Confessions of a Pancake Queen: The Dark & Dirty Edition

Forgive me, Spatula, for I have sinned…

Spatula

It has been SEVENTY SEVEN days since my last confession. Surely I am destined for pancake hell…aka, the land of expired leavening agents, no cinnamon, and runny sugar-free syrup.

Two months ago, I planned on confessing all my secrets behind making the best VEGAN pancakes, but then I realized something…

Vegan Pancakes CollageDark & Dirty Confession #1:
I have absolutely NO IDEA what I’m doing!

It’s true! Most of the time, I just get lucky…and some of the time, I make the recipe over and over and OVER again until something somewhere (the planets align, I hold my mouth just right, I rub my head and patty my tummy with my spatula) connects and out comes a pancake…or two…or three! 😉

Sometimes, you can stuff them with something (pumpkin, banana, beets?) and they’ll fluff up a bit better versus just using ground flax for an egg substitute…or you can use more flour…or sometimes, a bit of coconut flour can help, but you have to be careful with it because without enough binding ingredients, you’ll end up with something like this…

Pancake Fail

Oh I’m sorry, do those look GOOD to you?

What if I told you after cutting into those babies, I discovered they were
COMPLETELY RAW on the inside?!

Pancake Win

Ok, that’s better…but still, NOT vegan!

For the record, no amount of peanut butter was going to make that pancake fail any better. In the trash they went…which meant by the time I was photographing the second plate, I was about ready to cry chew my arm off!

Dark & Dirty Confession #2:
Sometimes, I’d rather just have a bowl of cereal.

And speaking of pancake fails…

Coconutty Protein Pancakes

Coconut Pancake Fail

Remember this?

Welllllllllll, in an effort to figure out what the hell went wrong what changed when I tried to make them again, I finally came to a conclusion…

Dark & Dirty Confession #3:
I’m human and sometimes, I make mistakes.

It took me a while to remember, but in the original recipe, I had planned on using coconut milk as the liquid, but when it came time to make the cakes, I didn’t have any on hand so I just used almond milk. Now you wouldn’t THINK that would make much of a difference, would you?

Pancake Fail 4

Wrong.

Pancake Fail 3

Wrong.

Pancake Fail 2

WRONNNNNNNNNNNG!

Why God? Whyyyyyy!?

Also, my suggestion for using a plant-based protein powder in place of the whey I used?

Uhn uh!

But with almond milk and WHEY protein?

Coconutty Protein Pancakes 3Pancake PERFECTION! Recipe here! 😀

Although I have no idea as to WHY!

And speaking of pictures, while I’m on this “baring all” sort of post…

Thin Mint Cookie Pancakes

I literally CRIED over these pancakes.

Before the final post, there was not one, not two, but THREE “photo fails”. Looking back now, I can see what the man-friend was trying to tell me as I sat in front of my computer with tears of frustration streaming down my face (seriously, the man deserves an award for putting up with my crazy!)…the pictures look fine, but at the time, they did NOT match up to Heather’s perfectionist standards.

Thin Mint Pancakes Fail CollageDark & Dirty Secret #4:
My perfectionism sometimes stands in the way of my happiness sharing a recipe.

The lighting wasn’t right, most of the drizzle shots showed motion, the placemat wasn’t working…oh, and how about I just HAD to make a special trip to the store SPECIFICALLY for that frickin’ mint garnish!!

In the end I was able to “salvage” three shots from the FOURTH attempt for the final post that didn’t have blur and that didn’t show the mint leaves drowning in a pool of  chocolate sauce. And as for the placemat situation?

Lucky Pancake ShirtI ended up getting lucky 😉

You guys know me, I pretty much always make a joke to lighten the mood, but my last and final confession for the day is one of the hardest to admit…

*takes a breath*

Dark & Dirty Secret #5:
I don’t WANT to make pancakes anymore.

Now I’m not saying I’m done with them forever, but I WILL say that last day I remade those Coconutty Protein Pancakes was the last day I flipped a cake…and that was over two months ago. Every time I think to make pancakes, I come back to the stress OR I start thinking numbers…serving sizes, calories, carbs, sugars, fats, ahhhhhhhhh!

So forgive me, readers, but your Pancake Queen is going to rehab on hiatus until further notice. Please direct all hate mail to the following address:

For my bloggers out there, do you stress over your pictures?

What is your favorite breakfast right now?
I have to admit, I’ve been the rebelling against all things vegan (joking of course) and have been enjoying my fair share of yogurt messes! 😉

ABCDEF Friday!

Hey guys!

Happy Friday! I hope all my US peeps had a fantastic Independence Day…and perhaps enjoying a little long weekend with ME? We had some crazy storms all day yesterday and into the evening so there were no fireworks for me. Just a quiet night at the house with the man-friend, a big bowl of popcorn, and some instant-streaming Netflix…we’ve reached boring old couple status and I’m not complaining ONE BIT!

So I’ve been seeing this little ABC survey floating around blogworld for the last few weeks and since I had absolutely nothing planned to post it’s Friday, I thought I’d join in! Plus, you guys should know I can NEVER turn down a good quiz!

A. Attached or Single?

Me & The Man-Friend

Attached, to my ANYTHING but boring, food-lovin’ lizard man!

B. Best Friend?
I could never pick just ONE…my mom, my sister, my high school besties, my Blends…I am TRULY blessed to have so many people in my life that are there for me whenever I need them to offer an ear, a shoulder, or a good ab workout!

C. Cake or pie?

Cake Outside

Cake…especially of the in-the-breakroom-and-free-for-the-taking variety!

Cake InsideAnd ESPECIALLY when it’s the best FREAKIN’ GERMAN CHOCOLATE in the WORLD!

Yeah, I got a little excited.

D. Day of choice?
Any day I don’t have to work…well, except for Thursday. That is my “get back to normal” day…aka “little to no  sleep” day, aka “Heather is a total b!tch” day! 😉

E. Essential Item?
When you’re in the kitchen and as accident prone as much as I am, the need for a good SHARP knife cannot be stressed enough! Seriously, I swear it took me YEARS
(and a whole lot of bandaids) to learn this!

F. Favorite color?
Green is always the color I claim to be my favorite, but I’m always drawn to pink things when it comes to accessories, black when it comes to clothes…

Blueberry Beet & Goat Cheese Salad

And ALL THE COLORS when it comes to food! 😉

G. Gummy bears or worms?
I confess, sour gummy worms is my one convenience store weakness!

H. Home town?
Good ol’ Ashland City, Tennessee…where, when I was growing up, there were a total of one, two, THREE stop lights!

I. Favorite Indulgence?

Froyo

The NUMBER ONE reason I could never be vegan! 😉

J. January or July?
Definitely July…I’ll take the heat and humidity over ice and snow any day!

K. Kids?
I know, does ANYONE understand them?! I mean, WHAT are they?

L. Life isn’t complete without?

Family

I can’t imagine what life would be like without my family. This pic was taken in 2010 after my dad came back from an eight month deployment before he retired from the air force.

M. Marriage date?
Ohh, let’s not go there, mmkay?

N. Number of brothers/sisters?

Me & Tori

One gorgeous little sis!

O. Oranges or Apples?
Apples…another reason to love fall! Random, but do oranges give anyone else nightmares? Anytime I have one before bed, I’ve have the CRAZIEST dreams!

P. Phobias?
I don’t have many, but seriously don’t get ANYTHING with creep crawly little legs within a FOOT of me…that is, if you value your life!

Q. Quotes?

Learn From Yesterday Quote

My current favorite and the background on my computer and also one of my favorite pictures that I’ve taken.

*Pats self on back*

R. Reasons to smile?
It improves your mood, releases endorphins, lengthens your lifespan, lowers your blood pressure, AND makes you look more attractive! What more do you need?

S. Season of choice?
Few things get me more excited than all the seasonal  fruits and veggies I can find at the farmers’ market right now, but since I live in hell the south, I’d have to say the cooler temperatures of fall, along with the smells of tobacco barns and the changing of the leaves is my most favorite time!

T. Tag 5 People.
Make me! 😛

U. Unknown fact about me?
For years, I wanted to be a veterinarian. When I was in high school, I got the opportunity to job shadow at a local vet clinic and I thought it was the coolest thing…until, five minutes into a cat spay, I had to excuse my self, run to the lobby, and put my head between my legs. Wait, you mean I can’t just get paid to pet fluffy animals all day?!

V. Vegetable?

Mexican Lasagna

All of them…preferably in ONE easy to cook dish! 😉

W. Worst habit?
I’m late…to EVERYTHING! I’m always pushing the limits on my time and then running around like a chicken with my head cut off trying to get out the door!

X. X-ray or Ultrasound?

Scrubs X-Ray School

Well, being as I graduated from X-RAY school, I think that’s pretty much a no-brainer there! Oh and just so you guys know, it took me and my classmate like FIVE HOURS to make those x-rays behind us…obviously we were using our clinic time wisely!

J.D. would be proud! 😉

Y. Your favorite food?
PIZZA!!

Z. Zodiac sign?
Sagittarius…though I rarely ever look it up.

Your turn…
Pick the first letters of your first and last name
and tell me your answers!

When Foodie Met Foodie

If there is one thing the man-friend and I love,

It’s Pizza.

Sushi 1. Sushi 2Sushi 4Sushi 3Sushi 3.1

Or it could be sushi.

Froyo with The Man-FriendFro-yo

Sweet CeCe's FroyoNo…no, it’s definitely froyo*

Let it be known that HIS is the one with the fruit…and this is the ONLY pic I have of a cup of his since he’s usually a quarter of the way through it before mine even gets to the scale! Ha!

Or maybe it’s…

FoodiesBreakfast, carrot juice, fish and chips, white wine, ice cream, grilled deliciousness, German food, southern grub, or freshly popped popcorn

Food!

Whether it’s firing up the grill at homerelaxing by the laketraveling to fun and exciting cities, or  going to Sam’s for “lunch”, we definitely know how to get our grub on and get it on good. We both love trying new cuisine, get excited for weekend trips to the farmers’ market, and could spend HAVE SPENT hours shopping for fun foodie finds! I never hesitate to share with him one of my newest creations and he never fails to hide his enthusiasm for my love of cooking…even if that means advertising my blog to his friends everyone we meet! 😯

I’ll admit it, the first thing that lured me in (besides his super sexy thumb and forearms…did you see those?! ;)) was his energy and how passionately he spoke of his food experiences while traveling to other countries (he’s seen a LOT and I’m totally jealous!)…but I was putty in his hands the minute I realized  I didn’t have to break out Wikipedia to explain quinoa, chia seeds, or kombucha! And as I think about how we cuddled on the couch last weekend, watching episodes of Best Food Ever and totally dreaming up vacation destinations based on what we were currently drooling over, I can’t help but smile.

WIAW TealBe sure to head on over to Peas & Crayons, where Jenn knows a thing or two about being a good foodie and hosting the best shindig to hit blogworld since overnight oats! 😉

Does your significant other (or closest friend, if your single) share your foodie enthusiasm?
