Be Careful What You Wish For!

First off, I want to thank you guys SO much for all the birthday wishes
on Monday’s post!

I also want to take a minute to rally all those willing to join my backward aging movement…though I’m thinking once we hit eighteen, we can make our way back up, so I guess it’ll be more like yo-yo dieting aging! 😉

I had a great birthday weekend and I couldn’t WAIT to share it with you guys, but what could wait was how it got started…

Remember how I mentioned in my last Currently post that I really needed a week off from work? Well, last Wednesday, I got just that, only things didn’t pan out quite like how I’d envisioned…

Yep, at the ripe hour of 1pm (equivalent to 3am for you day-walkers), I awoke with the feeling that all my insides wanted to come OUTSIDE!

I’m not sure if it was something I ate at work the night before (I DID venture into the cafeteria for a little something) or if it was the bug that’s been going around here, but after a couple of hours of lying in the bathroom floor praying a priest would come exorcise whatever demon had taken up residence in my stomach, I gave up and called in sick to work. I can seriously count on ONE hand the number of times I’ve called out sick in the six years that I’ve worked at the hospital so yeah, this was a big deal!

I popped anti-nausea tablets like they were candy. I slept rolled around in bed since it felt like my arms and legs were literally being crushed by the blankets. I called my mom. I walked around the house and whimpered,

“Why-yyyy-yyyy-yyy?!”

With a can of LaCroix constantly glued to my hand, I somehow managed to make it through the day, and as far as food goes? Well, that was the LAST thing on my mind! Actually, besides some single pieces of purposefully burnt toast, I didn’t eat a full-fledged meal until Thursday afternoon and even then, it took me a good two hours to finish!

Banana Eggs & Toast

Since I wasn’t miraculously being healed and I sure as hell wasn’t sleeping, I thought I’d catch up on some blog reading, but unfortunately, that lasted a whole five minutes since I realized the sight of food make my stomach tremble and I didn’t even have enough energy to click the mouse! So instead, I pulled up Netflix and clicked on the first thing in the “Top Picks for Heather” and as it turns out, Netflix knows me pretty well! 😀

Has anyone else seen this yet? I’ve never been a HUGE Sex & the City fan, but since I’ve already made it through nine of the thirteen episodes in season one, I think it’s safe to say I’m diggin’ this little prequel!

And seriously, how gorgeous is young Carrie Bradshaw?!

So yeah, out of five and a half days off surrounding the day of my birth, a third of them was spent carving an indention of my body into my couch, a third was spent carving an indention into the MAN-FRIEND’S couch, and a third was finally spent celebrating my birthday…good thing I made the most of it with that trip to Costco, huh? 😉

Oh and just FYI, before I was out for six weeks after my knee surgery, I “wished” I could have a month off…seriously, will I ever learn?! Lol!

What is your go-to sick food?
Is it just me or do scrambled eggs just scream “GET WELL SOON!”? But can you believe Tiger never ONCE offered to make me chicken noodle soup?!

What have you been watching lately?
I also managed to make it to the movies with the man-friend Friday night (funnily enough after going to Panera for some chicken noodle soup) to see Catching Fire! While I was NOT a fan of the first movie, I thought this one was great…definitely go see it if you haven’t already!

Birthday Confessions

Birthday Biscuit

I’ll take a birthday biscuit over cake any day!

I knew I wanted to keep things low-key for my birthday so when my mom asked what I would like her to make for us for lunch on Saturday, I resorted to my list of childhood favorites. Since I’ve already done pot roast and chicken pot pie in years past, I decided this year, I would request my ALL time favorite…BREAKFAST!

Birthday Brunch

I CLEANED my plate and then used another half a biscuit to lap up the yolk from my sister’s plate…can you BELIEVE she was gonna let that go to waste?!

Every Sunday when I was little, my mom would make a big breakfast spread…eggs, bacon or sausage, fried potatoes, fruit, and biscuits with anything you could want to top them with and on Saturday afternoon, I got JUST THAT…and it was just as good as I remembered! Actually, it was better because we had MAPLE bacon and booze!

Birthday Bubbly

I cracked opened a bottle of champagne at 11:30am…and umm, squealed like a school girl when I popped the cork on the front porch and watched it soar across the yard.

Seriously? Mimosas! How did I ever eat breakfast without them! Thank you Meghan for being such a bad influence! 😉 After we ate, it was time for presents!

Birthday Basket

I got a bowl of produce for my birthday…and I LOVED it!

Brussels sprouts (which I’ve actually been hunting for since Thanksgiving), the cutest little mini peppers, two ears of corn, an avocado, an apple, a persimmon, a quince (never tried before!), a butternut squash, and the bottom of the bowl was filled with sweet potatoes and mixed nuts…my parents totally spoiled me! Oh and I couldn’t help but smile when my mom told me that my dad picked the bowl out himself and was totally stressing out about whether I would like it or not! Too cute, right? Obviously I love it…especially since I think it looks a lot like Chelsea’s that I’ve been lusting over for a while!

Birthday Scarf

I lived in this scarf ALL weekend!

My sister found this wonderfully soft and incredibly HUGE infinity scarf at Old Navy. It’s not a color I would normally pick out for myself, but seriously, I am in LOVE with it and I already want to go and see if I can find some gloves to match! She also got me a cute little hoop for my nose! What do you think? Can I pull off the hippie look? 😉

After hanging with my family for most of the evening, the man-friend and I traveled back to Nashville. I decided on Thai for dinner and while the meal really wasn’t NEAR as good as last time, we still had a great time and…

Birthday Tea

I was in my PJ’s with tea in hand by 8:30pm.

We cuddled on the couch for the rest of the night watching Netflix and seriously, I couldn’t have been happier…well, until the next morning when he took me to Costco to pick up my present!

Birthday Food Processor

I turned down a Vitamix for a food processor.

Ok, ok, OKAY!! I know I’m probably committing some sort of cardinal food blogger sin, but honestly, I just don’t feel like it would’ve been worth it for him to spend that much on a blender that I don’t necessarily need. You see, I already grind my own flours with my wanna-be Magic Bullet and really, I can count on one hand the number of times I made a smoothie this year soooo….

BUT as I stood there in front of the food processor, reading all of the stats, pointing out that it was pretty cool that it came with a dough hook, but still hemming and hawing over it, I still just couldn’t pull the trigger. So he rolls our cart up to the display, bumps the box on the top with his shoulder and after we watched it slide down his arm and into the cart, he says, “Omg, would you look at that! Well, it’s too heavy to pull out of there so I guess it’s coming home with us, huh?”

*Insert as many “awwww’s” as you’d like here* 😉

After that, we walked around the store, picking up some samples, and finding things for Christmas gifts for his family when I spotted something I didn’t have to think one minute about buying…

Divergent Trilogy

I bought MYSELF a present for my birthday.

This is actually one of the THREE things I’ve bought over the last couple of days…umm yeah, hi! 😉 The rest of the night was spent shopping at two of our favorite stores, Marshall’s and World Market, resting our legs while sipping chai lattes at a local bookstore, and meeting up with some friends for dinner.

This year marks a new beginning in my aging process. 

Twenty-nine was just a bit too close to thirty for my liking so I’ve decided that I am now twenty-eight again…and next year I will be twenty-seven. But no matter how YOUNG I get, I’ll never resist an opportunity for a good selfie! Or three as this post goes to prove!

Oh and I guess I should also confess to not even THINKING about blogging this weekend…which is why I’m “telling it all” on a MONDAY! Sorry I’m not sorry, but for the first time in a long time, I was just enjoying the moments and having FUN and it was EXACTLY what I needed!

But I do want to say a BIG thank you to everyone who sent me birthday wishes on Facebook, Twitter, Instagram, texts, and phone calls…you all seriously know how to make a girl feel loved! 🙂

Mini Kabocha Cakes with Chocolate Yogurt “Frosting”

You guys are AMAZING! Looks like I’m not the only one out there who is obsessed with the Quest! 😉 Seriously! I mean, I was impressed by Monday’s turnout, but with almost NINE HUNDRED entries for the latest in the Broccoli Birthday Bonanza, this one totally takes the cake!

Truth be told, I’ve been holding out on you.

While experimenting with my Chocolate Glazed Kabocha Donuts, I couldn’t help but get a little festive knowing that big birthday celebrations would be happening this week…sooo I made a cake mini cakes…filled with sugar protein and spice and EVERYTHING nice!

Mini Kabocha Cakes with Chocolate Yogurt “Frosting”

Prep Time: 15 minutes

Cook Time: 20-25 minutes

Ingredients (Makes 6 cakes)

    For the Cakes

    • 1 cup pre-roasted kabocha squash, cubed (150g)
    • 1 cup water
    • 1 cup oat flour, ground from rolled oats
    • 1 scoop Vega One protein powder, vanilla chai flavor
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 Tablespoon NuNaturals tagatose (or preferred sweetener that measures like sugar)
    • 1 large egg
    • 3 large egg whites

    For the “Frosting”

    Instructions

    1. Preheat oven to 350°F.
    2. Coat the inside of 6 small oven-safe ramekins (or a large muffin pan) with cooking spray (or coconut oil) and set aside.
    3. In a small blender or food processor, blend squash and water until creamy.
    4. In a medium-sized bowl, combine flour, protein powder, baking powder, salt, tagatose, and spices and stir with a wire whisk to break up any lumps.
    5. In a separate bowl, whisk together the squash mixture, eggs, and vanilla.
    6. Add wet ingredients to dry ingredients and stir until just combined.
    7. Separate batter evenly into prepared ramekins (or muffin pan) and cook for 20-25 minutes or until a toothpick inserted in the center comes out clean.
    8. Allow to cool for 10 minutes before turning cakes out onto a wire rack to cool completely.
    9. Prepare chocolate yogurt “frosting” my whisking all ingredients together in a small bowl until creamy.
    10. Transfer “frosting” to a zip-top bag, squeeze out any air and seal the top.
    11. Snip off a corner from the end of the bag and squeeze “frosting” onto completely cooled cakes in a circular motion then top with your favorite colored sprinkles!
    12. Store in an airtight container, in the refrigerator for up to 2-3 days.

    Note: You guys know I’m in NO WAY a baker…sometimes I just get lucky! Protein powders can be really tricky when baking so while the one I used worked perfectly in these cakes, I knew I couldn’t make any guarantees with other brands/sources. Instead of spending a week experimenting with various powders, in the end, I just opted to omit it altogether. But after getting the man-friend’s approval on these cakes, I just couldn’t keep the recipe to myself! So, if you have a little baking know-how and care to experiment, please feel free…and then come back here and tell me all your secrets! And for my fellow non-bakers, there’s always the original donut recipe.

    But let’s talk more about that frosting, eh?

    I’ve never been a fan of traditional cake frosting. It’s always much too sugary for my tastes and really, I’d rather just have the cake underneath, BUT with this Greek yogurt “frosting”, I couldn’t get enough! And since it’s low in sugar, I had absolutely no problem justifying having this cake for breakfast! It’s creamy, cool, and perfectly sweet! But you know what makes it taste even better??
