When I started thinking about what I did last week so I could share with Meghan’s
Week in Review linkup, I noticed a little trend…

Monday:

TJ Maxx Dress

The man-friend seriously is as obsessed with TJ Maxx as I am! But this time, instead of making a bee-line for the food stuffs (we did that later of course) he had other plans…he bought me a dress to wear to Blend! πŸ˜€

Calypso Cafe

My FIRST Caribbean food experience at Calypso Cafe…and it was ahhhhmazing!
I ordered the mustard greens (Heaven), spiced sweet potatoes, black beans, and coconut cornbread muffins (I DIE!) while the man-friend went with the pulled BBQ chicken, rice, and beans.

Tuesday:

Peanut Butter & Animal Crackers

Store brands are where’s it’s AT! Especially when you can find peanut butter jars the size of your face and animal alphabet CRACKERS (not cookies) that don’t have any sketchy ingredients!

Peanut Butter & Coconut Muffin

C’mon, I know I’m not the only one who plays with my food! Peanut butter with animal alphabet crackers and a Nicole’sΒ blueberry surprise muffin topped with coconut yogurt “frosting”

Wednesday:

Cereal & VeggiesDid somebody say sale?! It’s not my fault…Melissa made me do it! Plus, weekly bulk purchases from Sam’s…think I got enough greens? πŸ˜‰

Breakfast Wrap Cereal & KabochaStrange eats midweek:Β Cranberry Goat Cheese Wrap and Quaker Oatmeal Squares topped with cold roasted kabocha and healthy chocolate sauce.

Thursday:

Cereal & DishesYeah, yeah, yeah, so I went BACK to Kroger and bought MORE cereal…but um can we say BEST EFFIN’ DISHES IN THE WORRRRRRLD?!?!
Those came from Big Lots by the way! πŸ˜‰

Egg & Cheese Yogurt & Cereal

Two things I’ve been LIVING off of this week…cheese and egg toaster sandwiches and cereal (by the spoonful, bowlful, and handful!)

Friday:

Baby Shopping

I may not be ready to have children of my own, but you better BELIEVE I’ll go crazy buying pink stuff for my soon-to-be-mama bestie!

Ruby Tuesday SaladMet previously mentioned bestie and OTHER bestie for dinner at Ruby Tuesday…that would be my salad before and AFTER I added some gorgonzola cheese (that I may or may not have brought from home! ;))

Saturday:

Dollar Store ShoppingDollar Store shopping with the man-friend…sorry guys, I bought neither the flashy feathery flamingo PEN?! or the sugar coma in a chocolate-covered cup…but I found both to be pretty amusing! πŸ˜‰

Peanut Sesame Coleslaw 1

Say hello to my little friend coleslaw! πŸ˜‰

When I started brainstorming ideas for this week’s cabbage recipe, I immediately thought of coleslaw (duh). Going off the idea of one of my favorite coleslaw recipes, I decided to add a bit more color, some Asian flare, and a little protein and I have to say I think I ended up with a winner!

Peanut Sesame Coleslaw

Prep Time: 15 minutes

Cook Time: Chill 2-3 hours

Keywords: raw side gluten-free cabbage Meatless Monday

Ingredients (Makes 4 sides, 2 entrees)

  • 1/4 cup apple cider vinegar
  • 2-4* tablespoons peanut flour + 2 tablespoons water (or 2-4* tablespoons creamy peanut butter)
  • 1 tablespoon sesame oil
  • 1 tablespoon Bragg’s liquid aminos (or soy sauce)
  • 2 tablespoons agave syrup (or other preferred sweetener)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon dried garlic
  • 2 cups shredded cabbage
  • 1/2 cup shredded carrot
  • 1/2 medium red bell pepper, diced
  • 1/2 cup edamame, thawed from frozen
  • 3 green onions, green parts only, diced
  • sesame seeds and peanuts for garnish*If going for an entrΓ©e instead of a side, add more peanut flour or peanut butter

Instructions

1. Combine vinegar through garlic in a medium-large-sized bowl and whisk well.
2. Add remaining ingredients and stir to coat.
3. Cover bowl and place in refrigerator for 2-3 hours to allow flavors to meld.
4. Serve topped with sesame seeds and peanuts.

Peanut Sesame ColeSlaw 2

Peanut and sesame are two of my most FAVORITE flavors when it comes to Asian cuisine. They lend a sort of creamy flavor to the sweet-tartness of the traditional coleslaw mixture and goes great with the buttery edamame!

Seriously, go make this NOW!

    I have a love for the dollar store too… A Cake batter cup? Holy cow that thing is 1/4 lb? Good for you holding restraint. So hard to do when things are such good prices!

  5. Cinnamon roll captain crunch?!?! dammit, Canada needs to get on the awesome cereals train. I’ll probably do a trip over the boarder within the next couple of months, and at this rate all I’m going to bring back is a ton of cereal.

    I’m glad the buffet went so well! I adore Chinese buffets, the one here has sushi and dim sum, which makes me so happy.

    Looooove cabbage. Unfortunately not this week. Doh. It makes some awesome protein ice cream in the blender though. It turned my chocolate purple. Which of course meant it tasted even better.

  11. What an awesome man friend! Are you ever going to fully introduce us to him? πŸ™‚ I’ve seen some great food finds at TJ Maxx and Marshalls lately. I actually found Artisana Coconut Butter at Marshalls the other day but had just bought some at Whole Foods.
    I’ve been obsessed with cabbage lately and this coleslaw looks delish! My favorite way to cook it lately has been to roast it with some olive oil, salt, pepper, lemon and a little balsamic. For some reason I’m just loving it lately!

    How do you always find the most amazing things at the store? Those dishes are amazing, and who doesn’t need a 1/4 lb chocolatey cup? All I bought this weekend was Michael Buble’s newest CD, which… I have to admit has me swooning.

    Your version of peanut coleslaw looks delicious. I will definitely have to try this. Peanut sauce on just about anything is a win. My new favorite way to enjoy cabbage (because I love it and eat it raw, cooked, shredded, as chips . . . .) is ROASTED. It’s delicious!!

  21. Haha shopping and eating sounds like my kind of weekend! That Caribbean dinner looks AWESOME. I’ve never seen a Caribbean restaurant around here, but now I’m determined to find one.

    I didn’t do any shopping this weekend but I certainly ate. I went to a 7 course dinner on Friday night and ate more food than I ever thought was possible in one sitting lol!

    Oh my goodness, so much to comment on in this post, haha! Hooray for TJ Maxx and their great deals and a cute new dress and a fun (and delicious) dinner date! Letter/Number Crackers for the win! Love the off brand stuff! And all the asparagus is making me think that I need to buy some for us this week! YUM! Oh, and egg sammie… I haven’t been on an egg kick for a while (I go through loooong phases where it’s all I eat then I won’t eat it at all), but your yolky goodness is turning that craving back on! πŸ™‚ Also, the giant flamingo pen – hilarious! That would make such a great random feel-good gift. I may have to invest in one of those to mail to a friend. πŸ˜‰

Not too bad when it comes to the actual work, but even though I tried to keep up with my nighttime sleep schedule while I was off, it’s been a bit of a struggle the last few days to get a good night’s day’s rest. Hoping the “third time’s a charm” thing will work for me today! *fingers crossed*

  39. I love finding things on managers special at kroger! The other day I got organic cage free eggs for .90 cents and GF peanut butter puff cereal for less than 1.20 a box.

    Your cabbage recipe looks SO good! I just bought a head of cabbage and was thinking of what to do with it. My husband makes an awesome grilled cabbage salad that I love, or I was thinking of doing some cabbage rolls again…

      Ohhh, grilled cabbage salad? That sounds great! I just recently discovered the deliciousness that is roasted cabbage! Funny how all these years, I never thought of anything other than coleslaw when I thought of cabbage, but it is SO versatile. I’ve put it in just about everything…omelets, salads, sushi, you name it! Though I really do want to try making some stuffed cabbage rolls…I just don’t know if I have the patience for them! Ha!

    I have been to Calypso Cafe! It was years ago on a visit to Nashville, but I STILL remember how good it was. πŸ™‚

    P.S. I’m going to need you to go ahead and mail me some kabocha, as my Asian market has stopped selling it (at least for now). Acorn squash just isn’t quite cutting it as a substitute.

      Haven’t tried the Whole Hearts, but regular Life is ok…I just can’t handle the sweetness of the cinnamon one! I’m such a wuss! Lol

      Gah, I’m packing right now and I can’t decide what to wear for Saturday night!! You know it’s supposed to be like 50 degrees?!!? Hmm, wonder if I should pack my coat? Damn, why does it have to take up so much room?!
