I hope you all had a wonderful weekend!

Remember when I mentioned how I’ve been doing a bit lot of online shopping lately? Well, I figured I’d use today’s post as a way of intervention to show off some of my latest goodies! 😉

What started as an order for coconut butter and more of my beloved hazelnut chai turned into a bit more once I discovered that first time customers get $10 off a $40 purchase! The Christmas tea practically JUMPED into the cart after that realization and well, as for the shiny silver package?

But I haven’t tried it yet…I’ll keep you guys posted!

Secondly, Netrition:

Replenished my stash of peanut flour, picked up a new flavor of Power Crunch bars (which are amazing and totally rival the chocolate peanut butter), and I also nabbed a new-to-me product, Vega’s SaviSeeds!

Ounce for ounce, these amazing seeds on their own contain 17 times more Omega-3 than wild sockeye salmon*. They are very unique tasting…a bit earthy, but in a good way. So far, I’ve been pairing them with an apple or some carrots and they’ve made for a perfectly filling snack!

I also picked up some of my new favorite maple syrup and a new jam spread to try. They’re both sweetened with xylitol (which deserves a post all to itself and is coming soon!) and the ingredient list is pretty legit.

Then, I got sucked into the bar section!

So far, I’ve tried the brownie (it was just ok), the blondie (holy cow amazing…just like the texture of an Otis Spunkmeyer muffin…I kid you NOT!), and the coffee-flavored Simply Bar (not bad, but I think I’ll like the raspberry one more).

The “wheyfer” bar was a freebie…haven’t tried it just yet, but if it’s ANYTHING like the Power Crunch bars, I know I’m in for a treat!

Oh yeah, now that I’ve finally got my post-Christmas appetite back, you better believe little bits of this bad boy are going to be popping into some recipes!

Well, I may gave you guys tips on how to turn my Blueberry Beet Pancakes into little red velvet ones, but since I was so enamored with parfaits and smoothies that week, I never actually got around to making them for myself…

Cacao nibs are delicious and make for great snacking while taking 935,213 pictures of beets, chocolate, and pancakes.

Until one catches you in the roof of the mouth…then the munchin’ and crunchin’ comes to a screeching halt while you curse the heavens continue with your never-ending photo session.

Red Velvet Protein Pancakes

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

    Red Velvet Pancakes

    • 1/4 cup whole wheat pastry flour
    • 1 Tablespoon coconut flour (or ground flax, though the consistency will be a bit different)
    • 1/2 scoop protein powder (30g scoop)
    • 2 Tablespoons unsweetened cocoa powder
    • 1/2 teaspoon sodium-free baking powder
    • 1 egg white
    • 1/4 cup raw, grated beets
    • 1/3 cup unsweetened almond milk
    • 1/2 teaspoon vanilla extract
    • 5-7 drops chocolate (or vanilla) stevia

    Cocoa Drizzle

    • 2 Tablespoon unsweetened cocoa powder
    • 1 Tablespoon water
    • 3-5 drops stevia or other preferred sweetener

    Instructions

    Red Velvet Pancakes

    1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
    2. Combine grated beets, egg white, almond milk, vanilla extract, and stevia in a small blender and process for 4-5 seconds (longer if you don’t want to see little flecks of beet).
    3. In a bowl, combine flours, protein powder, cocoa, and baking powder and stir with a wire whisk to break up any lumps.
    4. Add wet ingredients to dry ingredients and stir until flour is incorporated.
    5. Spoon batter onto skillet surface forming 3 medium-sized pancakes and cook 5-6 minutes per side or until edges start to crisp (batter will not bubble).
    6. Plate and layer with Greek yogurt, cocoa drizzle, and cacao nibs (or chocolate chips).

    Cocoa Drizzle

    1. Combine all ingredients and stir until smooth.

    Sippin’ on a Soupie!

    Happy Friday foodies!

    As I mentioned in yesterday’s CURRENT events, I’ve recently become obsessed with something I’ve coined a “soupie”…

    Smoothie + Soup = Soupie!

    Ya see, I don’t know about you guys, but just because it’s no longer 90+ degrees outside, doesn’t me I don’t still get cravings for thick and creamy smoothies. The only problem? It’s no longer 90+ degrees outside and I have to be sure I’m wearing my fluffy socks and a fleece hoodie every time the craving hits.

    Solution: Make a smoothie and HEAT IT UP!

    So I have no idea if I’m the first person to ever think of this, but I’d be lying if I said I wasn’t patting myself on the back for this latest stroke of genius!

    All the great flavor of a SMOOTHIE with the warm-tummy feeling of SOUP!

    Cook Time: N/A

    Ingredients (Serves 1)

    • 1/2 cup fat-free ricotta cheese <- Careful of sketchy ingredients! I recommend this one or this one.
    • 1/2 medium banana (fresh or frozen)
    • 1-2 cups, packed raw spinach
    • 1/2 teaspoon cinnamon
    • 1/2 cup unsweetened almond milk
    • 5-7 drops liquid stevia (optional)

    Toppings: Crushed cereal, banana slices, chia seeds, and warm coconut butter.

    Instructions

    1. Combine all ingredients in a blender and blend until smooth.
    2. Place in the microwave cook for 1-2 minutes until warm.
    3. Grab a spoon and slurp to your heart’s content…WITHOUT the goosebumps!

    • 1/2 cup raw, grated beets
    • 1/2 cup unsweetened almond milk
    • 1/4 teaspoon cinnamon
    • 5-7 drops liquid vanilla stevia (optional)

    Toppings: Crushed cereal, sliced banana, chia seeds, warm coconut butter, and what the heck, it’s a big bowl of pink…BRING ON THE SPRINKLES! <- Right, Sam? 😉

    Instructions

    1. Combine all ingredients in blender and process until smooth.
    2. Place in the microwave cook for 1-2 minutes until warm.
    3. Spoon. Slurp. Kick off those slippers and…smile!
