Don’t worry, I’ll spare you my mad rhyming skills for today…but only because I’m totally brain-dead at the moment.
I had my sister over for a little pizza and movie action last night and tooooootally forgot about prepping this post until just before midnight. 😯 Of course seester-seester bonding time trumps just about anything, but I DID promise you guys a recipe! I just want you to know that this post is powered by kabocha!
Cold, straight out of the fridge, hanging out of my mouth as I type this, kabocha! 😉
But back to my shit…I mean my BOWL! 😯
I have absolutely NO IDEA how this combination came to me. A desperate attempt to eat all the things perishables before my trip? A sleep-deprived moment of confusion (though I have to say, it tastes a LOT better than peanut butter and garlic toast)?
Or was it just a stroke of #strangebutgood brilliance?

“Tofana” Porridge

Prep Time: 2-3 minutes
Cook Time: 45 seconds (optional)

Ingredients (Serves 1)
- 1/2 package organic silken tofu
- 1/2 medium-sized banana
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 Tablespoon unsweetened cocoa powder (optional)
Instructions
1. Combine all ingredients in a bowl.
2. Mash with a fork until mixture reaches desired consistency.
3. Serve cold or microwave on high for 45 seconds if you prefer (I liked it both ways!)
4. Top with fresh fruit and nuts, nut butter, and/or granola.
Or perhaps it’s not really strange at all. PerHAPS the strange part is my apparent need to laugh in the face of danger at expiration dates…
For the record, it’s a week later and I am STILL alive! 😉
