I know you’re probably not all that surprised to see the combo of peanut butter and pumpkin on the blog AGAIN, but you know I just can’t help myself! Though I REFUSE to put this in the category of just another boring food phase because this wrap…oh my gosh, you guys…SWOON-WORTHY!

This was IN FACT a mouthgasmic moment.

With its sweet creamy filling, the smooooooooooth drizzle of coca sauce, and my GENIUS decision to top it off with peanuts and cereal “sprinkles”…hmm, I should trademark that…I was ohh’ing and ahh’ing my way to bliss…all the way up to the moment where I licked the plate clean. πŸ˜‰

Peanut Butter Pumpkin Banana Wrap

Prep Time: 5-10 minutes

Cook Time: N/A

Ingredients (Serves 1)

  • 1 whole wheat tortilla
  • 2 Tablespoons peanut flour + water (or almond milk) to thin to a peanut butter consistency OR 2 Tablespoons of creamy peanut butter
  • 2 Tablespoons pumpkin puree (not pie filling) + cinnamon
  • 1 medium banana
  • 2 Tablespoons cocoa powder
  • 1 1/2 Tablespoons water (or almond milk)
  • 5-7 drops liquid stevia (or other preferred sweetener)
  • Crushed peanuts and cereal for topping

Instructions

1. Lay tortilla flat on a plate and spread with peanut flour mixture (or peanut butter), leaving 1 inch around the outer rim.
2. Spread the pumpkin puree on top of peanut flour mixture and sprinkle with cinnamon.
3. Place whole banana on top and carefully roll together.
4. Slice in half with a serrated knife.
5. Combine cocoa powder sauce and drizzle over top (or use it as a DIP!)
6. Sprinkle with crushed peanuts and cereal.

  8. This has solidified that I need peanut flour in my life. It’s kind of ridiculous that I don’t have it yet… any way I know for a fact that PB, pumpkin, and chocolate are a delicious combo, so I know this wrap would be amazing, too! I love the styling you did with this photo, too. I think the chocolate drizzles look like perfection.

      Aww, thanks Ang! I was pretty shocked with how great the photos actually turned out since I took them in a hurry and then cleaned the plate in a matter of minutes! Ha!

      And you will most definitely NOT regret the peanut flour! I honestly can’t picture myself going without it!

    Is it bad that sometimes mid-summer I could totally go for some kind of pumpkin dish? Also, pumpkin+sage = good. Or, pumpkin + hummus… Or, pumpkin + spoon…

Love pumpkin and hummus (or a spoon)! Have you ever tried using pumpkin (+ some spices) for a pizza base instead of tomato sauce? It's great!

      • I have!! I have also crafted a pumpkin based salad dressing and a sauce for pasta (I do not eat much past now, but when I did!) Pumpkin Roasted Chickpeas, is something else I made once. YAAMMY.
        Where I live, there is a local bakery and they sell pumpkin muffins…

  32. Crazy coincidence- the packers came today to move my stuff into storage in Sydney until I find a place and in one box was 2 of the bigger packs of peanut flour, 2 cans of pumpkin and 2 tins of coconut flour. They were perplexed.

    This combination looks amazing- I love making a spread of pumpkin, peanut flour and protein powder and with the added banana AND chopped peanuts? Winner Heather. Winner.
