What can I say, if there is ONE thing I love more than alliteration, it’s rocking out a rhyme before reeling in the reekend! πŸ˜‰

So, after much gooberation deliberation, I decided to do a vlog after all. But not just any vlog…oh no, I decided to work in a little fitness as well! I set the stage living room, I donned my costume laced up my sneakers, and recorded myself showing you ALL…

Or well, at least that’s what I DREAMT the other night! πŸ˜‰

Unfortunately, I am still pretty FAR from starring in any You Tube fitness videos.

Baaaaaaaaa-UT!!!

In the last couple of weeks, I’ve not only been able to FINALLY ditch the crutch, but I’ve also transitioned from pool therapy to exercise on the stationary bike! Of course that’s with only a miiiiiinor amount of resistance, but still…PROGRESS! In the beginning of my therapy, it was all about building back the muscles that atrophied in the week following my surgery, but now, the focus is my range of motion.

Oh, and my therapist fixed me up with some good ol’Β duct kinesio tape the other day too! It actually helps support of the muscle fibers and encourages them to “snap back” after a contraction so that I can work on getting my knee to bend past Capt’n Morgan status…

Originally, the doctor thought I’d be ready to go back to work this Sunday, but during my appointment yesterday, we both decided that I should work a bit more on my flexibility/stability and also on improving my endurance as of right now…if I walk for longer than 30 minutes, I get seriously winded and start looking more like
Captain Peg Leg.

So she’s giving me one more week to whip this leg into shape before I’m ready to
walk the plank go back to work <- same thing though, right? πŸ˜‰

And speaking of swimming with the fishes…

But seriously, you guys have seen enough #yolkporn on here to know that I’m a lover of the poultry progenies, BUT in the last couple of weeks I’ve realized just how much they truly satisfy me…especially if there’s CHEESE involved, which reminds me…

I promised you guys a recipe!

Greek Bfast Wrap - UnwrappedI guess I didn’t get my fill of Greek the weekend before last, because I have been throwing feta and olives in just about everything lately…but this HAS to be one of my favorites!

Greek Breakfast Wrap

Prep Time: 5 minutes

Cook Time: 10 minutes

Keywords: stovetop breakfast high protein high fiber eggs whole wheat tortilla

Ingredients (Serves 1)

  • 2 large eggs
  • 1 Tablespoon unsweetened almond milk
  • 2 Tablespoons crumbled feta cheese
  • S&P to taste
  • 1 cup, packed raw spinach
  • 1 whole wheat tortilla/wrap
  • 2 Tablespoons tzatziki sauce (prepared or homemade)
  • 3-4 grape tomatoes, quartered
  • 2-3 black olives, sliced

Instructions

1. Set a skillet over medium heat and coat with cooking spray.
2. In a small bowl, whisk together eggs, milk, and salt & pepper.
3. Pour into skillet and scramble (about 3-4 minutes), adding half the cheese in the last minute of cooking.
4. Place spinach in a microwave-safe bowl with an inch of water in the bottom, cover with plastic wrap leaving a small vent for steam to release, and cook on high for 1 minute.
5. Spread tortilla with tzatziki, and top with scrambled egg/cheese mixture, spinach, cheese, tomatoes, and olives.
6. Roll, slice, and serve.

    You know Lovie, I LOVE wraps. And if it involves eggs, then I am a happy camper. I must admit, that I eat eggs in at least 2 meals a day. So if we will ever meet, look aout for a chicken with a blonde hair on the head, and running shoes (creat the image in your mind! It’s hilarious πŸ™‚ This wrap is on my must-try-recipe-list!!

    That egg wrap looks amazing…your photos are always so pretty; I don’t know how you get your wrap to stay together haha..mine always just ends up falling out all over the place!!!
    It depends what mood I’m in for my eggs – either..poached or omelette!

      Oh yes, I like a good poached egg too…I just usually don’t have the patience to wait for them to cook/the agility to get them out of the water without making a mess! Lol

      Wrap stuffing is definitely an art that took some practice. I use to be a chronic overstuffer, but now I’ve got more of a sense of how much I can fit in the little buggers! πŸ˜‰

    I love any kind of eggs, but runny are my favorite! I miss runny eggs since pregnant! Soon enough I will have again!

    Thank you for posting that recipe! I’m obsessed with breakfast burritos but never never would have thought of making a Greek one. Awesome. Also, do you notice how sometimes tortillas can be totally disgusting? There are only certain brands I’ll buy! I’ve recently started buying corn tortillas and they’re super tasty. Sadly in England we don’t really have options of ones like spinach or other flavors you find in the US.

      Omg yes! All tortillas are not created equal by any means! Have you ever tried a brown rice tortilla? If not…DON’T! The minute you try to roll/fold/TOUCH them, they crumble into 40 thousand pieces! Ugh!

    That Greek wrap looks fabulous. I wish we had those oval tortillas here though – they look so much better for making wraps than the circular ones. The circular ones just aren’t big enough! πŸ˜›

    I love my eggs scrambled with cheese too! That’s how my friend and I would always cook our eggs when we had sleepovers back in 5th grade and we thought we were culinary geniuses for coming up with that idea haha.

      Haha, exactly! I actually haven’t tried swimming just yet…the extent of my pool therapy was walking/bending/squatting and doing bicycle movements…the whole thought of kicking still makes me cringe! :-/

  9. Gosh, another week. Just curious– what have you been doing all this time? I’m sure you’ve kept busy, but I don’t know what I’d do if I didn’t have classes or somewhere to be everyday. I’d feel a little lost. Lol.

    No eggs for this girl… But if I could eat them again, they’d definitely be scrambled. Maybe with some melted velveeta on top. More likely in a wrap with sauteed onions and peppers. Boy does that sound good πŸ™‚

      Surprisingly enough, I’ve kept pretty busy! I usually go to bed kinda late (so I can sort of stick with my night shift schedule and not have to retrain my body once I start work again) so I typically don’t wake up until around 10 or 11am. I have physical therapy at the hospital 3 days a week and then I also do therapy on my own…in the pool/hot tub or now, on the bike or at the walking track! I’ve met up with a few friends here and there for lunch dates and in the last couple of weeks, I’ve finally been able to do some cleaning/organizing around the house. The other time I try to spend with the man-friend when I can! πŸ˜€

    I just wanted to let you know that you really rock the styling–without getting all ‘tied with twine’ frou frou.

  16. We call them dippy eggs! And if made correctly (I am very picky), they are my favorite. I do enjoy hard-boiled eggs, too . . . . and my very favorite thing is to enjoy deviled eggs! Congrats on how far you’ve come so far after surgery. The body is an amazing thing. How it can heal itself blows me away. Have a great weekend!

      Thank you so much Michelle! It really is amazing isn’t it? I was just telling my therapist the same thing yesterday…I went for WEEKS feeling like I was spinning my wheels and now I’m so close to “normal” that I can taste it! πŸ˜€

  20. Hi Heather. Yay for healing and progress. OK…I need to not read your posts with a full bladder, I just about pee’d my pants laughing at the Captain Morgan shot. That was TMI wasn’t it? And why do I feel so comfortable saying that to you!? I love eggs…could eat them every day. Lately, I’ve discovered “birds in a nest” and “eggs in purgatory”. Haven’t QUITE perfected the runny/firm ratio on them yet, but I’m working on it. Have a GREAT Friday Captain!!!

  21. In looking back over some old posts, I remembered this vegan quiche I made last year that was A-MA-ZING. Of course, it was so good, I overate the filling, and have yet to make it again. It has now been a year, so maybe I’ll try? I did make a tofu scramble this morning that was pretty fabulous.

    However, since I’m now eating eggs again, I think poached remains my favorite, although I am renewing a love for baked (inside of other vegetables or in tomato sauce) and discovering a love for FRIED a la sunny side up or over easy. I am NOT very good at this method. I know it is ready, and then I can’t get it out of the pan in time to keep it beautiful. (Sigh) As long as there is runny yolk, though, I am happy. Heck, I’m happy even if it is only slightly runny, as long as there is pepper and ketchup nearby.

      Ahhh, the world is just so much better with pepper and ketchup, right? I mean eggs…EGGS are so much better! πŸ˜‰

      I’ve actually gotten a few half-runny yolks lately for that same reason…just can’t seem to get it out of the pan fast enough! I actually broke a yolk the other day trying to get one out…I started to shed a tear until I realized it was salvageable! Lol

      Vegan quiche, huh? Innnnnteresting!

  23. eggs! haven’t been craving them much lately, but I do love them. My most recent favorite way to cooke them is either in a frittata or BAKED in a ramekin. I don’t know what it is about baked eggs but they’re always so light and fluffy – and you get the runny yolk too!

    As far as eggs go, I can eat them pretty much anyway fathomable. Fried, scrambled, baked, hard-boiled, omelette city, or part of huevos. Eggs are incredible little things, and I can’t imagine my life without them.

      I really need to try making my own huevos…or actually having them…yeah, now that I think about it, I’m pretty sure I’ve never even had huevos before! Omg, don’t hurt me!!! 😯

      I have to be in the mood for hard-boiled…something about that cooked yolk behind kinda chalky. And I’ve only baked an egg once…on top of a pizza. I ended up overcooking it though and it was kinda like rubber! Oops?

  26. Put feta cheese in anything and I’m there…. these wraps look AMAZING!!!!! I don’t like egg yolks (never have, even as a baby) unless they’re hidden very, very well haha but I loveee frittatas and quiches! Jesse and I are going through a quiche loving phase and making at least two every week (never thought I’d hear him asking me for spinach and vegetable quiches ;P)

  28. I have a love hate relationship with eggs. It is weird. Sometimes they taste really rubbery and weird, but other times they are melt in my mouth good. Your egg recipes always look delicious though and inspire me to try new things with my eggs, so I like them.

      Oh yeah, I know what you mean…there is a fine line when it comes to cooking an egg to perfection and overcooking it to rubberized status! haha! I hope you continue to experiment though…I’ve had far more good experiences than bad! And well, cheese or nut butter (depending on the taste your going for there) makes just about ANYTHING better! πŸ˜‰

  33. I FREAKING LOVEEEE EGGS TOO… But GUESS WHAT HAPPENED: My doctor told me I CANNOT CANNOT eat eggs anymore! OMFG, my life stopped – ha! And now I don’t even know what to eat for breakfast – I eat weird things like mussels and squid, lol!! Definitely NOT the same as eggs πŸ™

      Aww, you too? I had a partial meniscectomy and they also scraped out some arthritis that I had in the joint. What did you have?

        I had a bone graft put into my femur from a bone bruise/stress fracture. They tried to fix it with a calcium phosphate injection but my body REJECTED it. I’m the only one this happened to, btw. Whomp, whomp. I hope recovery is going well! My very first surgery was a menisectomy for both of my menisci and rehab went by pretty fast.

          Oh wow!! That’s CRAZY! I hope the recovery is going ok for you? How much time are they expecting before you’re back at it? They had ORIGINALLY told me it would be like 2 weeks for mine, but since they didn’t know they would be doing the debridement of the arthritis that sorta changed things up. Boo!
