Now onto this title…

I’ve been doing the night shift thing for a while now. While I can’t really say that I’ve “mastered” the art of zombie-conversion, I CAN say that I finally have a sense of what my body wants and needs to survive night-walking.

For months I tried to fit myself into a certain schedule…sleep from THIS time to THIS time…eat at THAT time…only to stress out when I wasn’t still asleep at THIS time and I hungry hours before THAT time.

So I just stopped trying.

I started going with the flow of things and before I knew it, I had developed a few habits…habits that ended up helping me get to a point where I now sleep better, have more energy, and actually feel like I’m in control of my body…you know, instead of walking around brain-dead half the time!

Must I remind you of the cinnamon-garlic toast incident of 2011?

To show you what I mean, allow me to share a typical day in the life of a working zombie girl!

I usually wake up around 2-3pm and I immediately get up, throw on workout clothes and make my way to the gym (because if I don’t go as soon as I get up, it’s just not hap-nin’), but NOT before throwing back a morning cocktail…hey, it’s almost 5 o’clock! 😉

I swear by this stuff! Emergen-C boosts my immune system, puts pep in my step, and has just the right amount of sweetness/fizz to counteract the yuck-factor of apple cider vinegar (which I’m STILL claiming as my acne cure-all from God!)

After a good sweat sesh, it’s back home for some grub…which most of the time is of the no-cook/throw-stuff-in-a-bowl-and-call-it-a-meal variety since I’m about to chew my own arm off…

Note: lifting heavy makes you HUNGRY!

1 cup Greek yogurt + 1/2 cup pumpkin puree + 1 teaspoon maple extract + pumpkin pie spice and stevia to taste topped with granola and FIGS!

After that, I jump in the shower and then start getting me, myself, and my lunchbox ready for work.

And then I grab some tea for the ride!

Not a huge fan of the pumpkin spice flavor on its own, but throw in a bit of almond milk and it’s a LATTE better! 😉

Dinner is usually anywhere between 10 and 11pm, and while I love having leftovers from a weekend of meal-prepping, most days, I’m more than happy to dive into a
“clean out the fridge” type salad!

Monday’s winner: Spinach, peas, red onion, roasted beets, roasted pumpkin, cranberry-cinnamon goat cheese, and toasted pecans…

All drizzled with the last of my beloved roasted garlic & fig spread mixed with a little balsamic vinegar.

Around 1am, which is half-way through my shift, I typically have a big mug of tea to thaw me out from the sub-arctic hospital temps AND help keep my energy levels up.

Which isn’t hard to do when you’ve got SUPER CAFFEINATED tea!*

*Without the side affects that come with coffee…Numi #ftw!

The rest of the morning, I play by ear…sometimes I have one big snack around 3am or I’ll have a few little snacks like I did the other day…

Fuji apple and 1/2 a Clif Builder’s Bar (for the record, the cookies ‘n cream flavor is neither cookie nor cream)

At 6:30am, my relief comes in and I pass out PEACE out, head home, and then whip up something delicious for breakfast dinner!

And then it’s off to dreamland in 5…4…3…2…

FACEPLANT! 😉

Breakfast “Sushi”

Ever have one of those moments where you do something without much thought at all and then end up feeling like a complete GENIUS?

Yesterday morning was one of those moments.

As you guys know, I’m always looking for good low-carb breakfast ideas that are quick… and easy to whip up with my zombie brain after a 10-hour night shift.

On my drive home after work, all I could think about was eggs…and the drool-worthy #yolkporn I posted on Instagram last week:

Toast + hummus + egg = HEAVEN!

To make this breakfast more suited for my pre-faceplant status, I decided to enlist the help of my new favorite tortillas:

Seriously Joe, how could you have hid these from me for all those years?!

Originally, I was just going to wrap it up and call it a night morning, but then I spied some roasted asparagus and avocado in the fridge and well, any quick and easy breakfast that also sneaks in some veggies (ok, avocado is technically a fruit) is alright in my book…and heck, why not throw in a few shredded carrots while we’re at it! 😉

So I threw in the veggies (and the fruit) and rolled up my creation and THAT’S when the moment occurred…

Because I obviously didn’t get enough over the weekend! 😉

Breakfast “Sushi”

Prep Time: 5 minutes

Cook Time: 3-5 minutes

Keywords: fry breakfast high protein low-carb egg whites tortillas hummus

Ingredients (Serves 1)

  • 3 egg whites
  • 1 whole wheat low-carb tortilla (I used Trader Joe’s brand)
  • 1 tablespoons prepared hummus
  • 3-4 spears cooked asparagus
  • 1 small carrot, sliced into strips
  • 1/4 avocado, sliced
  • sriracha and furikake for garnish

Instructions

1. Set a small non-stick skillet over medium heat and coat with cooking spray.
2. Add egg whites to skillet and allow to cook, without stirring, for 3-5 minutes or until set.
3. Using a spatula, carefully flip egg white patty and cook an additional 1-2 minutes.
4. Spread hummus mixture evenly across tortilla and top with egg patty, asparagus, carrot strips, and avocado slices.
5. Roll tortilla, tucking the veggies tightly within and cut into 6-8 slices.
6. Drizzle with sriracha and sprinkle with furikake.

I picked up a jar of furikake at my local Asian market a few months ago and LOVE it, but if you don’t have access to it, feel free to sub in sesame seeds or even chia seeds for that extra “pop”!

That is if you can keep yourself from “popping” them straight into your mouth after plating! 😉

Un-plugged & Marvelous

Happy Monday friends!

Ok, all sappiness aside (sorry I’m not sorry), how was everyone’s weekend?

Was it MARVELOUS?

If it was, join Katie and all of us MIMM-ers in celebrating!

My weekend was FULL of marvelousness…starting with the fact that once I hit publish on Friday’s post, I had two whole days of blog-free life. Not that I don’t love blogging (or that I have any intention of leaving), but you know, sometimes you just gotta step away from the computer and just…LIVE!

First bit of LIVING I did, which I have absolutely NO pictures of…

I met a friend in Nashville and tried a new-to-me restaurant called The Yellow Porch and I loved EVERYTHING about it…from the decor, to the wine list, to what I FINALLY decided to order off the amazing menu:

Use your imagination…then add about 5x the amount of drool! 

He went with one of the specials…grilled steak with the most amazing whipped mashed potatoes and sauteed spaghetti squash (yes, I totally stole a bite or two!)

And if dinner wasn’t enough, we stopped by The Fresh Market afterward for some of their bakery’s finest gourmet cupcakes…Boston Cream Pie for him and Pumpkin Spice for me (both delicious, but sadly his was better!)

Saturday was more of a low key day…

BEFORE I ended up getting called in to work at the hospital (womp womp), I made the most out of the morning/afternoon…

With kitty cuddles…

An iTunes overhaul, a new HUGE workout playlist and…

SUSHI!!!!!

BB and I met at Fujiyama (my new favorite sushi place) and had quite a lunch feast…we started with miso soup and an appetizer of grilled squid which was cooked to PERFECTION and drizzled in a sweet teriyaki glaze and then we ordered two large rolls to share…

Since it was back to the grindstone on Saturday night, Sunday only left room to head to the gym (and workout to my new playlist :D) and stop by the grocery store for a few things for the week…

But boy did I find the DEALS!

I may or may not have come home with THREE things of figs while still considering going back for more! 😉

And on the way home, I relished in my money-saving glory while hanging my head arm out the window and enjoying some unseasonable but VERY welcome warm weather!

I’m sorry, but I am NOT dreaming of a white Christmas (or any other days for that matter) so if mother nature feels the need to have near 70 degree weather in Tennessee for the first week of December,

I’LL TAKE IT!
