Happy What I Ate Wednesday!

So I’m really loving how a lot of my favorite bloggers are making the move to get back to their WIAW roots and well, I’m happy to be able to play along with that today. Like Jenn has said, today is not a day to judge, but a day to celebrate something we all have in common…FOOD! While snapping up pictures of last week’s egg-therapy, I didn’t really have a plan for posting one full day of eats, but then I got to thinking, what better way to jump back in the game (and play by the rules) than with an organic, unplanned celebration?! So, without further ado, allow me to showcase my Thursday…

As is the case in most Thursdays, needing a little boost to get me through the last of my night shift, I enjoyed a cup of HALF CAFF coffee a few hours after midnight…

CoffeeAnd well, since my favorite mug photographed in the light of day looks a heck of a lot better, that’s what you get today! πŸ˜€

Around 4am, I had a little snack to tide me over until I could get home for breakfast (lunch/dinner/whatever)…

Quest BarsAnd since I didn’t take a picture, just pretend that the cinnamon roll one is all you see here! πŸ˜‰

Once home around 7am, I whipped up a bowl of savory deliciousness…

Yolk Porn

Same picture as yesterday, only with more YOLKPORN…one double-yolk egg, steamed bok choy, pumpkin puree, and burrata cheese topped with TJ’s 21 seasoning salute.

Then it was off to dreamland!Β When I woke up just before 3pm, (can I get a hell yeah for almost 8 hours of drug-free sleep?!) I decided to get back to get back to my old ACV drinking days…

ACV DrinkA big mug of hot water mixed with apple cider vinegar, juice from 1/2 a lemon, and a dash of cinnamon!

After torturing myself with the foam roller and then getting in a pretty fantastic workout at the gym, I came home and whipped up some grub around 5pm…

Grilled Portobello + Bok Choy + Zucchini + BeetsLeftover roasted beets (even sweeter when they’re cold), steamed bok choy and zucchini, and, the STAR of the show, a grilled portobello mushroom topped with sautΓ©ed onions on an everything bagel thin with this AMAZING Greek yogurt garlic & herb cheese spread…which I now want to spread on every surface including my face! πŸ˜‰

I then showered up, threw on my fuzzy robe and got cozy in bed for some blog reading.Β Thinking I would go to bed early like I’ve been doing on Thursday nights, when I got hungry again around 9pm, I didn’t really want to “make” anything to eat so I went with my trusted standby…

PB&J Quest Bar

Yep, second Quest bar in one day…judge me all you want, but it was EXACTLY what I was craving. Hit the spot and hit it good, especially since I had it with a big mug of COOKIES!

Sugar Cookie Tea

I forgot how much I love this stuff until I dug this out of the stash I bought last year!

After that, I flipped off the light andΒ it was off to dreamland!Β was up again after 45 minutes of tossing and turning in bed! Thanks to being hyperaware that I was on call that night, I just couldn’t seem to quiet my mind. So the light went BACK on, and I broke out a book I’ve been meaning to read for a while. And then, between the hours of 11pm and 2am (?!), I did some snacking…

Mini Pops + Apple + CheeseAnd as always, the mini pops got the best of me! I just can’t seem to open a bag of those little devils without finishing them…I also had a Babybel cheese to go along with my baby-sized Gala apple.

And then, at 3am…I FINALLY went to sleep!

  1. I love babybel cheese we don’t have the same variety that you have of them
    there though only original flavour.. It’s still good and I still maybe put the red wax on my nose like I did as a kid…no judgement!!

    I tried my first quest bar the other day cookie dough. I think I may need to try it heated? It was ok but not as amazing as I had expected it to be.

    Best meal was the dinner I had with mama sprouts and my sister we went to a vegetarian restaurant and I had this amazing tempeh satay with rice and veggies and of course red wine too πŸ˜‰

      I find that certain flavors are sort of inconsistent when it comes to Quest bars…I had a cookie dough one a few months ago that had maybe four chocolate pieces in it, but then the one I had the other day had so many that I could barely bite into it without it falling apart! But I will say that the cookie dough is probably the best when you bake it in the oven…definitely try it before giving up! The chocolate gets all melty, crunchy on the outside but chewy on the inside! πŸ˜€

      Haha! I’m laughing at the thought of you as a Babybel clown! We never had them growing up so I missed out on that. Hmm, might have to get some Instagram-ic evidence that I’m still a kid at heart! πŸ˜‰

  2. Haha I don’t know how you handle that schedule! I’m finally in a good sleep routine, and I feel spoiled! Those eats all look delicious! I still haven’t gotten hooked on Quest bars. (I’ve had one in my desk for months and it just never sounds good!) I’ve heard they’re good warmed up though so maybe I’ll try that!

      Honestly, I don’t know how I handle it sometimes myself! I’ve learned to just roll with the punches though…it’s much harder if I fight my inner zombie! πŸ˜‰

      What Quest flavors have you tried? I swear they reformulated some of them because a few of the ones I used to hate are now my favorites! And yes, most all of them are even better warmed up!

  3. My laziness reached epic proportions for dinner yesterday. I had a bowl of spaghetti with coconut oil and salt. I think I just made every food blogger cringe. Actually I do that a lot! Hence why I can never link up with WIAW!

    Popcorn is definitely my fav late night snackage. Lime and chili for savory or coconut oil and cinnamon for sweet. And just a ton of salt. I like salt okay? OKAY? remind me I said this when I have super high blood pressure in 10 years.

    Also I don’t know how you manage your schedule but damnnn girl I’m impressed!

      Ok, so that’s a new one on me…but you know I’m never one to knock until I’ve tried! πŸ˜‰ And you could TOO link up with WIAW even with that! Honestly, I like to see posts from bloggers that aren’t planned…I used to always have an idea of what I was going to eat for my meals the day I knew I’d be taking pics for it, but I never really know what I want/what I’ll feel like making so I’m just gonna wing it from now on! Ohhh yeah, total wild child! πŸ˜‰

      My inner zombie is taking a bow right now…as the long lost morning person inside of me shakes a fist in the air! PS, it’s 3am right now. Gah!

    I admire you lady with that schedule! I would look like sh…. err, really pale and drained if I had to work at night. Which I actually did when I was a Flight Attendant and yeah – a witch was a joke compared to me.
    Aside from that, I love questbars too, though some of them tend to harden up if I hoard them for too long. So I always need to warm them up if I don’t want to lose my teeth, but instead of that then I burn it and I have nothing. Haha.
    Other snacks I love are dates with almond butter and yogurt, or currently…guess what….KABOCHA!!

      Thanks girlie! I try my best…some days are definitely better than others that’s for sure. I can only imagine how crazy it must’ve been when you were a flight attendant what with the changing time zones and everything! Wow!

      And yeah, I’ve learned to shop for Quest bars by feel. I have to give them the “Heather squish test”…if they don’t give when I squeeze, back on the shelf they go!

      PS, I just had a little snack of kabocha and thought of you!

  5. I haven’t seen that flavor of baby bell cheese but I’m sure it’s good. I used gouda this weekend on grilled cheese and loved the taste and way it melted. Your dinner looks great!

      It’s not bad. When it comes to gouda cheese, I prefer mine to be aged so it has a sharper flavor, but these are really good to have on hand for a quick snack. I really want to try the white cheddar ones next!

  6. Oh goodness, night shift eats. I think that was the most annoying thing about working overnights when I was a counselor! Trying to figure out my meals, having ‘breakfast’ at 5 pm…bah. Kudos to you for figuring it out!

      Thanks girlie! Yeah, I’ve learned to just ditch the whole meal times/labels thing since I can crave just about anything at any time of day…I mean, I woke up and one day and wanted a burger for Pete’s sake! Haha!

      Omg, it was probably one of the best throw-together meals I’ve ever had! And this was my first time trying burrata. I wasn’t really sure what to do with it so I just threw it in some soup and then this…but I really liked it. I’ll have to find some recipes and try it again sometime for sure!

    Holy smokes girl!! I applaud you for eating at that time in the morning. I would’ve just laid there and suffered through my rumbling belly. I must say though that its pretty inspiring that even though you’ve got an INSANE schedule, you still managed to get in solid eats packed with nutrition. I can barely do that, and I work part time at an office and part time at home! bahahaha

      Oh no, no! I don’t have it in me to go to bed hungry…at all! I’d have to be dang near comatose for that to happen! Haha!

  9. Wow. Agreed with everyone else. That schedule is something else. It’s one thing if you have the night shift every night but jumping back and forth? Wow. Good job Hun! Also have you tried amber glasses? They block out blue light, which helps form melatonin to help you sleep. I bought some from Amazon for about $10 and they work wonders. Put them on about an hour and a half before bed time. They might be great for that time between 3pm and when you go back to bed.

      Oh wow, thank you so much Rachel! I hadn’t heard of those, but will definitely be checking out Amazon soon! That would probably help me out a lot when I’m driving home from work too as the sun is coming up then! πŸ˜€

      Aww, thanks Sloane! It can get the best of me at times, but I try to roll with the punches as best I can. It definitely beats having to work with all the drama of the day shift that’s for sure! Ha!

      Yeah, I only recently tried having two in one day. I never did before because I was worried about having all that fiber (since my stomach has been sensitive to excess in the past). Honestly, I don’t have half as many digestive issues as I did before, but I have no idea what I’ve changed. So weird!

  12. I love your burrata habit. It’s one of my favorite ways to eat cheese, but I can’t ever find it at the store. My favorite meal yesterday? I went to my parents’ house for Mama Snacks’ birthday, and my dad made mediterranean chicken, tomato and chickpea stew over rice, and tzatziki sauce. AMAZING.

      Yeah, I totally lucked up and found it at the farmers’ market in Cleveland last month…and then I lucked up again that it didn’t go bad on me when I came home and forgot about it! lol

      And seriously? You had me at Mediterranean chicken…but good God, you could put tzatziki on a stick and I’d eat it! Yum!

  13. Woo! Not gonna lie — it’s so great to see more bloggers jumping on the full-day-of-eats train. It brings me back to the good old days when WIAW was still in its baby stages πŸ˜€

    And girl… I have to give you HUGE props for being able to manage that ind of schedule so well. I’ve talked to a handful of people who work the graveyard shift and it does NOT sound easy at all. As for my favourite late night snack, it’s usually a bowl of cereal and yogurt or some other sweet breakfast-ish combo like that. Why limit the best meal of the day to the morning alone πŸ˜›

      And thanks, girlie! It’s definitely not easy, but some days go better than others. I’d still rather take the ups and downs of the sleep schedule though than have to go back to the drama of the day shift though…no.thank.you!

  14. Can you tell me how you made the switch to that schedule and still manage not to go absolutely crazy? And keep up regular blogging? I doubt I’d be nice to be around if I had working hours like that so major kudos to you.
    Once more: give me that plate of savoury delcΓ­ciousness minus the egg :)! Oh and I’ll take a plate of cookies, errr … a package of that tea in the same delivery. Yes, I asked the one store regularly selling about eight flavours of Celestial Seasonings tea – none of which are paticularly exciting – if they could order the seasonal ones. I don’t need to tell you they gave me the looks and declined that, right? I.want.sugar cookie [tea]! Gaah, not fair.
    My go-to late night snack are my almond caramel bars and apples with almond butter. Chocolate needs to be included in the last meal of the day – okay, on a regular schedule – for sweeeeet dreams. [And now I’ve got Beyonce’s song stuck in my head …]

    • I LOVE that tea (as well as the Gingerbread Spice), and I’m so happy it’s easily found currently. For me, anyway. (At the local Wal-Mart.) I even managed to find a box mid-summer, and snatched it up immediately to add to my, ah, approximately 20 other boxes of tea….

      Hahaha! To tell you the truth, if I didn’t have time while I was at work to blog, I’d have to give it up all together because most days, there is barely enough time to wake up and get to the gym for a workout before having to get ready for work! That’s why I had such a hard time a couple week’s ago (Fallout Friday) because the only “down time” I can get during the week is WHILE I’m on the clock…and that’s not always guaranteed.

      Oh my gosh, I remember having to track down this tea…it took me MONTHS to find a store that carried it! My town is seriously like a black hole for foodies…they never have anything!

    Dear Laaawwdd your meals are making me salivate!!! I have started drinking half caff coffee anytime after 12-3 these days simply because I WILL BE UP ALL night if I don’t!! I never noticed how sensitive I was to the caffeine until I started working at Starbucks and had coffee more than just once a day.

      I swear I used to be able to drink a cup and go straight to bed, but just over a year ago, I stopped drinking it and started taking a preworkout amino mix before my morning workouts and then after a couple of months of that, I got SO sensitive! If I have just ONE cup of full caff coffee, I feel like I’m coming out of my skin! I guess it’s a good thing I’m not drinking as much caffeine now but I get so nervous when I’m out at restaurants. I’m like, “Are you SURE this is decaf?!” Lol

    I’ve never seen cookie flavored tea before. Probably just another product we don’t have in Canada. I’ll be in Florida this weekend so hopefully I’ll be able to find it there. Must add it to my list of all thing yummy things I can’t get at home.

  20. Egg yolks and pumpkin puree are a match made in heaven….although I think sweet potato might be even better…

    I was thisclose to breaking out the Sugar Cookie tea the other night, but I thought I’d try to wait a little longer. Not that I need to worry, considering I have about 12 boxes.

  22. I don’t know how you handle that schedule so well! I’d be falling asleep during my shifts. πŸ˜› My body is so used to sleeping between 10:30/11 and 6-7 that it literally would not know what to do if I tried to make it do otherwise. πŸ˜›

    My favourite late night snack is handfuls of dried fruit (especially dates!), almonds, cereal etc.

      It definitely took some training…especially since I was a dedicated “morning person” for years before I switched shifts! Honestly though, sleepiness is never a problem. I just always seem to be AWAKE! I’ve made a point to EARN my zombie status that’s for sure! Lol

  25. I love the yolkporn, lol! I’ve been all about eating eggs over easy lately and putting them on leftover mashed cauliflower or whatever veggies we have on hand. I love adding a bit of hot sauce to top it off, too. It is just too good!

      Haha! It took me a while to jump on the bandwagon too, but after a couple of duds, I was addicted…and pulled the man-friend in with me! I swear neither one of us can go more than a few days without one now! Haha!

    Yesterday I ate OOIAJ 2x. Once for breakfast w/ Honey PB, and one after dinner for “dessert”(?). That’s 3 OOIAJs in 2 days. My fault for pre-making them, I couldn’t resist.

    That cheese spread sounds borderline illegal! Favourite meal from yesterday- I made 1kg of beef mince which I ate with potatoes…random but worked well! Favourite last night snack is definitely a quest bar and with a celestial seasonings tea (instagram proof! ha)- but the bedtime ones (which are false advertising- they do nothing for sleep!)

      Ugh, sleepy teas are hit or miss for me…I’ve had a couple of chamomiles that have knocked me out in 30 minutes and then other blends that do absolutely nothing! Definitely frustrating when you’re oh I don’t know, up at almost 6am responding to comments from a recent Big Man Bomb when you originally went to bed at 1am! Grrr!

      And I’m raising my glass to clink to that cheers for sure, especially since that magical ability seemed to up and leave me yesterday…I was up till 6:30AM!! 😯 The burrata was pretty good. I tried a quesadilla with it, but it made a huge mess once it started to melt and the cream spread out. I wasn’t really sure what to do with it after that, so I just threw it in this and in some soups. I still need to try my little mustard cheese, but since I just cracked into a huge log of goat cheese for your DELICIOUS grilled cheese today (which I’m going to make again tomorrow by the way), I’m trying to stay focussed. One cheese at a time, Heather! πŸ˜‰
