Can you believe it’s been over a MONTH since I contributed toย Laura’s link party?!

Crazy, I know, but let me ASSURE you I have yet to quit my strange eating ways. Nope, I’ve just been hoarding them for a few weeks!ย I’ll be sharing some amazing oatmeal creations very soon, but as far as today?

Today it’s ALL about the eggs…duh, note the post title! ๐Ÿ˜‰

As you guys know, I’ve been getting my fill of the yella stuff for the last few weeks, BUT it hasn’t been ALL about the yolk (just mostly! ;))

Hmm, too much? ๐Ÿ˜‰

I woke up with a craving for eggs…and cheese (nothing new) but this time I wanted something a bit different…something sweet! Well, since I just happen to be the proud owner of a log of cranberry goat cheese, it took me all of about 30 seconds to for me toย start drooling on myselfย come up with a recipe!

Spinach, Walnut, & Cranberry Goat Cheese Breakfast Wrap

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients (Serves 1)

  • 1 cup, packed fresh baby spinach
  • 3 egg whites
  • 2-3 tablespoons cranberry goat cheese (or plain goat cheese + 1 tablespoon dried cranberries)
  • dash of cinnamon
  • 1 tablespoon walnuts, toasted
  • 1 whole wheat tortilla

Instructions

1. In a microwave-safe bowl, place spinach in 1 inch of water and cover with plastic wrap allowing a small space on the side to allow steam to escape.
2. Microwave on high for 1 minute, drain, and set aside.
3. In a skillet over medium heat, scramble egg whites and cinnamon adding cheese within the last minute of cooking.
4. Arrange spinach, egg, and toasted walnuts on 1/3 of tortilla
5. Wrap/fold until closed and place on a grill pan (with a plate to serve as weight) on top or use a panini press.
6. Cook on medium heat until you achieve grill marks (flip after a couple of minutes if using grill pan).
7. Slice in half with a knife and serve.

Grilled Spinach, Walnut, & Cranberry Goat Cheese Wrap

Midway through cooking, I started thinking of Morgan’s breakfast on the run wraps so I couldn’t resist pressing mine panini style. Of course, you can always fix yours as a normal wrap, but I swear, grilling/pressing takes it to a whole new level of YUM!

And jusssssst in case my little sweet and cheesy eggs are straaaaaaange enough for you, I thought I’d share another little egg white creation that happened a couple of weeks ago…

Chocolate eggs in a jar, anyone?

Allow me to explain my thought process here (it DOES actually make sense)…

I FINALLY finished off my jar of cookie butter so OBVIOUSLY I had to have breakfast out of it. I was freezing that morning and all I could think of was getting warm,ย but I didn’t want oatmeal…I really wanted cereal…but again, I was cold.

Sooooooo I scrambled up some egg whites with cocoa powder and almond milk, threw it in my jar, topped it with cereal and banana, added a bit of almond milk,
and grabbed my spoon!

  1. I love sweet eggs! I know a lot of people think they’re totally gross but I think of them as French Toast minus the bread… My favorite sweet combination is cinnamon raisin eggs ๐Ÿ™‚ Or in the winter I loved adding fresh cranberries but haven’t seen those in ages.

    P.S. I’ve made an microwaved egg mug “cake” with cereal cooked right in – love it! Although, it would be better eaten out of an almost empty PB jar…

      Omg, I should have known…the queen of cereal pancakes!! Haha! Love it! And YES!! Just like French toast or crepes…how can people not see that??

  2. I don’t eat a lot of eggs, but I was trying to find ways to enjoy them because I know they’re good for me! I think that wrap sounds delicious! I love goat cheese!

  6. I am ALLLLL about sweet eggys. I LOVE my scrambled eggwhites with tons of cinnamon and vanilla (and that orange spice for the pearbread I sent you – delicious in eggs!!) topped with almond and coconut butter. YUMMYNESS!!
    And I can not wait for your oatmeal creations!!
    Giiiirl, that grilled-wrap-panini looks sooo good. I might not crave it for breakfast, but this would by my perfect lunch and dinner!!

  7. Now I’m excited to finish off my cookie butter jar so I can eat breakfast out of it. Best idea ever.

    I actually can’t really do sweet eggs. I can have a fried egg on top of oatmeal for a sweet/savoury thing, but full-blown sweet eggs just does not sit right with me.

  9. Given my natural inclination to want sugar in ALL things, I have to say that I’m definitely a fan of sweet eggs. Actually, I remember when I first started making my own scrambled eggs when I was just learning how to cook… I’d always make them with cinnamon and vanilla, and then eat them with maple syrup. To be honest, I actually prefer sweet eggs to French toast. But that’s not something I admit in public, out of a fear that the French toast lovers will come after me ๐Ÿ˜‰

      Haha! Well, I do consider myself to be a bit of a French toast aficionado, but I can TOTALLY see where you’re coming from! I actually just tried honey on my scrambled eggs recently and have been thinking about trying maple syrup next…on the list for this week for sure! ๐Ÿ™‚

  10. Strange but good hoarding. I love it! The thought of a log of cheese just makes me smile. There’s something slightly dirty about it… Hahahaha!

    I’ve been meaning to try egg whites in a jar. This will be happening as soon as I can have eggs again. 8 days. You better believe Waffle House will be happening.

    Oh boy that wrap looks delicious. I love goat cheese and cranberries. And love eggs! I never would have thought putting them together. Yum.

    A crepe is like a very thin pancake. We call the palachintas in Hungary and fill them wih sweetened cottage cheese and raisin, sweetened sour cream, jams, and chocolate when doing sweet. It can also be savory.

    Sorry to be the only downer who can’t stomach the though of sweet eggs. I just keep thinking about how much I hate when my maple syrup runs off my pancakes and into my eggs!

  17. The wrap sounds really good! I love adding goat cheese to eggs and im sure walnuts would also be a tasty addition.

  18. LOVE sweet eggs! And this looks delicious btw! I’m not a huge goat cheese fan though. Although it sounds delicious. Maybe I just need to get used to it!

      I think it does have a bit of an acquired taste due to the tartness of it, but if you can find some with flavor/seasoning in it (herbs and spices for savory) or rolled in fruit/jam like the one I have, it really is a whole different taste! Trader Joe’s has a blueberry vanilla one that is TO DIE FOR!!

  20. i always add cocoa to my egg whites! when i make my “powercake” (which is basically egg whites and pumpkin) i always add cocoa powder, or my click mocha protein powder. chocolate eggs are the best!!!

    my cookie butter jar is taking forever to finish (when you have 6 jars of pb open it’s kind of hard to finish one quickly) but chocolate eggy’s in it sound amazing!

  22. I love sweet eggs.. hence eggs with honey! ๐Ÿ™‚ A crepe is a very thin pancake that can be rolled with all kinds of good stuff in the middle! Delicious! Especially with Nutella and strawberries….

      Oh I definitely know my way around a crepe…one of my favorite fillings was a mixture of cottage cheese, banana, and peanut butter! I was just trying to get people to think about other variations of sweet eggs! And I swear, I will forever be in your debt for you introducing me to eggs and honey! Mmmmm!

  23. I’m not really a fan of sweet eggs (unless you count egg whites in oatmeal… or meringues!), but that wrap looks like just the right ratio of sweet to savoury. Plus you can never go wrong with goat cheese!

    As for my weekend plans, I went to a 7 course fundraiser dinner last night (and I’m still omgsofull) then today I’m going to my great great aunt’s 97th birthday. Hope you have a great weekend girl!

    Maybe I’ve been a fan of yours for way too long, but neither of these seem too “strange” to me. They both sounds down right delicious!! Anything wrapped in goat cheese is a winner in my book anyway though ๐Ÿ˜‰

  25. Even though I don’t like eggs at all – can you believe I haven’t had a single sunny-side up (or else) fried egg in my life? – your fondness of them [egg shell] cracks me up ;). I’ll take the wrap minus the eggs, thank you :).
    Boo, working on Sundays sucks but I’m sure you’ll reward yourself with some eggy kitchen fun before or afterwards. Hope it doesn’t get too stressful!

  28. Oooh, cranberry goat cheese sounds divine. You could pair it with anything in my book. In fact, you could stuff it in a crepe if you felt so inclined. I haven’t had crepes in forever, but they are amazing and basically light and thin pancakes which you could stuff anthing into. They’re also French, and you need to let the batter rest for awhile before actually cooking them so plan accordingly. Then again, you probably already know that.

      Yes ma’am! I’ve made a few crepes in my day…though I don’t really have much patience for them (does that REALLY surprise you?!) I just want all the sweet egg haters out there to think outside the box shell and recognize! <- Picture me saying that with a little head-bobbing sassy action in there! ๐Ÿ˜‰

  30. So, awhile ago you commented on my blog about how sad you were that I couldn’t have cheesy eggs…but I tried some goat cheese at the farmers market a couple of weeks ago…and it was OK! So maybe I CAN get on board with that. ๐Ÿ™‚ As for sweet eggs, I can’t say I’ve had chocolate eggs…except, oh wait, microwave muffins are essentially that! Also, honey on eggs? DELICIOUS.
