Seriously guys, I don’t know which was better, the actual ‘cakes or the fusion of flavors from the yogurt, cocoa, and peanut butter sauces! And with the crunch of peanuts and cacao nibs? Omg, I was in HEAVEN…for the whole 5 minutes these were on my plate! 😉

Absolute, melt-in-your-mouth PUMPKIN perfection!

Peanut Butter Pumpkin Pancakes (GF)

Prep Time: 5 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/4 cup oat flour (ground from gluten-free oats)
  • 3 Tablespoons peanut flour
  • 1 Tablespoon coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/4 teaspoon cinnamon
  • 1 large egg white
  • 2 Tablespoons vanilla Greek yogurt*
  • 1/4 cup water (or milk)
  • 1/2 teaspoon maple extract (or vanilla)
  • 1/4 cup pumpkin puree
  • Toppings: Greek yogurt, healthy chocolate sauce, peanut butter sauce**, crushed peanuts, and cacao nibs

*Or omit and use 1/3 cup of milk (dairy or non-dairy) instead.
**Whisk together peanut butter with a little water (or milk) for a creamy sauce.

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine flours, baking powder, and cinnamon and stir with a whisk to break up any lumps.
3. In a separate bowl, whisk egg white until frothy.
4. To the egg white, add yogurt, water (or milk), extract, and pumpkin puree and stir well.
5. Add wet ingredients to dry ingredients and stir until flour is incorporated.
6. Spoon batter onto skillet, forming three small to medium-sized pancakes.
7. Cook for 5-7 minutes before flipping and allowing to cook an addition 3-4 minutes.
8. Transfer to a plate and add desired toppings.

Pumpkin Palooza

So after dinner the other night, the man-friend and I stopped in at Trader Joe’s and I got the opportunity to witness the mass pumpkin exodus…

And yes, I did arrange those items for my picture!

BEFORE perusing the wine selection…something that always excites me when I’m in a city that allows liquor sales in a grocery store…I moseyed over to the sample table to see what I could get…because my priorities are in order I’m always scoping out the free food
I was curious to see what they had. 😉

As I walked around the store eating a delicious piece of  pumpkin bread but sipping some  pumpkin spice coffee that tasted like ass, I spotted pumpkin ice cream, pumpkin crackers, pumpkin oatmeal, pumpkin tea, pumpkin soup…hell, at this point, I wouldn’t have been surprised if a giant pumpkin burst through the side wall like the frickin’ Kool-Aid Man! But seriously, I couldn’t help but laugh…especially since after my last pumpkin spice seduction ended in massive disappointment. Yeah, remember these guys?

So as I walked out of Trader Joe’s empty handed, I decided something…I’m  over the whole pumpkin spice ALL the things thing. Sorry I’m not sorry, but I’m just tired of being disappointed. So from now on, I’m just gonna stick with the stuff I know…the stuff that’s homemade, creamy, NOT burn-your-tongue spicy, satisfying, and perhaps, since it’s Friday, a little strange? 😉

Pumpkin “Tofana” Porridge

Prep Time: 2-3 minutes

Cook Time: 45 seconds (optional)

Ingredients (Serves 1)

  • 1/2 package silken tofu (or 1 serving extra-firm)
  • 1/2 medium-sized banana
  • 1/2 teaspoon maple extract (or vanilla)
  • 1/4 cup pumpkin puree’
  • 1/4-1/2 teaspoon pumpkin pie spice

Instructions

1. Combine all ingredients in a bowl.
2. Mash with a fork until mixture reaches desired consistency.
3. Serve cold or microwave on high for 45 seconds if you prefer.
4. Top with fresh fruit, nuts, nut butter, and/or granola.

Pumpkin Tofana Porridge

After whipping up a regular AND a chocolate version of the original last week, it only seemed natural to get in on the season’s festivities and create a pumpkin version…and ok, so mayyyyybe it was the day before I left for Cleveland and still had half a HUGE can of pumpkin to use up…details, shhmetails!

If you’re thinking it looks a bit chunkier thicker than last week, you’d be right. I used extra-firm tofu in this bowl since that’s just what I happened to have on hand, but if you have silken, you can use that instead for a creamier consistency…bonus points if it’s over six months expired! 😉

If you’ve been around for a while, you know of my battles with Willy the Wafflemaker. If you’re new to these parts, let me just say the he and I have a very give and take relationship…as in I give everything I’ve got and in return, he takes all my confidence.

Yeah, you know that little bit of anxiety all us foodies get when cracking open an avocado…just praaaaaaying that we got a good one? Well, I get that same feeling whenever I lift the lid of my waffle iron. So obviously, when Kodiak Cakes, a company that makes all-natural breakfast and dessert mixes, contacted me asking about doing a review on their flapjack and waffle mix, I totally FLIPPED! 😉

I actually tried their whole wheat mix for the first time a few years ago and fell in love immediately with one of my favorite recipes, Easy Protein Pancakes! I still can’t believe a just-add-water mix can taste like it was made from scratch! Since I still wasn’t back to my pancake groove when these babies arrived, I decided it was time to muster up some courage and whip up a waffle! And much to my wonderment, it went well it came out FANTASTICALLY! 😉

I know, I know…I was just singing pumpkin praises yesterday, but when you still have half a pineapple to eat just days before you leave for vacation, it’s perfectly acceptable to slide back into a summer for a moment…plus, this is just my way of celebrating a certain someone who will be honeymooning at the beach this time next week! Congratulations, Melissa! I made you a waffle…but I eated it! 😉

Pina Colada Waffle

Prep Time: 2-3 minutes

Cook Time: 5-8 minutes

Ingredients (Serves 1)

  • 1/3 cup Kodiak Cake Flapjack & Waffle mix
  • 1/2-1 scoop vanilla protein powder (optional)
  • 1/3 cup coconut milk (plus 1-2 Tablespoons if using protein powder)
  • 1/2 teaspoon coconut extract
  • 1/4 teaspoon rum extract (optional)
  • Toppings: Coconut-flavored Greek yogurt, diced fresh pineapple, and dried coconut chips

Instructions

1. Plug in waffle iron and allow to come to temperature, coat with non-stick spray.
2. Combine all ingredients in a small bow and stir well.
3. Pour mix into waffle iron and cook according to manufacturer’s directions.
4. Transfer to a plate, add toppings, and be whisked off to your own tropical paradise…your cabana boy (or girl) will be with you shortly! 😉

I wasn’t feeling protein-powdery in particular (ha! bonus points for accidental alliterations…and AGAIN!) so I went without, but if your feeling perky, feel free to pack a little pump into your pina pa-waffle! 😉
