Hey guys!
I hope you’re having a fantastic week!
Did you bring your party hats? Noise makers? Bibs? π
Because it’s time to get our Wednesday on!
As always, a big thanks goes out to Jenn, our FABULOUS hostess, who puts on the best bloggy shindig out there! Be sure to hop on over to Peas & Crayons, give her a shout, and check out all the other delicious link ups for the week’s What I Ate Wednesday celebration!
So, I’ve been working on a lot of recipes lately, some looking promising, others…
Obviously needing a bit more work.
First official pancake fail of 2o13!
Recipe coming…EVENTUALLY!
*grumble*
Since I’ve been a busy little bee in the kitchen lately, I haven’t really had the time to take pictures of a full day’s eats, but I DID manage to find some drool-worthy snapshots taken over the last couple of weeks…
Unsurprisingly, they’re all pictures of my breakfast…
Breakfasts?…
Break-fi?
Great…now I’m thinking of pie! π
While I haven’t had any pie, I did enjoy a little coconut cupcake the other day…which we will refer to as a MUFFIN for all breakfast purposes! π
Topped with a bit of Greek yogurt and shredded coconut, it was a nice quick eat before jumping into bed after a LONG night shift at the hospital.
A few other quick and easy/prior to face-planting eats:
Warmed peanut flour sauce topped with sliced banana and obligatory cinnamon (of course more was added after the photo) π
Coconut Banana Bread with SF Mountain Berry Jam and warm coconut butter drizzle.
And on a more savory note…
A BIG bowl of spaghetti squash topped with thinned hummus, tomatoes, cilantro, and fresh ground black pepper
Quick, easy, and not requiring too much from my zombie mind!
Of course, even on days where I DO have more brain capacity to whip up a creative meal, I’d rather just be lazy…
This amazingly SUPER THICK Greek yogurt mixed with almond milk and topped with this CRACK-TASTIC cereal
I may be lazy, but this took less than five MINUTES to throw in a bowl and kept me full for five HOURS…oh yeah, gotta love a big bowl of GREEK!…just don’t tell Cho I cheated on him! π
Because we had a date just a few days ago…
A Running with Spoons approved breakfast of Chobani Greek yogurt (I SWEAR it’s in there somewhere) topped with this cereal, sliced banana, persimmon, and creamy almond butter.
Seriously, one of the BEST combos ever!
Well, besides this one:
But you’ll just have to wait until FRIDAY for that!
It’s a little strange, a LOTTA good…
And umm, yeah, you might wanna bring that bib back with you! π
What’s the BEST breakfast you’ve eaten lately?
What’s your go-to lazy breakfast?
