Thursday…thinking…out…loud…annnnnd…GO!

I’ve had THIS song stuck in my head for the last few days. I’m not exactly complaining, baaaa-ut, when you’re at work and keep wanting to belt out “fuck you anyway”…yeah, that kinda makes things difficult! 😉

I rediscovered my love for baked cookie dough Quest bars…with their crispy, crunchy outsides and pillowy soft and doughy insides. I swear it’s like absolute heaven! Then I found a way to make it even better…

Cookie Dough Quest Bar with Coconut Butter

My GAAAAAWD you guys!
This is like icing on the cake COOKIE! Do this…do this NOW!

Turn oven on to 35o°F (176°C), place bar on a cookie sheet, pop it in oven, cook until the bar starts to turn golden brown and then flip the oven to broil for just a bit to get it niiiiiiice and crispy! Use a spatula and a good swift scoop to get it off the pan, flip it over (because the bottom is a flatter surface), and slather that baby with melted coconut butter! BUT before you take a bite, you may want to call your mom, because your gonna DIE! 😉

On second thought, just put coconut butter on everything! It’s official, I’ve been cheating on peanut butter! But seriously…how is that stuff even LEGAL?! And why do I always forget how frickin good it is?!

Remember how this Tuesday was supposed to get up to 68°F (20°C)? Well how about it was actually EIGHTY DEGREES (27°C)!!! I woke up around 4pm that day and after opening the front door and seeing how great it felt outside, me and Elvira were on the road and headed to the park (with the sunroof WIIIIIIIDE open) in a matter of minutes!

And yesterday it was forty degrees COLDER! Ha! <- Sometimes you just have to laugh to keep from crying! Oh and guess what?! I think I’m pretty sure I KNOW (yet I’m still in denial) that my heater is BROKEN! I came home this morning and it was 52°F (11°C) in the house even though the heat is set to 72°F (22°C)!?! I fiddled with it for a minute but got frustrated and decided to just crank up the electric blanket and faceplant under the covers. 🙁

Wish me (and my wallet) luck when I have to call the repairman today!

Mid Nite Sleep Aide

And wish me luck on my appointment with the therapist tomorrow because sleep this week has been oh I’d say on the average of SUCKINGMYFACEOFF! <- Yes, that’s numerical value! And also yes, I have officially taken every sleep aide that the pharmacy sells. I think this one works…sometimes…but no grogginess? HA, riiiiight!

Emergen-CI’m back to guzzling my Barbie juice too! Seems like there is a direct correlation with Heather’s sleep and Heather feeling like death eating a cracker. Mmm, crackers!

Am I the only one out there who craves the HELL out of salty crunchy stuff when I’m feeling under the weather? Because I seriously been putting away some chips, crackers, and pretzels like it’s ma J-O-B!

Speaking of jobs, I know I complain a lot about my sleep (or lack thereof), but I just want to say that I really like my job, the shift, and the people in the other departments that I work alongside. A position recently became available for the day shift, but after giving it a lot of thought, I decided not to put in for it. I know you’re thinking I must be crazy, but I just have to keep in mind the reason I chose this shift in the beginning.

Plus, it allows me to spend long weekends with my blends! Which is exactly what I will be doing THIS weekend when Melissa comes to visit!! Omg, I’m so freaking excited! And now I have to go because I’ve got a repairman to call, a house to clean, and a list of adventurous activities to write out! 😀

  1. We’re not even going to talk about my latest addiction to coconut butter. Okay, we can spend a -little- bit of time on the subject. That stuff is seriously like sex in a jar, though. Omg. Have you tried it stuff into dates? Or on an english muffin with honey? Or in smoothies?!?! It’s like drinking cake batter, I swear.

    Also, I do think you’re crazy for not taking the day shift! I have a close friend that works the night shift, and omigosh… I couldn’t even imagine 😯

      Sex in a jar…omg, YES!! I have tried it on dates, but I’m making a note now to try it on a muffin and in a smoothie…you had me at cake batter! 😉

      Honestly, once you get used to the sleep schedule, nights aren’t so bad. The fact that I prefer to switch my sleeping to “normal” on my days off is where I shoot myself in the foot! But I just can’t imagine going all weekend and sleeping all the daylight away…especially now that the days are getting longer!

    I cannot find coconut butter anywhere! I am missing out. Hopefully I can track some down soon!
    The weather has been staying on the warmer side lately. I’m not complaining.. I’m just embracing my gnarly tan lines. 😉

    My sissy came back from Texas with me, and shes never tried coconut butter, so you can BET Im shoving a spoonful down her throat as soon as she makes it to my house this weekend. I went on and on about it while we were in Texas, so Im hoping it lives up to the hype for her!

As much of a pain in the ass a night shift, I can understand preferring it to a day shift – it’s always a lot less hectic! once you get used to it, it’s not too bad :-p Although I remember when I went on vacation to Mexico and got home at 6 am, and I was going into work for midnight that night…ummm….ya. I may or may not have passed out on a couch for an hour or two….
    And I’m trying desperately to rein in my coconut butter consumption…and failing miserably. So good.

  6. How do you keep up with that crazy sleep/work schedule girl? I couldn’t do it! As for coconut butter yes, it is amazing! I love it on sweet potatoes and spoons. Yep, I eat it out of the jar with a spoon.

  13. I haven’t had coconut butter in AGES. I miss it so much! It costs $25 for a small jar here in the Rockies.. in case you’re wondering what life in Canada is like.
    I definitely want to try a baked Quest bar, but if I’m being honest, I’m way too lazy to turn the oven on JUST for that. Make one for me???

  14. 27 degrees Celsius on Tuesday!?!? So jealous! It was 14 degrees Celsius here and I thought that was good haha. Also I love that you include temperatures in Celsius for all of us clueless Canadians. 😉

    I always forget how good coconut butter is too! I do prefer almond butter in my oatmeal, but coconut butter with dates/on baked goods/with sweet potatoes is the bomb!

      Sweet potatoes!! You know, I don’t think I’ve ever had coconut butter on a sweet potato…this needs to change very very soon!

      And heck, I’m a clueless American when I’m reading international blogs…I always have to Google temperatures and money exchanges! Ha! I figure this is just easier for everybody! 🙂

  15. My mother thinks that barbie juice is like the answer to all life’s niggles. Have a sniffle? Emergen-C. Have a test coming up? Emergen-C. I literally brought back 20 boxes from America. That was where my wholefoods spending occurred!

    And you’ve reminded me to bake up a quest bar tomorrow. Coconut butter on top of a coconut cashew one hmmmmm 😉
