My Marvelous Valentine

Hey guys!

Wow, so it seems I’m not the only pie fan out there! I’m so glad you all liked the look of yesterday’s Apple Pie Protein Pancakes! They are definitely one of my new favorites! Let me know if you give them a try, I’d love to hear what you think! 🙂

So, how was your Valentine’s Day weekend?

Like I mentioned on Friday, the man-friend and I were gonna head to Memphis for the weekend, but our plans changed at the last minute. No need to worry though, because the past few days were nothing short of MARVELOUS!

Be sure to head on over to Healthy Diva Eats and check out all the other MARVELOUS linkups! And seriously, don’t you just LOVE this new logo?

So it all started on Thursday night. I met up with the man-friend in Nashville and we enjoyed a nice Valentine’s Day dinner at a new-to-me restaurant called Mere Bulles. It was a quaint little place…a Charleston plantation house made into a restaurant during the Civil War days…with charming decor and we both thoroughly enjoyed our meals.

Sorry guys…no pictures, but for an appetizer, we ordered the Black Forrest ham wrapped asparagus with goat cheese fondue and for our entrees, we both went with steak. I ordered a Filet Mignon topped with horseradish cream served with garlicky mashed potatoes, parmesan creamed corn, and roasted asparagus while he went with the New York Strip with roasted parmesan potatoes and haricot verts.

After dinner, we took advantage of one of the “perks” of being
a frequent red boxer…

MovieWe scooted back to the house with our free rental, changed into PJ’s and spent the rest of the night on the couch…oh and FYI, the movie was fantastic…absolutely captivating!

And even though I would have been PERFECTLY fine had that been the full extent of our overly commercialized holiday evening, the man-friend had a bit more up his sleeve.

He walked into the next room, explaining how he was going to get me flowers, but wasn’t sure if I was a flower kind of gal or not, so instead, he told me he decided to go with the next best thing…

A DOZEN crisp and perfectly preserved…

DSC_0006KOMBUCHAS!!!

With plenty of my new-favorite flavor and a few others I’ve really been wanting to try!

I was seriously speechless you guys…like seriously…NO words!

But wait, there’s more…

He got me a basket! Isn’t it cute?

Oh but wait, there’s some stuff inside you’re probably curious to see…

Oh ma…holy cra…what tha…AHHHHHHH!

DSC_0022AHHHHHHHH!

*cracks open jar…dips finger in…licks finger…faints*

But wait…there’s MORE?!?

He tried to keep it a secret, but the poor thing sucks at lying…that night he told me that I had plans for in the morning…

Ahhhhhhh! <- that’s a sigh, not a scream! 😉

A full hour deep tissue WHOLE body massage at the local spa! Annnnnd?

Mimosa & Spa EatsWhile I waited for my masseuse, I sipped on my very FIRST mimosa and nibbled on some of the most amazing aged cheddar!

The rest of the weekend was spent doing a little of this…

Shopping & Movies

Big Lots and Marshall’s adventures (why yes, I DID find some new ginger chew flavors!…cue the intervention NOW!) and since the weather was cold and gloomy (hmm, maybe we should have picked up a couple of those onesies! ;)), more movie watching! First time seeing Pulp Fiction…yeah, that was a weird one, but I’m not surprised since it’s a Tarantino film…and Midnight in Paris was really cute…
well, that is when I wasn’t staring at Owen Wilson’s honker! Lol

And a whole lotta THIS…

Weekend Eats

Details on all of THAT coming Wednesday!

Until then, who wants a ginger chew?

I figure if I share, you guys won’t call the producers of Hoarders on me! 😉

What did YOU do for Valentine’s Day?

What’s the best surprise/gift you’ve received recently?

Apple Pie Protein Pancakes

There’s not much out there that can surpass the comfort
of a forkful of warm apple pie.

Apple Pie Protein Pancakes - 1

Unless of course it’s a forkful of warm apple pie for BREAKFAST!

And, if you hold the same opinion as I do, you’ll agree that the best apple pie comes with…

Apple Pie Protein Pancakes - 3

Mmmmm!

With the cold wintry weather in full force this week, I had no other choice but to look to some warm foods for comfort. These pancakes hit the spot like NO other, but it took a couple of tries to get it just right.

I started out basing it off the recipe for my beloved Ginger Pear Pancakes, but I made a few tweaks to make sure that these babies were extra tender, extra flaky, and extra MOIST (it had to be said) just like REAL apple pie…

Blueberry Mustard Flatbread

FLATBREAD!

Sorry, I couldn’t help myself…my internal radio runs free on Fridays!

And now, while you hum Little Richard’s tune for the rest of the day, you can daydream about this flatbread (which is not to be confused with a pizza…because I did that
LAST week…and because, well…obviously, this one isn’t round! 😉

Strange But Good S2TT

This week’s #strangebutgood recipe was inspired by one of my fellow weird foodies AND my favorite salad from last summer…

Blueberry Mustard SaladMixed greens, Lauren’s Beet Burger (I seriously need to make those again), cottage cheese, blueberries, annnnnnd…

MUSTARD!

But not just any mustard…

Horseradish Mustard Sauce

The sweet kind of, spicy kind of, BEST-FLIPPIN-STUFF-IN-THE-WORLD mustard!

Seriously you guys, if you ever spot this at my second home (TJ Maxx), do NOT pass Go, do NOT collect $200 hesitate…buy TWO…and then send one to me! 😉

Blueberry Mustard Flatbread 2

There’s just something about the tangy taste of mustard mixed with sweet, juicy berries. And while I know MOST of you are just gonna have to trust me on this, at least I know when it comes to mustard on pizza flatbread, Lauren’s got my back 😉

I’ve been a fan of combining different (and sometimes strange) flavors for a while now, but this one has GOT to be one of my favorites!

Along with satisfying my craving for sweet and savory (AND my longing for warmer weather and all the good things produce that comes with it), this also gave me a chance to try a new-to-me-product that the man-friend introduced me to last week…

Quorn Tenders

I was honestly surprised at how good these were AND how much the texture and taste reminded me of chicken! I would definitely consider buying these in the future. And no, I didn’t get paid to say that…the company doesn’t even know who I am!

Blueberry Mustard Flatbread 3

Of course, it would be just as good with some crumbled tempeh (or chicken for the meat-eaters out there) OR you could leave it out and just add more veggies…but PLEASE give peace bloobs and mustard a chance! 😉

Blueberry Mustard Flatbread 4C’mon…you know your curious!

Now head on over to Laura’s blog at Sprint 2 The Table and check out how everyone else is strang-ifying they’re eats this week! 😀

Anyone else been having mad crazy cravings for summer fruit lately?

What’s your favorite summer berry?
I love me some strawberries…especially when I get to pick them myself, but since I have to be careful when eating them, I’d rather just dive face-first into a chest bowl full of BLOOBS! 😉
