Waffle Wednesday!

Hello my WONDERFUL friends!

I hope you are feeling as fantastical as I am right now! I just finished reading through all of your SWEET comments on yesterday’s “funkified” post and I am SO filled with joy…seriously, if you were in the room with me right now, I’d annoy the piss out of you! πŸ˜‰

I’m sure a great deal of my funk has to do with the whole “winter blues” thing. I just never feel like I have enough “day” to get stuff done! Guess it’s a good thing that…

SPRING is only THREE WEEKS AWAY!! πŸ˜€

Until then, since my mood is not ONLY dependent on the weather but ALSO on the amount of deliciousness in my life, I’ve been trying my best to listen to my body lately and give it what it wants…

Which brings me to the title of this post!

I know what you’re thinking…”But Heather, we ALL know you don’t make waffles!”

But as of yesterday…oh, I most certainly DO!

The Elvis Waffle

I have no idea where it came from but as I rolled over in bed yesterday morning afternoon, I was hit with the biggest, most INTENSE CRAVINGΒ for waffles! As I stumbled my way into the kitchen, I siked myself up Rocky styleΒ (puh-LEEEASE click that!) and fought back the terrifying images of waffles past…

I whipped up my batter, poured it into my THOROUGHLY greased waffle iron, closed the lid and crossed my fingers!

Once that little orange light went off, I took a deep breath…

I slowly put my hand on the handle…

I lifted up…

and…?

IT DIDN’T STICK!!!

The Elvis Waffle with Chocolate Sauce

*Happy dance*

I’d like to say this is the product of some INTENSE kitchen research…countless days of measuring…complex mathematical equations to get just the right ratios of ingredients, but…?

It was a total FLUKE!

The Elvis Waffle with Chocolate & BACON!

A complete, oh-my-god-I-can’t-believe-this-actually-worked FLUKE!

Quick! Somebody get me a lotto ticket! πŸ˜‰

The “Elvis” Waffle

Prep Time: 5 minutes

Cook Time: 5-7 minutes

Keywords: breakfast high protein gluten-free dairy-free peanut flour bananas

Ingredients (Serves 1)

  • 1/4 cup peanut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 medium banana, mashed
  • 1 large egg white
  • 3 Tablespoons unsweetened almond milk
  • 1/2 teaspoon maple extract (or vanilla)
  • 5-7 drops liquid stevia (or other preferred sweetener)

Instructions

1. Preheat waffle iron and coat LIBERALLY with non-stick spray!
2. Combine all ingredients in a bowl and mix well.
3. Transfer batter to center of waffle iron, close lid, and cook until done.
4. Plate and top with Healthy Chocolate Sauce and bacon “sprinkles”.

  1. Oh no, you didn’t! An Elvis Waffle?! Seriously, if only I had the right peanut flour at hand (mine’s more like gritty ground up peanuts than fine flour) and well, let’s not forget the missing waffle iron … But you meant to mail me some (veganized
    ;)) waffles in anway, right?!

    At the danger of sounding super cheesy but the last time I felt lucky was yesterday. When my dad – we’re not always getting along smoothly – just randomly gave me a big hug. Totally made my day … and now I feel silly for saying something as seemingly small as that …

    I’m happy to hear you’re feeling a bit better already and if deliciousness helps with the funk I’d gladly mail you some of those Speculoos spread Chocolate Cups ;).

      Hahaha! Girl, you’re totally cracking me up! Send me some of those cups and I’ll get to work on your veganized waffle ASAP! I’ll be sure to make extra for myself and I’ll throw plenty of bacon in there! πŸ˜›

      And no, no, do NOT feel cheesy at all! My dad and I NEVER had the relationship I dreamed of when I was younger so I know EXACTLY how you feel! Even though we are on much better terms now, it still makes my day whenever he gives me a hug, tells me he loves me, or the big one…says he’s proud of me for something (well, I’ll be honest, the few times I’ve heard that one, it’s come by way of my mom). It really is little things like that that can build up and strengthen a relationship…I hope he realizes just how much it means to you! And if not, maybe you should let him know! πŸ™‚

  12. I got lucky with a recipe for mocha oatmeal! And that was the only time because you cannot imagine the horrible tastes of some of the things I’ve (tried to) come up with… Ick! I try to stick to tested and true recipes now πŸ˜‰

      Hahaha! Really? I don’t think I’ve ever had an oatmeal experiment go bad…well, unless you count the time I added too much flax and it was almost the consistency of chewing gum! Lol

    I feel lucky everytime a pancake looks like a pancake rather than a cookie rolled over by a truck! And this morning I had a pumpkin protein muffin which I made up and it tasted so good. So that’s my deliciousness and luckiness for today!

  22. Holy crap! I didn’t realize how much protein was in peanut flour! I was like- 20g protein and no protein powder in the recipe, what? So I looked up 1/4 c peanut flour and sure enough it’s 16g protein. I was surprised!! I usually only use a tablespoon or two in my protein shakes.

  23. I cannot even remember ever eating a waffle that wasn’t an Eggo. And I cannot remember the last time I even ate one of those. In college when everyone was all about the waffle maker in the dining hall, I never got into it. [I think my jeans thank me for that one.]

    I also rarely eat pancakes.

    Don’t hate me for my lack of breakfast ‘bread’ love.

    Or maybe hate me, and then try to convince me otherwise?

  25. This is going to sound so horrible, we got married almost 12 years ago and the waffle iron we got as one of our gifts has sat in the back of lonely cupboards unopened our entire marriage. I decided last week that it was time to break it open and sweet mother those waffles were amazing!

  35. How Heather got her groove back…with a waffle iron, although I’d settle for Taye Diggs. Glad you found some of your mojo and you made a successful waffle! Happy dance.
    My last successful surprise was my pasta on Sunday, which is going to be my Strange But Good on Friday. I get around.
