo…I would actually take that over candy bar/cookie toppings ANY day, but I’ve never tried it with the tart before…I’m always sucked into all the froo froo flavors! Lol
