You guys already know I’m a bit LOT strange…but I swear I’m not completely off my rocker with this one! Actually, this combination has been swimming around in my head for weeks now…ever since the lovelyย Davida announced she would be hostingย a green food linkup for St. Patrick’s Day. Hey, if that girl can post a dish featuring Brussels sprouts AND blueberries together, then I think my little smoothie deserves a second look…and put those eyebrows down, would ya?!

This smoothie has got it ALL! It’s got veggies…it’s got fruit…it’s got healthy fats and plant-based proteins…the only thing it hasn’t got? Booze…but hey, feel free to spike it if you’re feeling froggy? ๐Ÿ˜‰ Haha, get it? Frogs are…green? Ok, never mind. Moving ON! But seriously, it IS a holiday after all and who am I, a woman of Irish roots, to deny someone a little midday imbibing?ย As far as running into your boss at work later? Well…

So basically, this smoothie is the brain child of my Spring Pea Dip and my Vegan Beautifying Beet Smoothie…combining frozen peas with banana for a surprisingly sweet flavor and then adding tofu for extra protein and avocado to bump up the creaminess factor! So basically, this smoothie makes me…a genius!

Let’s face it, we Irish aren’t exactly known for our modesty! ๐Ÿ˜‰

Vegan Sweet Pea Smoothie

Ingredients (Serves 1)

  • 1/2 cup silken tofu
  • 1/2 cup frozen peas
  • 1 medium banana, frozen
  • 1/4-1/2 medium avocado
  • 1 handful fresh spinach
  • 3/4 almond milk
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon mint extract (or 4-5 fresh leaves)
  • 1/4 teaspoon grated fresh ginger (optional)
  • 6-8 drops NuNaturals liquid vanilla stevia*
  • 3-4 ice cubes (optional)

Instructions

Combine all ingredients in a blender and process until smooth.

  3. Umm, I had a green smoothie this morning, which may end up being the only green food I consume today considering that I’m supposed to hit the bars later this afternoon :-p might as well enjoy my last official St. Patrick’s Day as a student!

  4. Mint + peas = such a winning combination. I’ve never thought to have them cold, though! This is pretty genius. And the photos are so vibrant!

    I’m having very Irish food for dinner: veggies and potatoes boiled in a whole can of guinness and the gluten-free Irish soda bread I baked up yesterday, but nothing too green besides the cabbage. Might have to make this for lunch to get in the colorful spirit. But maybe as a soup, as it’s extremely cold here.

      Thanks, Sarah! To tell you the truth, I’m still a bit surprised it came out! Ha! Have you seen my “soupies” from last year? Basically a warm version of a smoothie using ricotta cheese! http://www.kissmybroccoliblog.com/2013/01/11/sippin-on-a-soupie/ I definitely recommend them for mornings when the thought of cold food makes your bones hurt! ๐Ÿ˜‰

  15. Ok peas in a smoothie? There’s something I never would have thought of, but I totally believe you that it works. I find that as long as you add banana, you can stick almost anything in a smoothie. ALMOST. ๐Ÿ˜‰

    Yum! This looks delicious, I’ve never thought to put peas and mint together in a smoothie. Do you ever add supplements? I started adding spirulina to my smoothies after reading this article on the different things you can add to green drinks.

  22. I’m happy to know that peas can make for a great smoothie ingredient! I was actually THIS close to trying that out the other day when I accidentally grabbed a bag of frozen peas from the freezer (thinking it was spinach). Now I’ll have to try it (for real!).
