Carrot Cake Protein Pancakes (Gluten-Free)

Happy PANCAKE Sunday, lovelies!

I know, it’s been a few weeks since we’ve celebrated, but with so much going on this month, it’s been hard to find the time to make pancakes AND have photographic evidence of them. Maybe I should move to Alaska? You think the never-ending daylight would make up for the fact that it’s so damn cold all the time? Yeah, who am I kidding? I’m too thin-skinned for that!

Confession: Even though I made these back in SEPTEMBER, I decided I wasn’t going to share them until closer to spring.

Truth be told, I already have a carrot cake pancake recipe in the KMB archives, but I’ve been thinking about pimping pumping them up with a bit of protein for a while now. And well, since this little plate was practically licked clean less than 5 minutes after taking the pictures, I think it’s safe to say we have a winner!

Carrot Cake Protein Pancakes (GF)

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/4 cup buckwheat flour (ground from groats)
  • 1 Tablespoon coconut flour
  • 1/2 scoop vanilla whey protein (30g scoop)
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1 large egg white
  • 2 Tablespoons pineapple-flavored Greek yogurtΒ 
  • 1/3 cup water (or milk)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup grated carrots
  • Toppings: Pineapple-flavored Greek yogurt thinned with water, toasted walnuts, shredded coconut, and raisins

Instructions

1. Preheat non-stick skillet or griddle to medium-low heat and coat with cooking spray.
2. In a medium-sized bowl, combine all the dry ingredients, stir with a wire whisk to break up any lumps.
3. In a separate bowl, whisk egg white until frothy.
4. To egg white, add yogurt, water (or milk), and extract and stir well.
5. Add wet ingredients to dry ingredients and stir to combine.
6. Fold in grated carrot.
7. Allow batter to rest for at least 5 minutes.
8. Spoon batter onto skillet surface, forming 3 small-medium sized pancakes.
9. Cook for 6-7 minutes before flipping and cooking an additional 3-4 minutes on the other side.
10. Transfer to a plate and top with thinned yogurt, toasted walnuts, shredded coconut, and raisins.

  1. I actually just recently wrote on my gingerbread pancakes post about how I always recreate flavour combinations in different ways and I love that you do the same! These look ah-maze-ing!

    This weekend we spent Saturday being lazy and doing pretty much nothing (except an impromptu tea party with my favourite 3 y/o princess) and then Sunday (today) was spent at church, followed by an appointment to look at all of our photos from a studio photoshoot we did with our puppy last week! The photos were ridiculously cute and it was so hard to pick!

    I do adore carrot cake, but that’s mostly because Im a cream cheese frosting whore. Ssssshhhhh don’t tell anyone! πŸ˜‰
    And seriously I cant get over the fact that there are only 10 days till Christmas. What the heck?! Its almost 2014! This year has gone by so stinkin fast…I can remember dreading april because of having to give a maid of honor speech. That seems like forever ago now! lol

  12. I HAVE TO TELL YOU! I went to the store JUST to get buckwheat groats today! Seriously! And I didn’t find them. But I didn’t even read that you used them till just now! You and I are seriously on the same page. Oh, and did I mention that I made pancakes this morning…and carrot cake egg white oats yesterday? Gah! You and me!

    Amazing recipe! It’s Olivia of ice cream cake (work email shhh lol) and I just have to add that a great fruit cake is not gummy and I think you would love it!! Nigella Lawson has some truly marvellous ones (I know she’s going through some stuff at the moment!) – I would advise leaving out the peel (so getting peel free dried fruit ;)) that’s the part I always hate- and hell to the yes to lots of booze! Rum or Marsala is particularly delicious- I like the way your mind works beautiful lady! πŸ™‚ Also- cream cheese frosting is an interesting and delicious addition but it effects how long it keeps :)- but it makes it so good who really cares! Xo

    Oh my god these are swoon worthy!! We make carrot cake once a year for my dad’s birthday (the cream cheese laden, oil filled, super delicious kind) but I think I can justify making these on a more regular basis πŸ™‚
