Marvelous THIS, Marvelous THAT!

Happy Mondaaaaaaaaaaaaaay!

Whew! Can you tell I just had my cup of coffee? Can you? Can you? CAN YOU?! But N-E-ways, I have a confession…I’ve been sitting here staring at the photos on my computer for about 20 minutes now debating on what I wanted to post about today…

MIMMWIR? ABCDEF-G?! 

But since I just happened to forget to upload a CRAPTON of pictures from Nikki before heading off to work, I’m going to save my Week in Review for tomorrow because I’ve got an idea for a post that I’m kinda patting myself on the back for right now! 😉

Plus, last week kinda sucked (hard nights at work, little to no sleep (except for the day I took a Benedryl, slipped into a ten-hour coma, and was almost late to work!), and unfortunately, a lot of emotional eating, BUT things really started to turn around after the weekend hit and ended up being pretty damn MARVELOUS so let’s talk about that instead, mmmkay??

It allllllll started with a little double-yolk action on Thursday…

I know, I know…peaches aren’t exactly in season anymore…BUT when you find a 4-pack of peaches at the International market for a whopping TWO BUCKS (so you can finally make this) and then the next morning, you have some hungry blends standing in your kitchen on their SECOND cup of coffee while you’re busy raiding the fridge trying to decide what flavor pancakes you can whip up to seriously impress them all the while wondering why the HECK you didn’t at least an inkling of a plan before you woke up and you’re sweating under all the FRIGGIN’ PRESSURE…

Regardless of the season, I’m sharing these with you today because they were fan-freaking-tastic…and if you don’t believe me, I’ve got two lovely ladies well-versed in the fruit persuasion who can back me on this…proof AND proof!

Speaking of boosting my ego, can I just say how great it is to hear someone enjoying something that I’ve made? I mean seriously, it’s THE best…right up there with the feeling you get in your arms after you set down the 20 grocery bags you carried up the stairs from your garage because you insisted on not making two trips!

So umm, yeah…you should make these…because they kinda like make your eyes roll back into your head and you forget to breathe for a minute.

Light and fluffy and FILLED with juicy peaches (use frozen or canned if you still insist on hatin’). The coconut and almond flavors hidden within bring out the peach flavor even more. And covered in a sweet and creamy yogurt sauce, it will definitely take you to that special place…you know where Channing Tatum Tatum Channing carries all 20 of your grocery bags in for you…in one hand…while shirtless…and now I’ve got THIS song in my head! Hmm, can you tell I’m typing this up before my weekly visit with the man-friend? 😉

Peaches & Cream Protein Pancakes (GF)

Prep Time: 5-10 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1)

  • 1/3 cup oat flour (ground from gluten-free rolled oats)
  • 1 Tablespoon coconut flour
  • 1/2 scoop vanilla protein powder (30g scoop)
  • 1/2 teaspoon baking powder
  • 1 large egg white
  • 2 Tablespoons peach-flavored Greek yogurt
  • 3 Tablespoon water (or milk)
  • 1/2 teaspoon coconut extract (optional)
  • 1/2 teaspoon almond extract
  • 1/4 cup diced peaches (fresh, frozen, or canned)
  • Toppings: thinned yogurt mixed with a bit of maple syrup, diced peaches, toasted almonds, and toasted coconut

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. In a medium-sized bowl combine dry ingredients and stir with a wire whisk to break up any lumps.
3. In a separate bowl, whisk egg white until frothy.
4. To the egg, add yogurt, water (or milk) and extracts and whisk well.
5. Add wet ingredients to dry ingredients and stir until just combined.
6. Fold in peaches.
7. Spoon batter onto skillet, forming three small-medium sized pancakes.
8. Cook for 4-5 minutes before flipping and cooking an additional 3-4 minutes.
9. Transfer to a plate and add toppings.
10. Enjoy while fantasizing about pecs…I mean PEACHES!!

But seriously, I’ve realized that, since I discovered the blogging community and basically opened Pandora’s box with my foodie creativity, I will probably NEVER eat a “normal” meal again. This week’s addition to my #strangebutgood repertoire is a prime example…I was halfway through eating my FIRST one before I even realized it was a bit…um, odd? I was just excited to use my boozy jam again!

Drunken Tuna Melt with Blue Cheese & Savignon Jelly...strange but DEFINITELY good!

I actually find it kinda funny that I have such a love for tuna melts…especially since I never grew up with them…I guess this is just my way of making up for lost time and the quirky combos are just me embracing my inner weird kid a bonus! Hey, at least I didn’t put ketchup on top!

“Drunken” Tuna Melt

Prep Time: 10 minutes

Cook Time: 2-3 minutes

Keywords: broil sandwich salad entrée high protein tuna

Ingredients (Serves 2-3)

  • 2-3 slices of whole wheat bread (I used P28)
  • 1 5oz. can Wild Planet wild albacore tuna or 1 cup cooked chickpeas for vegetarian option
  • 1/2 cup low-fat cottage cheese
  • 1/8 cup finely diced onion
  • 1 1/2 Tablespoons Dijon mustard
  • 1/2 teaspoon lemon juice
  • 1 Tablespoon Cabernet Sauvignon (or grape) jelly/jam
  • 1 Tablespoon crumbled blue cheese
  • 1 Tablespoon shredded gouda cheese
  • salt & pepper to taste
  • dash of Italian seasoning

Instructions

1. Turn oven to low broil.
2. Place bread slices on a sheet pan under broiler for 3-5 minutes.
3. Meanwhile, combine all ingredients in a medium-sized bowl.
4. Remove bread slices from oven, flip over and top with tuna mixture.
5. If desired, add a bit more jam to top of mixture, sprinkle with cheese and spices and return to oven until cheese has melted (2-3 minutes).
6. Serve with roasted vegetables and kale chips or side salad for a well-balanced meal.
