The Case of the Forgotten Liebster

Last week, I confessed that while I like to keep a nice and neat organized environment most of the time, on the INSIDE it tends to resemble the bedroom of a teenager…what ARE those dirty socks doing in that pizza box?!

Moldy pepperoni aside, it’s been over a YEAR since I was first nominated for the Liebster award and over six MONTHS since I last posted my answers to some very important questions. I mean, people must know…what WOULD my last meal be?! And now, for some other life or death blogger questions… 😉

1. What’s your motto in life?
Try anything at least ONCE! Whether it be a new food or a spontaneous activity that scares you a little, life is all about adventure and really, what’s the point in being here if we don’t embrace as many experiences as possible?

2. What is one of your quirky habits?
Just one? 😉 Well, I have this thing with odd numbers…when making a list, I can have 3, 5, or 7 things, but if not any of those three, then it has to be 10….my alarm has to be set in divisions of 5…and for some reason any number ending in 7 makes my eye twitch!

3. What nicknames do you have?
I always wished I did, but I never really had a nickname growing up, besides the super creative use of pairing rhyming words with my name…oh if I had a nickel for every “Heather Feather” that was thrown my way!

4. What is your favorite way to treat yourself?

Park Walk PicsI am well versed in retail therapy, massages are now my favorite way to drool on myself (sorry foodies), and I’ve been known to dive head-first into a trough of fro-yo after a hard week, but honestly, nothing makes me feel better than a nice long walk at the park…especially when following behind the lens of my camera!

5. What would you like to be remembered for by others?
I hope each day that I exude genuineness in everything I do…that I come across as a woman who made the most of her days, learned to embrace her faults, loved with an open heart, and found the joy in every day.

1. What was your favorite class in high school?
I grew up in a small town so liberal arts classes were kinda slim for picking, but luckily after signing up for art all four years, I finally got it in my schedule my senior year AND I got to take it with my best friend, Sherri! We had a blast and I still have some of my art projects…I’ll have to share them with you guys some day!

2. What’s the number one place you’d like to visit?
EUROPE!! Just please don’t make me narrow it down to a specific country…I just want to be transplanted there for (at least) a year and eat my way back home! Ha!

3. What kind of climate do you wish you could live in?
Omg, best question ever! I would LOVE to live somewhere where it’s around 70 degrees (21 for all you metric people out there) all year long, mostly sunny, and NO SNOW! The man-friend is convinced I would get bored living in a place that lacked changing seasons, but I beg to differ!

4. When did you start your journey in the kitchen?
When I moved out and started college, my roommates thought I was a friggin’ chef…all because I knew how to throw 5 cans of stuff and a packet of seasoning together with some ground meat and call it chili, but honestly, that’s about the ONLY thing I knew how to make…other than spaghetti, which, less face it, is basically the same thing only minus the beans and add the noodles! 😉 It actually wasn’t until I got married (yes, I was once married for all who didn’t know) that I got bitten by the domesticated bug and started learning how to cook, but I would ALWAYS follow a recipe…like to a tee…like if I didn’t have parsley for garnish, I would go out to the store just for it! It’s wasn’t until I discovered food blogs that I actually got in there and realized I had a hidden talent all along! 😀

5. If you had one dish to eat for the rest of your life, what would it be?

I totally forgot to tell you guys about the pizza place the man-friend and I stopped at on our way back from Cleveland last month. While indulging in a little Travel Channel one weekend, we caught an episode of Restaurant Impossible (love!) and watched Robert Irvin totally turn this ho-hum pizza joint into a thing of beauty. We actually made a point to map out Aponte’s Pizzeria as a stop and, while we both agree that the owner probably went back to his “special” sauce (the one that Robert told him to change), the crust and toppings were amazing!

The man-friend went with his favorite of pepperoni and black olive while I ordered the sun-dried tomato and broccoli with fresh mozzarella!

Greek Quiche for One

Prep Time: 5-10 minutes

Cook Time: 30 minutes

Keywords: bake breakfast entrée gluten-free dairy-free high protein vegetarian eggs quinoa Greek

Ingredients (Serves 1)

  • 1 large egg + 2 egg whites
  • 1 Tablespoon unsweetened almond milk
  • 1/8 cup cooked quinoa
  • 2 Tablespoons chopped marinated artichoke hearts
  • 1 Tablespoon finely diced red onion
  • 2-3 pitted Kalamata olives, sliced
  • 1-2 Tablespoons crumbled feta
  • 1 Tablespoon chopped fresh parsley + more for garnish
  • 2 cherry tomatoes

Instructions

1. Preheat oven to 350°F, coat a small oven-safe baking dish or ramekin with cooking spray and set aside.
2. Whisk egg and egg whites in a small bowl.
3. Add remaining ingredients, stir, and transfer to baking dish.
4. Place in oven and bake for 30 minutes or until top and edges are crisp and brown.
5. Garnish with chopped fresh parsley.

I’ve made this baby THREE times…eaten with a side salad, eaten in the car, and even eaten cold because I’m too lazy to walk to the break room at work to use the microwave and it’s been amazing every time! Seriously, you’ve GOT to make this!

Have Blends, Will Travel!

Hey hey HEY!!

AND hapPEEy MONday! 😀

Sorry for the over exuberance this morning, but I’m still riding the high from this weekend! A weekend spent with some VERY lovely ladies and two of my dearest and closest BLENDS!

Sarah, Melissa, & Me(Bloggers + Friends = BLENDS!)

Melissa came up from Memphis on Friday afternoon and then Sarah met up with us Saturday evening on her way back from Louisville where she was visiting another good blend, Brittany! We had SUCH a good time chatting, shopping, and of course, because we’re all die-hard foodies, EATING!

While the girls did their fair share of traveling to get to ME, I did my best to take them with me on a trip of my own! After hitting up Trader Joe’s and Whole Foods not minutes after Melissa arrived (are you really surprised?), we were both BEYOND ready for lunch! So where do I take a girl who shares my undying love of sushi?

Oh yeah, I couldn’t help but take her to my favorite the MECCA of sushi restaurants! While we chatted nonstop about everything from college life to blog life, we chopsticked our way through Japan one wasabi-topped sushi roll at a time!

Later that night, we met up with the man-friend and after a little huddle decided on some MORE traveling…to a new-to-me Thai restaurant called Siam Cafe!

Melissa and I both enjoyed a “small” bowl of Tom Ka Kai soup (which was pure coconutty HEAVEN!). Then Melissa went brave and ordered a MEDIUM hot curry! I got brave too, but not on the spice front (because I’m a total pansy)…

I tried DUCK for the first time!

It was sautéed in a red curry sauce with pineapple, tomatoes, and basil and was absolutely DIVINE! I’ve heard that duck tends to be a bit greasy and was a little nervous that I wouldn’t like it, but it turned out perfect…crispy roasted bits on the ends and tender and juicy on the inside!

On Saturday, Melissa and I made some breakfast and then headed out to my favorite park to enjoy the BEAUTIFUL weather we were having!

Park - RiverHave I ever mentioned that my favorite “wralking” trails are right next to the river? It was great to see so many other people taking advantage of warm temperatures the sunshine! 🙂

After our fingers had all gone numb from the wind, we scooted back to the house, whipped up some random snackage for lunch: roasted kabocha, bok choy, and cottage cheese with jam? Yeah, I don’t think it can get more random that THAT!…one of the many reasons I love hanging with other bloggers! Ha!

Not long after that, Sarah showed up and it was time to party shop! We made our way back to Nashville and headed toooooo…TJ Maxx (another surprise, I’m sure). After scouring the store for foodie goodies and thumb-hole jackets, it was time for dinner! I was super excited to get to introduce them both to Ethiopian for the FIRST time…and what better place than Mesob…the restaurant Allie introduced me to just a little less than a year ago!

So what did the girls think of their first Ethiopian experience?

Ethiopi-GONE!Umm, I think it’s safe to say it was THOROUGHLY enjoyed! Oh and how about this? Our entire meal was less than THIRTY BUCKS! 😯

Once back at the house, we were sipping tea to soothe our full tummies when I surprised them with a bit more…

I just have to say, this was one of the BEST weekends…dare I say even more MARVELOUS than last week? With all the stress I’ve been feeling lately, I really needed some girl time and a chance to just “get away.” Although I already felt like I knew these ladies well before, I feel even closer to them now and am incredibly grateful that they were both able to make the trip out to see me. I had so much fun playing hostess and would gladly open my doors (including the one to my pantry) to them again!

That’s right folks, come see me and you get the ROYAL treatment AND some of my
crown jewels foodie gems!
