Patience has never been one of my strong points.

Yesterday was a true test to my limits.

At the gym, I waited FIFTEEN minutes for someone to unhand my foam roller.
At the post office, I waited THIRTY minutes to purchase a $1.20 stamp.
At home, I waited FORTY minutes to connect with internet tech support…

Only for them to tell me they couldn’t help me. 😥

While I’d like to say I maintained a certain level of grace during these times, the truth is I was a bit of a brat…huffing and puffing and blowing their house down tapping my foot. At the end of the day, feeling a bit defeated, I heated up a bowl of this deliciousness…

And just KNEW I couldn’t wait another day to share it!

It’s warm, it’s comforting, it has the ability to wash away all the trying times of a hard day. Oh and it also helps give you the energy to peel yourself out of your fuzzy robe and slippers, drive to Starbucks, and use their free wi-fi to type this post!

I’ve made pumpkin chilis in the past, but I never thought they tasted any different from regular chili. It’s one thing when you’re trying to hide veggies in your food, but when you’re as pumpkin OBSESSED as me, you need something a little strange different.

This recipe is guaranteed to have your family and friends scratching their chins trying to figure out just WHAT it is that makes this chili so different from bowls they’ve had in the past. And whether or not you choose to share that little nugget of information, they’ll most definitely want seconds!

Crock Pot Pumpkin Chili

Prep Time: 10 minutes

Cook Time: 2-3 hours

Keywords: slow-cooker soup/stew high fiber high protein dairy-free fall winter

Ingredients (Serves 4-6)

  • 1 pound lean ground turkey
  • 1 medium-sized onion, chopped
  • 1 Tablespoon minced garlic
  • 1 15 oz. can tri-bean blend (pinto, kidney, and black)
  • 1 15 oz. can great northern beans
  • 1 15 oz. can stewed tomatoes, diced
  • 1 15 oz. can tomato sauce
  • 1 cup pumpkin puree (NOT pumpkin pie filling)
  • 1 Tablespoon cumin
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne (optional)
  • Salt & pepper to taste

Instructions

1. Crumble ground turkey into a large skillet and cook over medium-high heat until almost browned.
2. Add onions and garlic and continue cooking until meat is browned and onions are tender.
3. Transfer meat to a slow cooker, add the rest of the ingredients, stir, and cook on high for 2-3 hours.
4. Serve topped with a dollop of Greek yogurt and fresh avocado.

Feel free to make adjustments to suit your dietary needs….the ground turkey can easily be replaced with another can of beans or even crumbled tempeh.

You could also cook this on the stove top for 20-30 minutes or so, but I just love throwing everything in the crock pot and walking away…for some reason, that never seems like a test of my patience but instead like I just hired a cook to come in for the day! 😉

And of course the leftovers are just as versatile…serve it in a bowl, on a bed of spinach, or over some hot dogs! Try out different toppings…Greek yogurt, avocado, cheese, an EGG!!, pumpkin seeds, crackers, Fritos (a childhood favorite), or some PUMPKIN cornbread!

What I Ate ‘Round the Clock

Happy What I Ate Wednesday!

So I’m really loving how a lot of my favorite bloggers are making the move to get back to their WIAW roots and well, I’m happy to be able to play along with that today. Like Jenn has said, today is not a day to judge, but a day to celebrate something we all have in common…FOOD! While snapping up pictures of last week’s egg-therapy, I didn’t really have a plan for posting one full day of eats, but then I got to thinking, what better way to jump back in the game (and play by the rules) than with an organic, unplanned celebration?! So, without further ado, allow me to showcase my Thursday…

As is the case in most Thursdays, needing a little boost to get me through the last of my night shift, I enjoyed a cup of HALF CAFF coffee a few hours after midnight…

Around 4am, I had a little snack to tide me over until I could get home for breakfast (lunch/dinner/whatever). While eating a snack, games like 온라인 카지노 can be incorporated.

Once home around 7am, I whipped up a bowl of savory deliciousness…

Same picture as yesterday, only with more YOLKPORN…one double-yolk egg, steamed bok choy, pumpkin puree, and burrata cheese topped with TJ’s 21 seasoning salute.

Then it was off to dreamland! When I woke up just before 3pm, (can I get a hell yeah for almost 8 hours of drug-free sleep?!) I decided to get back to get back to my old ACV drinking days…

After torturing myself with the foam roller and then getting in a pretty fantastic workout at the gym, I came home and whipped up some grub around 5pm…

Grilled Portobello + Bok Choy + Zucchini + BeetsLeftover roasted beets (even sweeter when they’re cold), steamed bok choy and zucchini, and, the STAR of the show, a grilled portobello mushroom topped with sautéed onions on an everything bagel thin with this AMAZING Greek yogurt garlic & herb cheese spread…which I now want to spread on every surface including my face! 😉

I then showered up, threw on my fuzzy robe and got cozy in bed for some blog reading. Thinking I would go to bed early like I’ve been doing on Thursday nights, when I got hungry again around 9pm, I didn’t really want to “make” anything to eat so I went with my trusted standby…

Yep, second Quest bar in one day…judge me all you want, but it was EXACTLY what I was craving. Hit the spot and hit it good, especially since I had it with a big mug of COOKIES!

I forgot how much I love this stuff until I dug this out of the stash I bought last year!

After that, I flipped off the light and it was off to dreamland! was up again after 45 minutes of tossing and turning in bed! Thanks to being hyperaware that I was on call that night, I just couldn’t seem to quiet my mind. So the light went BACK on, and I broke out a book I’ve been meaning to read for a while. And then, between the hours of 11pm and 2am (?!), I did some snacking…

Mini Pops + Apple + CheeseAnd as always, the mini pops got the best of me! I just can’t seem to open a bag of those little devils without finishing them…I also had a Babybel cheese to go along with my baby-sized Gala apple.

And then, at 3am…I FINALLY went to sleep!

The Healing Power of Yolkporn

Ok, since it’s NOT Wednesday, I feel I should give you guys some sort of warning before proceeding any further with this post…if you are hungry, you will probably want to gnaw your arm off before you get to the end. So yeah, maybe grab a snack first? Don’t worry, I’ll wait!

Ok, got it? Good! Let’s go!

So you know how they say a picture is worth 1000 words? Well, today I have about 40 bajillion for ya…yeah, let’s just gloss over the fact that I’m really bad at math. Like I mentioned yesterday, last week was pretty rough, but instead of trying to explain EVERYTHING, I’ll let the pictures help me out a bit!

It all started on Sunday with the opening of this little “gem”…

Grail Mix TJ Maxx

A TJ Maxx find called “Grail Mix“…a combination of pure unadulterated crack peanut butter granola, butter toasted peanuts (?!), raw nuts, dried cranberries, and raisins.

Now take that picture, subtract the nap I was SUPPOSED to take before work, add in a heavy dose of frustration and anxiety over the next several hours, and then multiply that handful by like 40 katrillion!

And the next few days looked like this…

Somewhere around this point, I just quit trying to pretend that I was only going to eat what I served myself in a bowl and began eating straight out of boxes and bags.

This box, that I was so excited about finding at Food Lion that I hoarded it for MONTHS, made it a whopping three days.

But then, later in the week while sipping on some tea, I got served up a healthy dose of enlightenment…

And the next few days looked like this…

Bok Choy + Egg + Mushroom Quesadilla

Burrata, onion, and mushroom quesadilla with a side of steamed bok choy and a sunny side up egg

Which quickly became a dipper for the aforementioned quesadilla! 😉

BBQ Sweet Potato & Eggs

Baked sweet potato topped with peanut flour, FROG jam, and BBQ seasoning (my favorite #strangebutgood combo) with a side of ANOTHER double yolk!

And why do I call it “healing”? Well, because I had gotten to a point where I was seriously starting to fear certain foods again. In an effort to “allow myself what I wanted”, I found myself stuck in a FOOD RUT and just could not seem to find my way out. All of a sudden, that tasty trail mix had gained power over me. But, rather than keep all that shame to myself, I took a lesson from my latest read and shared my struggle with my closest and most trusted friend. And one thing she said stuck with me most:

“When you’re tired, hungry and frustrated, sugar carbs are the most comforting. They taste good, they sound good. BUT sometimes you just have to over-ride that. You have to tell yourself, ‘Heather, you can have that stuff after you take a step back and have a healthy portion of protein.'”

I knew this, but to hear it from someone else, someone who can see things from the outside, it was the slap in the face pat on the back that I needed. Once I started incorporating more savory meals, I felt the balance coming back. And guess what! Yesterday, I had THIS for breakfast…

After I finished the bowl licked the bowl clean, I put it in the sink and walked out of the kitchen feeling PERFECTLY satisfied! And with that, I’m back to normal…again! 😀
