It’s fine if you want to pull my crazy card on this one, but I’m not going down alone! I’m pushing good ol’ Mother Nature out in front this time! I mean, seriously…what the heck is she up to anyway? Just the other day it was 50°F (10°C) and now, as I draft this post, it is a “balmy” 10°F (-12°C) with a wind chill of -4°F (-20°C)…neg-a-tive FOUR!

So maybe I wrapped up in my fuzzy robe, cranked up the heat, and alternated careful sips of molten lava hot coffee as I spooned this up, but it was TOTALLY worth it!

Based off my original Cake Batter Protein Ice Cream and the much-loved spin-off, Blueberry Protein Ice Cream, I put last week’s leftover pumpkin to good use! And ok, so maybe it was a good excuse to break out the peanuts and cereal “sprinkles” again! But hey, when a craving hits, you go for it, right? And luckily in only a few short hours (which I used for a good sweaty workout), I had EXACTLY what I was craving!

Oh and check it, I finally got to use the little pumpkin I found on sale at the dollar store back at the end of November! Seasonal denial…schmeasonal denial!

Pumpkin Protein Ice Cream

Prep Time: 10 minutes

Cook Time: 2-3 hours chill time

Description: Who says pumpkin has to be reserved JUST for fall time treats? Enjoy this protein-packed snack ANY time of year!

Ingredients (Serves 1)

  • 1/2 cup cottage cheese
  • 1/4 cup pumpkin puree
  • 1/2 large banana (fresh or frozen)
  • 1-2 Tablespoons unsweetened almond milk (optional)
  • 1/2 teaspoon pumpkin pie spice
  • 5-7 drops NuNaturals liquid stevia*
  • Toppings: healthy chocolate sauce, crushed peanuts and cereal

Instructions

1. Combine all ingredients in a blender and process until smooth.
2. Place in freezer for 2-3 hours to set.
3. Scoop into a bowl, drizzle with chocolate sauce and top with crushed peanuts and cereal.

      Oh girl, I’ve been thinking of making this for months, but my Publix has been out of my favorite cottage cheese…obviously when they restocked last week, I filled my cart! 😉 And I was really lucky to find this ONE spoon (and a yellow one) at a little kitchen store in the mall! I just wish I had one in every color! Lol

    a) Have all the ingredients for ANOTHER one of your recipes and
    b) Get to use my blender and not feel the extreme sadness that comes with recipes calling for a food processor
    means that I am no longer alive. I’m dead. This looks SO GOOD that It’s killing me I can’t make it right this very second. At 6:33am. 🙂

  6. I don’t actually crave ice cream that much in the winter, I do crave hot chocolate though! I had some last night to honor that craving! I think I wasn’t following when you first posted that cake batter ice cream so I have to go check it out. Love some cake batter in any form… cooked, raw, ice cream… candles… you get the picture.

Lovely recipe, and I don’t find it strange at all!:) I actually made something similar to this earlier in the year using frozen almond milk cubes instead of banana and Greek yogurt instead of cottage cheese. I’m a stickler for anything pumpkin and this is sure a beautiful way to get anyone to convince themselves to eat it! LOVE<3

      Oh yes, it’s the best! And if you don’t freeze it, it makes a damn good protein “pudding”…that’s what I’ve done in the past with the other variations. Just forgot to mention it in this post!

  12. Girl I am frozen treat OBSESSED at the moment so you’ve got me again! I made 3 big batches of yonanas the other day and froze them in containers – perhaps just so I can eat “icecream” with breakfast hahaha

    Truth be known, in the winter time I will eat icecream or frozen things in front of the fireplace, whilst wrapped in a blanket and often clutching a heat pack 😛

    The last craving I honoured was for mushrooms. I have gone mushroom CRAZY. And rice crispy treats – but I wish I didn’t honour that craving as I HATE making marshmallow rice krispy treats… way too sticky!

      Ha! You threw me off with the rice krispie treats AFTER the mushrooms…I was like, “together?!” Now THAT would be strange! Lol! But glad to hear someone else understands my unseasonable love for frozen treats! Just wish I had your fireplace! 😉

    Omg I literally adore cottage cheese ice creams. I make them all the time when I’m in soccer season, especially to give me some protein after a hard fought game.
    And I’m not over pumpkin yet either… I’ve been putting a scoop into my yogurt or oats every other day, plus Ive got my mind on some kind of pumpkin, oat and chocolate bar. Saturday is a free day for me to create in my kitchen…. and Ive got a few cans of pumpkin waiting to be cracked open 🙂

      Ahh, insta-freeze…that would be nice! But if we’re going all out, I want insta-bake powers too! 😉 And well, if you don’t freeze this, you could always have pumpkin PUDDING! Just sayin’… 😉

  15. I’m not a huge ice cream person (don’t hate me!) so I definitely don’t crave it in the winter. I do crave cake and cookies and anything buttery and sugary. I give in most of the time!

    And we totally get to play the pumpkin card still because, if you’ll remember, we protested pumpkin long into pumpkin season, displacing our pumpkin season out farther! See? All good

  17. Oh I like ice cream even in the winter, as long as I have a cozy blanket an fire next to me too :). I can’t wait to finally pick up the blender I got for Christmas and start making smoothies and this ice cream! Tasty, healthier ice cream that doesn’t even need an ice cream machine, sounds good to me!!

This looks so doable- I’ve made your cake batter protein ice cream before (haha thank you for linking it to me many yonks ago) and LOVED it- seeing as its Summer here I’ll have to give this a go too! My body craves UN-seasonally- cold in Winter, hot in Summer. Stupid body. The last craving I had was fried potatoes in butter so I had that with a protein shake and called it dinner.

    PS I have that say something song in my head…whilst picturing Christina Aguilera. Thanks for that.

    This looks delicious! I don’t use Stevia/NuNaturals/Truvia etc. What would you recommend using in it’s place, and how much?

      Maple syrup would be a great alternative since maple helps enhance the pumpkin flavor. My sweetness preferences may be different from yours, but I’d just start with a tablespoon and go from there! 🙂

    I’ve been making banana ice cream since last summer and playing around with flavors. I need to try dumping some of my homemade pumpkin in there. I haven’t been buying cottage cheese lately, but how about some Greek yogurt?

      Sounds like a winner to me! I just like the cottage cheese since it’s a bit thicker doesn’t take as long to come together in the freezer…or least that’s what I’ve convinced myself! Lol
