Confessions of a Pancake Queen

Forgive me, Spatula, for I have sinned…

Spatula

It has been TEN DAYS since my last pancake flip.

But, thanks to perfectionism, late night test-batches and a resulting overflowing freezer, only THIRTY SIX HOURS since my last indulgence… 😀

Coconut Cauliflower PancakesCoconut Cauliflower Pancakes topped with “Healthy” Chocolate Sauce, pom seeds, and shredded coconut in the “dawn” of the ever faithful lightbox!

Since I can’t exactly get in the kitchen and whip up a breakfast worth celebrating on Pancake Sunday (damn crutches!), I thought I’d borrow Sarah’s theme of “confessional Sundays” and share a few things I’ve learned over the years in all my
pancake flippin’!

I figure I’d do this in installments since there are quite a few bases to cover what with the utensils, basic ingredients, specialty ingredients, add-ins, and toppings…
Sound good to you? Good, I thought so! 😉

Ok, let’s talk Pancakes UTENSILS!

Pancake Making - UtensilsThe basic (and MOST important) items you need to whip up a batch of delicious pancakes in your own castle kitchen…

Pancake Making Must Haves - Griddle

A LARGE non-stick skillet (or griddle).

I absolutely LOVE my pancake griddle! It is definitely one of my most used kitchen appliances. You don’t have to pay big money for some fancy schmancy one either…mine cost around $20 and I’ve been using it for almost a year now without a single problem.

Before I was lucky enough to own one of these babies (and because I am one of the most IMPATIENT people I know, especially when it comes to food), I would use three different skillets to cook 3-4 pancakes. That way they would all be done at the same time and I wouldn’t have to wait! Lol

The one trick with a skillet is to make sure you leave yourself enough “maneuvering” room between the pancakes so that when you go to flip them, you don’t end up flipping one onto another…believe me, I speak from PLENTY of experience!

Pancake Must Haves - Oil:Non-Stick SprayNon-stick cooking spray (or coconut oil)

To get away from relying on the cans of stuff with “mystery” propellants, I took a whole TEN dollar bill and invested in a Misto! You fill it half full of your favorite oil (I use extra virgin olive oil), give it a few pumps, and you’re good to go spray! 😀

You can also use melted coconut oil. Just dip a folded up paper towel into the oil and quickly/lightly wipe down the surface of your skillet (or griddle) before getting started.

Just DON’T forget this step or your skillet will be eating your pancakes…NOT YOU!

Pancake Making Must-Haves - UtensilsA sturdy spatula/turner, mixing spoon, rubber spatula, and wire whisk

Your spatula should be large enough to hold the entire size of your pancake and should be comfortable to work with. I actually got a new spatula this Christmas and was super excited about it until I realized it was way too big and ended up getting in my way more than anything…bummer, I know. 🙁

Any ol’ mixing spoon will do. I prefer a medium-sized plastic one because it’s lightweight and has a good handle for griping.

The rubber spatula is not required, but it is definitely RECOMMENDED. After stirring my batter and spooning it onto my GREASED griddle, I like to run the rubber spatula around the sides of my bowl to make sure I get every last drop of yummy pancake batter deliciousness.

Pancake Taste

And well, since this IS a confessional post, I’ll admit, sometimes that yummy pancake batter deliciousness goes straight into my mouth instead of in the pan…

Hey, gotta check for poison! 😉

The whisk is double-duty instrument. I use it to mix my dry ingredients (to break up lumps in the flour and also to ensure I don’t end up with clumps of baking powder, spices in the middle of my cakes) and I also use it (in the case of NON-vegan recipes) to whip my egg whites before adding them to the batter.

Bowl

And last but not least…a good medium-sized mixing bowl.

Ya know, to hold all that yummy pancake batter deliciousness! Preferably, you want one WITHOUT bread dough in it though…sue me, it’s the only picture I had!

I hope you all found these little tips & tricks helpful! More to come from my pancake-makin’ repertoire in the coming weeks! Hey, before long, I’ll have ALL of you turned into my little squires! 😉

Let me know if you have any specific questions and I’ll be sure to include them in the upcoming posts!

Springy Dippin’

Hey there my little doodle bugs!

Did ya miss me yesterday?

I WISH I could say that I took the day and basked in the wonderful spring weather that Tennessee has been graced with this week, but sadly, my gimpy fin prevented such things…so instead, I made the most out of my time indoors…

With some puzzle piecin’ (fittin’?…puttin’ together’n?), Downton Abbey watchin’, and
oh yeah, a little skinny SPRINGY dippin’! 😉

Springy Dipping Pea Dip

Hey, if I can’t go TO the spring, then the Spring is coming to ME!

Thank you Tori for being my babysitter, sous chef, AND photography assistant…and for maintaining crowd control after the ants showed up and tried to start trouble! 😉

Strange But Good - Spring

So who’s ready for a little #strangebutgood spring picnic? Just be sure to make a plate and take it over to Laura at Sprint 2 the Table when you get ready to leave! 😉

Now gather up your “crunchables”…

Crunchables

Shoo away the ladybugs (sheesh, always gotta have a piece of everything…
greedy little girls!),

Sweet Pea Dip & Crunchables

And get ta dippin’!*
*Because we ALL know that spoon’s just there for looks! 😉

Wait, what exactly are we dippin’ into?

Follow me for a moment, while we trace the convoluted and twisted, inner weirdness of Heather’s mind (if you get scared just grab a “love” bug!)…

I wanted a snack.
I wanted something crunchy.
As always, I wanted to take that crunchy and DIP it into something creamy.
So I grabbed my new favorite CRACKers and a jar of almond butter.
Then, all of a sudden, I really wanted some bananas and…
Well, I’d be lying if I didn’t have
the WIAW “going green” theme on my mind.

So THIS is what happened…

Spring Pea Dip

The dip is REALLY like none other…and I’m not just saying that because I made it…OR because it has peas AND bananas in it! 😉

Actually, you can’t even taste the peas…

*Or the ants! 😉

What’s the last thing you went “dippin'” in?

Has spring sprung where you live?

Green Eats & Hippopotamuses?

Hey hey hey!

I want to thank you all SO much for the sweet comments on Monday’s post and I’m SO glad you guys didn’t judge me for bringing out the hoes!

Ahh, pain meds…such a FUN ingredient in the recipe of recovery!

So, it’s been slow, but I can tell I’ve made some definite progress over the last couple of days. I’m still not able to bear weight on my leg (thus causing me to mutter obscenities every time I have to reach for those *&^% super helpful crutches), and I get a little dizzy if I’m up for more than a few minutes at a time, but my digestive system is finally “moving” along (um, TMI?), my appetite is back, and, as of yesterday I was finally allowed welcomed back the world of the showered and shampooed!

Wait, what was that about my ability to type run on sentences appetite?

Oh yeah, it’s BACK!

WIAW GOES GREEN

And JUST in time to celebrate another GREEN-filled Wednesday with Jenn and all my other fellow foodies! After checking out my eats, be sure to mosey on over to Peas & Crayons to see how everyone else is greening it up this month!

Now you won’t see any of my usual Snacky Kathy-ness going on here because well, honestly, for the last two days, I’ve only been awake long enough to pee, eat, and mumble something (coherent or not) to my babysitter of the day (my family is taking shifts) before it’s off to La La Land with my two hoes! 😉

But as interesting as THOSE escapades sound, I’m willing to bet you came here today to see some food! So, without further hoe talk ado, let’s see
some GREEN eats!

Breakfast:

PB & Blueberry Smoothie

Luckily, I’ve been able to manage my own meals as long as I keep them simple. While I don’t mind having some help around the house, there are few out there who can be trusted with the consistency of a GOOD smoothie. So while I DID enlist the hand of my babysitter/kitchen assistant in the production of one of the best GREEN smoothies I’ve made in a while, I was sure to handle all the controls! 😉

And lucky for YOU, I wasn’t flying high on pain meds at the time, so I actually remember what all went into the blender!

Two words: PB&J Sandwich!

Wait, is that two words or would it be five due to abbreviation…yeah, NOW I’m on pain meds…please excuse any typos! 😉

Recipe at the bottom of this hippopotamous post!

Lunch:

Egg SandwichEgg whites, sprouts, and my next #strangebutgood concoction sandwiched between two slices of perfectly toasted wrinkly cinnamon raisin English muffin.

Recipe coming Friday! 🙂

Dinner:

Sweet Potato Soup

Sweet & Spicy Sweet Potato Soup with spinach and cilantro, a sprinkle of nutritional yeast, and a little crunchy addition provided by these beauties…

Apple Crackers

Sweet apple flavor, crisp-crunchy texture, and absolutely PERFECT with the warm, spiciness of the soup!

Dessert:

Key Lime Chobani Flip

Now I’m not usually much of a dessert person, and I’m REALLY not much on Key lime, but, when I got a craving for something a little sweet the other night, I just couldn’t resist throwing in another GREEN eat so I thought I’d try another of the
Flip flavors that Chobani sent me last week…

Verdict: HOLY YUM!!!

The graham cracker and white chocolate chip topping was ahhhh-mazing…and surprisingly, not too sweet at all! Hmm, I think I’m seeing some pancake-spiration coming from this! 😀

But for now, how about some PB&J?
