Waffle Wednesday!

Hello my WONDERFUL friends!

I hope you are feeling as fantastical as I am right now! I just finished reading through all of your SWEET comments on yesterday’s “funkified” post and I am SO filled with joy…seriously, if you were in the room with me right now, I’d annoy the piss out of you! πŸ˜‰

I’m sure a great deal of my funk has to do with the whole “winter blues” thing. I just never feel like I have enough “day” to get stuff done! Guess it’s a good thing that…

Until then, since my mood is not ONLY dependent on the weather but ALSO on the amount of deliciousness in my life, I’ve been trying my best to listen to my body lately and give it what it wants…

Which brings me to the title of this post!

I know what you’re thinking…”But Heather, we ALL know you don’t make waffles!”

But as of yesterday…oh, I most certainly DO!

The Elvis Waffle

I have no idea where it came from but as I rolled over in bed yesterday morning afternoon, I was hit with the biggest, most INTENSE CRAVINGΒ for waffles! As I stumbled my way into the kitchen, I siked myself up Rocky styleΒ (puh-LEEEASE click that!) and fought back the terrifying images of waffles past…

I whipped up my batter, poured it into my THOROUGHLY greased waffle iron, closed the lid and crossed my fingers!

Once that little orange light went off, I took a deep breath…

I slowly put my hand on the handle…

I lifted up…

The Elvis Waffle with Chocolate Sauce

*Happy dance*

I’d like to say this is the product of some INTENSE kitchen research…countless days of measuring…complex mathematical equations to get just the right ratios of ingredients, but…?

It was a total FLUKE!

The Elvis Waffle with Chocolate & BACON!

A complete, oh-my-god-I-can’t-believe-this-actually-worked FLUKE!

Quick! Somebody get me a lotto ticket! πŸ˜‰

Now hopefully, Jenn will forgive me for not having a complete What I Ate Wednesday post today, because I’m sorry I’m not sorry, but there was NO WAY I keeping this bit of luck to myself any longer, plus I geeked out a little with the thought of getting to use more alliteration! πŸ˜†

Besides, I think I could persuade her by acting on a few of her “special” cravings… πŸ˜‰

When was the last time you got lucky?
Keep it clean people!

What deliciousness did you or will you eat this Wednesday?

  1. Oh no, you didn’t! An Elvis Waffle?! Seriously, if only I had the right peanut flour at hand (mine’s more like gritty ground up peanuts than fine flour) and well, let’s not forget the missing waffle iron … But you meant to mail me some (veganized
    ;)) waffles in anway, right?!

At the danger of sounding super cheesy but the last time I felt lucky was yesterday. When my dad – we’re not always getting along smoothly – just randomly gave me a big hug. Totally made my day … and now I feel silly for saying something as seemingly small as that …

I’m happy to hear you’re feeling a bit better already and if deliciousness helps with the funk I’d gladly mail you some of those Speculoos spread Chocolate Cups ;).

    • kissmybroccoli says:

Hahaha! Girl, you’re totally cracking me up! Send me some of those cups and I’ll get to work on your veganized waffle ASAP! I’ll be sure to make extra for myself and I’ll throw plenty of bacon in there! πŸ˜›

And no, no, do NOT feel cheesy at all! My dad and I NEVER had the relationship I dreamed of when I was younger so I know EXACTLY how you feel! Even though we are on much better terms now, it still makes my day whenever he gives me a hug, tells me he loves me, or the big one…says he’s proud of me for something (well, I’ll be honest, the few times I’ve heard that one, it’s come by way of my mom). It really is little things like that that can build up and strengthen a relationship…I hope he realizes just how much it means to you! And if not, maybe you should let him know! πŸ™‚

  2. What? No pancakes? You’re the queen of breakfasts! These look great, and I’m happy to hear you’re so darn happy. Smiles!!!

  3. It’s always lovely when recipes work out unexpectedly :-p Definitely motivation to break out the waffle iron!

  4. I am studying on exchange in London right now which means that I don’t have a kitchen filled with appliances. This is making me miss my parents’ waffle iron in a BAD way. I can tell you what my first breakfast back in North America is going to be ^~

  5. That first waffle is always a “hold your breath” moment! Lookin good girl!

  6. BreNaturally says:

I seriously wish I had peanut flour right now! Those look amazingly relish!

  7. Oh my goodness, I haven’t had waffles in ages and they look a-maze-ing!

  8. Um, yuuuuum? I think we’ll have to change the title from Pancake Queen to Breakfast Queen!

  9. I’d love a waffle iron to experiment with!

  10. Everytime I see someone make their own waffles, I always wish I had a waffle maker. Someday. πŸ™‚

  11. Tracey says:

Can I use PB2..or do I actually need Peanut Flour? BTW: Your a genius!

  12. I got lucky with a recipe for mocha oatmeal! And that was the only time because you cannot imagine the horrible tastes of some of the things I’ve (tried to) come up with… Ick! I try to stick to tested and true recipes now πŸ˜‰

    • kissmybroccoli says:

Hahaha! Really? I don’t think I’ve ever had an oatmeal experiment go bad…well, unless you count the time I added too much flax and it was almost the consistency of chewing gum! Lol

  13. Lucie says:

I feel lucky everytime a pancake looks like a pancake rather than a cookie rolled over by a truck! And this morning I had a pumpkin protein muffin which I made up and it tasted so good. So that’s my deliciousness and luckiness for today!
ps. I am so happy that you sound much better today. But I also know how super annoying the funks are. If you ever need a cheer up, call me on Skype. I will talk Swiss German to you. I give you 150% guarantee that you will laugh tears when hearing it πŸ™‚

    • kissmybroccoli says:

Aww, believe it or not, I used to be the same way with pancakes! Don’t worry…it comes with practice! πŸ˜€ I think I need to know more about this pumpkin protein muffin…as if I’m not already orange enough! Lol

Thanks girlie! And I would LOVE to giggle while you talk Swiss German to me! πŸ˜€

  14. I love flukes that turn out delicious. And this recipe certainly sounds delicious!

  15. I heart you and your bacon sprinkles. But pleaseeeeee don’t start on a waffle bender. I don’t have a waffle iron!!!

  16. omg YUM. i love the addition of crumbled bacon on top!

  17. HOLY YUM!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

  18. Yes! I have a brand new waffle maker that needs to be broken in. These look goooood.

  19. Yummmmmm!! I need to go out and buy a waffle maker RIGHT NOW haha!

  20. These are making me SO hungry. Apparently I have to go figure out where the waffle iron is..

    xx Kait

  21. I love it when kitchen experiments work out on the first attempt! That rarely happens for me though haha.

I’m visiting home right now and I’m wondering if my parents will notice if I steal their waffle maker when I leave… you’ve got me craving them!

    • kissmybroccoli says:

Haha! Do it…I dare ya! πŸ˜‰

And believe me, this is the FIRST time this has happened to me in a LONG time! haha

  22. Holy crap! I didn’t realize how much protein was in peanut flour! I was like- 20g protein and no protein powder in the recipe, what? So I looked up 1/4 c peanut flour and sure enough it’s 16g protein. I was surprised!! I usually only use a tablespoon or two in my protein shakes.

  23. I cannot even remember ever eating a waffle that wasn’t an Eggo. And I cannot remember the last time I even ate one of those. In college when everyone was all about the waffle maker in the dining hall, I never got into it. [I think my jeans thank me for that one.]

    I also rarely eat pancakes.

Don’t hate me for my lack of breakfast ‘bread’ love.

Or maybe hate me, and then try to convince me otherwise?

    • kissmybroccoli says:

Aww, how could I hate you gorgeous? You may not be the pancake-lover like I am, but you are the QUEEN of bowls of yum…and forever my inspiration for new sauce and dip combos! πŸ˜‰ But there WILL be some convincing at Blend this year! I’m coming with spatula in hand! πŸ˜€

  24. Bookmarked to my “to make” list. These look divine..

  25. This is going to sound so horrible, we got married almost 12 years ago and the waffle iron we got as one of our gifts has sat in the back of lonely cupboards unopened our entire marriage. I decided last week that it was time to break it open and sweet mother those waffles were amazing!

  26. dork =) You owe me a bagel.

  27. Geez – now I want a waffle iron! πŸ˜‰

  28. Allie says:

Youuuuuu made successful waffles! ROCK ON!

  29. Bacon sprinkles – love it! Bacon and waffles are such a great combination. They look wonderful!

  30. Heather you blow me away with your breakfast creations! Wow! Pinned for a weekend breakfast and my Peanut Flour should be here soon!

    • kissmybroccoli says:

Aww, thank you Giselle! Peanut flour is one of my favorite ingredients to experiment with! I hope you like them! πŸ™‚

  31. I couldn’t even believe my eyes when I saw that waffle pic on instagram. I don’t have a waffle iron, but I wonder if I could pancake-ize those babies…

    • kissmybroccoli says:

Dude, you could TOTALLY make pancakes out of this! Seriously, I can’t believe I didn’t think about that! Lol

  32. Those nutritional stats are amazing! Can’t wait to try this out πŸ™‚

  33. Emily says:

    Ahhh…I die!
I have a waffle iron (that I’ve had for over a year now) and I’ve used it once. ONCE.
In other words, I’m making these things weekend. Thank you, thank you, thank you.

    • kissmybroccoli says:

Haha! You’re welcome, you’re welcome, you’re WELCOME!! Hope you got all the dust off of it first! πŸ˜‰

  34. Lisa says:

Holy moly. These look divine!! I wonder if I could replace the egg white with a chia egg or something….since I can’t have flax or eggs. Now I need to go find my waffle maker, I know it’s somewhere…

    • kissmybroccoli says:

You could try a chia egg…maybe like half a tablespoon instead of a whole? OR I bet you could try applesauce! πŸ™‚

  35. How Heather got her groove back…with a waffle iron, although I’d settle for Taye Diggs. Glad you found some of your mojo and you made a successful waffle! Happy dance.
My last successful surprise was my pasta on Sunday, which is going to be my Strange But Good on Friday. I get around.

    • kissmybroccoli says:

Ahhh, Taye Diggs…I just watched the movie “Cake” with him and Heather Graham over the weekend…totally made me think of Stella! That is one fine lookin’ man!

And THAT was one DELICIOUS-looking surprise!! I was seriously impressed! You’ve officially joined us in the weird foodie club! πŸ˜‰

  36. But… but… what about for those of us who aren’t lucky enough to be able to eat peanuts? πŸ˜₯ Stop teasing!

  37. I finally got my latest order of peanut flour after being out for a while and although I have already made pancakes with it, I am dying to try these. Now if only a waffle maker would magically appear on my doorstep…a girl can dream, right ? πŸ˜‰

    • kissmybroccoli says:

Haha! Yeah, I’m still waiting on a visit from the Vitamix fairy! Good thing I haven’t been holding my breath! lol

  38. Too good to be true, I can’t take my eyes off of you – sorry, I just felt the need to finish the tune πŸ˜› These look heavenlyyy! I’ve made a similar stack but without the banana – love the addition!

  39. OMIGOD WAFFLES. I’m basically obsessed with waffles since I epically fail at pancakes. These look YUM. I’m surprised I haven’t made a peanut flour/banana waffle yet, I’ll have to give this a try!

    • kissmybroccoli says:

Haha, I’ve always been the OPPOSITE! Just glad the waffle gods finally decided to smile on me! Cue the waffle frenzy!!!
