Hey there, my little lettuce lovers!

Seriously, I can’t get enough of you guys and your unending support in my recovery. I want you all to know that each and every comment brightens my day and makes me that much more positive that I’ll be up and dancing that jig (with can-can kicks and everything) in no time! 🙂

As you guys can imagine, the worst pain out of all this is not being able to get in the kitchen and just do my “thang”. But instead of pouting over the fact that it takes
ten years to hobble around and prepare a DECENT meal, I decided to look on the bright side and take this little “break” as a chance to experiment in other ways…

For the last few of weeks, I’ve been trying my hand at eating intuitively.
Perhaps you’ve heard one of  these girls talking about it?

I’ve flirted with intuitive eating in the past, and always thought it was in interesting CONCEPT but this time, I’ve decided to commit to the idea and APPLY it to my life.
I plan on explaining more in tomorrow’s post but for now, I thought I’d share a just little something I’ve noticed over the last few weeks while becoming more “attuned” to my cravings…

Pea Toast

Pea-licious toast with sprouts and almonds, broiled blood orange and runny egg

Roasted Cabbage with Avocado

Roasted coleslaw topped with pickled ginger, avocado, crispy wonton-chips, furikake and drizzled in TJ’s Island Soyaki sauce

Clean Out the Fridge Salad

Spinach topped with egg, roasted beets, apple crisps, drizzled with chestnut honey mustard and a sweet potato on the side stuffed with ricotta and FROG jam

Green Egg Sandwich with Pumpkin Cream Cheese

Toasted cinnamon raisin English muffin, microwaved spinach egg white monster “thing”, cinnamon, and pumpkin spice cream cheese

Pumpkin Cream Cheese

Limited Edition…aka “a piece of you will die once it’s gone”  😥

Spaghetti Squash Mushroom Marinara Salad

Spinach with warm spaghetti squash mixed with hummus & nutritional yeast topped with sautéed mushrooms and onions and jarred marinara

Roasted Cabbage Salad with Smoked Salmon & Blood OrangeSpinach (promise it’s under there) topped with roasted coleslaw, smoked salmon, horseradish mustard, blood orange, and sesame seeds

Reminds me of something Laura would make! 😉

Chicken Asparagus & Tomatos

Spinach topped with wild rice and cheese stuffed chicken (a fantastic all-natural score from Sam’s…and proof that sampling works), tomatoes, and steamed asparagus drizzled with mustard/nutritional yeast sauce

Cabbage Omelette

Egg white fritatta with coleslaw, sauerkraut (because what goes better with cabbage than MORE CABBAGE?!), cilantro, and hot sauce

Green Oats

Oats with spinach and cinnamon

Egg & Falafel Burger Salad

Spinach topped with roasted coleslaw and tomatoes, topped with a falafel burger (recipe coming EVENTUALLY…this one was thawed from the freezer from a past experiment trying to replicate this burger) and a runny egg

Things I’ve learned from eating these meals:

1. I REALLY have a thing for warm salads.
2. The combination of sweet AND savory will always win me over.
3. Roasted cabbage…OMG, why did it take me so long to do this?!
4. I, apparently, CANNOT LIVE without eggs.
5. And just in case you’re wondering…yes, that falafel burger WAS vegan until I bastardized it! 😆

  1. Yeahhh I’m all about the greens lately too- can never have too many and my last dose include broccoli, zucchini, lettuce and avocado :)! That green egg white puff looks so strangely good- I bet kids would lap it up ! I couldn’t imagine a life without eggs or apples- the former being why I would never even flirt with the idea of veganism! Looking forward to hearing more about your intuitive eating progress & hope your knee is feeling better, Heather!

      Oh girl, I KNOW! I love eggs (and yogurt) far too much to ever let them go! haha And I couldn’t believe how good the sandwich was…I swear it was one of those “I wonder how this would taste” moments! Unfortunately, the pretty little stack didn’t hold together at all and I ended up having to attack it with a knife and fork! Eh, messy food tastes better anyway, right? Lol

    Well Well Well… this post sure is filled with lots of green, heck your background color of your blog is even green! I feel like the Grinch just puked all over it… but man, it all looks good.. wow did I just compare puke to your food?? IDK why because I want it all in my tummy right now. Im quite intrigued by this spinach egg white sandwich of yours. Did you just mix spinach & egg whites together??

      Hahaha, yes, you most certainly DID compare my food to puke! Don’t worry, I’ll let you off this time…but only because you’re cute! 😉

      And yep! It was just egg whites, spinach, and a bit of cinnamon. Put it all in the magic bullet and then microwaved it for a few minutes…voila GRINCH patty! 😀

  3. These meals all look amazing! I’ve kind of been tire kicking when it comes to intuitive eating too. I feel like if I did it my inner fat girl from when I was a kid would just want to eat everything in sight 🙂

    Last green thing I ate was peas in a tofu curry dish I had tonight in Japanese takeout.

I'll be honest, the first few days were pretty tough...and well, I guess it didn't really help matters that I was on pain meds and my body/mind wasn't necessarily my own at the time, but I made it! I think it takes a few days for your body to adjust (and your mind to rest) before you can get the "silence" that you need to really listen to your body! Oh wow...that's good, I should add that to my post! 😉

  4. girl you are spinach crazy! and so curious to hear your thoughts on intuitive eating. i bought some books on the topic about a year ago – turns out i am not so great at this concept, but still love the idea of it (and wish i could eat more like this). curious to follow you along in your intuitive journey!!

      Aww, thanks “Daisy”! 😉 The spinach eggs are SUPER easy…just 3 egg whites, a small handful of spinach, and some cinnamon…pop it in a blender and then pour it in a microwavable mug (don’t forget to coat it with oil or you’ll be cussing instead of enjoying a delicious breakfast!) and nuke it for about 3-4 minutes (depending on the depth of your mug…I had to go a little longer since mine was deeper)!

  11. I basically have to eat eggs every day. Cannot get enough of them right now!
    And I really want the cream cheese. Although I’m slightly confused as to why it’s a limited edition pumpkin thing in March…that seems unusual. But nonetheless, I want it!
    Everything looks so good! Although I have to admit, the spinach egg white looks kind of terrifying. Like it would crawl out of that english muffin and try to eat me.

      Umm, well…maybe it’s because I’ve had it since the end of January?? Yeah, it’s totally like a month past it’s expiration date! 😯 Bahaha! #noshame

    I would have never thought to do a fritatta with sauerkraut!? Seriously babe!? SO genius. I am seriously just going to go through this entire post and PIN all of these. I think an egg over falafel is AMAZING and guess what – I’ve never had falafel before!!!!!!!!! So I will make that and owe the delicious experience to you 🙂 <3

      Awww, Meg!! You always know how to make a girl smile! Honestly, the sauerkraut was just a fleeting moment of genius…you know, the kind where you’re frustrated that you have too many jars of condiments in your fridge and vow to start using them up? That’s why almost every meal features some sort of spread, dip, or sauce…I HAVE TO GET RID OF THEMMMMMM! :O

      And seriously, falafel is soooooo good!     I follow intuitive eating too. I’m working with a great dietitian which has been really helpful. We Skype and email when I have questions. I’m a huge fan of IE

      That’s awesome! I’ve kinda been figuring things out on my own, but I picked up the book Intuitive Eating (which is awesome!) and I signed up for an IE “challenge” of sorts that starts in April where I’ll be able to have the support of the other participants and unlimited email access to the host who has been working with IE for years! I’m definitely excited to see how much I learn!

      Oh girl, it’s SO EASY!! And I’ve been using coleslaw mix to make it even EASIER! Just spread it out on a pan, spray it with a bit of olive oil, add whatever seasonings…or none if you like (I think it has a great sweet flavor on it’s own!)…and then pop it under low broil until it’s wilty! Only takes about 10 minutes or so?

  18. I think I’m too type A to be an intuitive eater. It’s pretty bad when planning out my meals for the next day is the highlight of my night : /. All of your meals are making me so hungry, and I just ate breakfast! Many of them will be added to my list of must try recipes!

      Ha! See, I’m the exact opposite…while I feel I’m pretty OCD about a lot of things, I’m also incredibly indecisive…definitely makes meal prepping/planning harder! Which is crazy, since the whole point is to make things EASIER throughout the week! Lol

    Man oh man, I want all of this in my belly right now. All of my favourite things, all together in big bowls of “yum.” Like some other posts… I’d love to know what you did for the egg/spinach concoction?? And roasted coleslaw!?!? What do you do for this!?

    I’ve been really trying to focus on more mindful and intuitive eating recently, so you’re timing to mention this is perfect. I’m finding that the most helpful and important things for me are eating SLOWLY, taking the time to chew well, and eating LESS but more OFTEN (5 meals a day rather than 3 larger ones). This has been a challenge, as I’ve always been one to love having huge epic bowls that leave me stuffed… gotta love that satisfied feeling. But sometimes that feeling is too much and leaves feelings of uncontrol. So I’m trying each day to really savour my food and stop when I’m just “satisfied,” knowing that I will then want to have something again in the next few hours. Days when I’ve done this have felt sooooo good. Balanced, controlled and healthy. Can’t wait to hear more of your thoughts on the topic.

      “All of my favourite things, all together in big bowls of ‘yum.'” <-Haha, too funny, I think I typed that exact same line on someone's blog the other day! 😉 The spinach egg thing is super easy...just 3 egg whites, a small handful of spinach, and a bit of cinnamon...pop it all in a blender and then pour it into a (greased) microwaveable mug and nuke it for about 3-4 minutes (time varies depending on the depth of your mug). As for the coleslaw, it's even easier: spread it out on a pan, spray it with oil, add spices (if you want...I actually prefer the natural sweet flavor it gets after cooking) and then set it under broil until it gets wilty. I think it was about 10 minutes or so! 🙂 That's awesome that you've been trying IE too! And yes, eating slower is a HUGE game changer...I swear, I can't tell you how many meals I've downed in 5 minutes or less...no wonder I had a hard time recognizing my that full feeling! I never gave my brain enough time to process it! And I couldn't agree more on the smaller meals. Whenever I eat a heavier meal, I feel, well...heavy! Slow, sluggish...it doesn't make for a very productive Heather, that's for sure! As of right now, it's been easy since I'm at home most of the day, but I'm curious to see how it goes once I go back to work in a couple of weeks. I mean, it's easy to pack snack bars/granola/fruits/veggies and stuff, but it's not as easy to know what I'll WANT when the hunger strikes. Guess we'll see! 🙂

      Oh man, CHEESECAKE! Yes!!! I’m actually kicking myself for not emailing you…I wanted to let you know that I picked up a copy of Intuitive Eating last week and…although I’m only a couple of chapters in, it has definitely been eye-opening. Now it’s just time to put it into practice! How’s your journey been going?

      • My journey is going well. I won’t lie, my clothes are fitting tighter and my exercise habits are exactly consistent as they were last year but thankfully this is all a part of the process. I have had occasions where I overate, due to crazy boredom mostly, and I caught myself with the negative food police but I am able to catch it now and replace the negative thoughts with positive. I am still in the process of truly realizing that I can eat anything I want, sometimes ill eat too much nut butter when I’m at my parents house because they always have it and ill think “it’s okay I haut won’t eat it for a week now because I wont have access to it, I ate a lot of it” but then I catch myself and think, “no, I can go and buy more if I begin to want it. I can have it whenever I want. This is not my “last occasion to have it”.

        How’s it been going for you so far?
        I would love you to email me whenever if you wanna talk about stuff privately too! I don’t really have many people to talk to abut it outside of the blog.

  25. Okay, and these are the meals when you’re feeling like you CAN’T do you your thang?!?! wow. I seriously want to come over and just eat with you, for like a week or something. Cause otherwise, I don’t know how we’d squeeze all those delicious meal ideas in. 😉 The ingredient combos are incredible–I’ve got to try a few of those out. Specifically the sweet egg thing that stuftmama always talks about. I LOVE warm salads. Seriously–even in the summer. I love the contrast of some crisp with some warm. Mmmm. And roasted cabbage–I just tried it about a month or so ago, and can’t get enough! Same with roasted celery. I’ve been missing out. It’s incredible. I’m curious to hear more about your intuitive eating. It’s been a hot topic around the blog world lately. 🙂

      Roasted celery! That’s on my list! I actually just picked some up at the store the other day so that I can give it a try. It’s funny how many things I never thought about roasting until recently. Have you ever had roasted grapes? They are absolutely AMAZING! And yes, the contrast of the warm salads is great! I love topping a big plate of spinach with chili…YUM!

      And honestly, if it were for the healthy supply of veggies and unhealthy collection of condiments in my fridge, most of these meals wouldn’t have been possible! Since I came home from my surgery, I have vowed to not open another jar of mustard, sauce, or dip until at least HALF of what’s in the fridge is gone! LOL

    Also awesome is that I was eating a salmon + fruit creation as I read this. Salmon witih curry leaves and watermelon. It’s good. Really.

    And YES to roasted cabbage. It’s the jam. Hmmm… I wonder if it would be good with jam…

      • Not at all! Like a slightly bitter, crunchy leaf. When they cook they mellow out some and get a little bit of a lime-citrus taste. Really cool!

  27. Oh my, you make me crave greens like crazy – and I mean CRAZY! Every of your dishes looks absolutely incredible. Can I please come over and eat any (vegan) leftovers??? I’ll bring some Oreo cookies in exchange ;).
    The last green anything I ate – intuitively, actually, as it’s something I’ve been working on, too – was a kabocha-peanut-spinach stew for … breakfast. Don’t judge but I just didn’t feel like blueberry oats at all and felt so much more satisfied afterwards.
    Are you going to share the recipe for the roasted coleslaw? I’m German after all and not nearly eating enough cabbage or sauerkraut to live up to the cliché ;).

      No judgement here AT ALL! Remember, I’m the girl who ate an Elvis burger for breakfast TWICE last week! Lol Plus, I think it’s awesome that you are cueing in to your cravings! Though I’m surprised you weren’t feeling your oats though since you were just raving about them the other day! Funny how we fall in and out of food phases/obsessions, isn’t it?

      The coleslaw is so ridiculously easy…no recipe required! Just spread it out on a pan, spray it with cooking spray, add spices (if you want, I actually like the natural sweet flavor it gets), and then pop it under the broiler until it gets nice and wilty…maybe about 10 minutes or so? I love it…so much so that I seriously plowed through a pound of it in like 3 days by eating it this way! 😯

      Mmm, Oreooooooooooooooooos!

  28. First of all, I really enjoy intuitive eating! I’ve been doing it for almost a year now, and I sincerely believe it’s the best way to eat. And second of all (speaking of eating), can I just say that your photos are making me hungry. 🙂

  30. Your love for eggs is like my love for cereal and yogurt… can’t imagine life without those two things. There are times where I’ll be craving a yogurt bowl for lunch and I’ll pair it with a salad on the side because I’ll still want to get my veggies in 😆 Not really your typical lunch, but it works well for me… and it’s all about going with what your body wants, right? I think it’s awesome that you’re starting to experiment with intuitive eating a little more. I’ve been doing it for a while and I’m REALLY liking the way I’ve been feeling. Now if only I could get myself to start feeling more greens…

      Girl, I have TOTALLY done the yogurt with a side salad before! I couldn’t help but laugh at myself the whole time too, but hey, it’s what I WANTED so that’s all that matters, right? And really, as much as I love my eggs, I swear I haven’t been able to go ONE day without yogurt in like 3 weeks! I think I’ve been reading your blog too much! 😉

  33. I have days when I want nothing more than to munch on raw veggies all day – I crave that fresh taste! And then (usually in the dead of winter) there are some days when all I want is warm food. Usually in the form of spicy Indian food. Actually I often just crave Indian food!

    I find that crave variety. There are days when I’ll eat eggs twice a day for three days straight, then want nothing to do with them for the next week.

    One thing I cannot live without? Crunchy things. Raw veggies, roasted chickpeas, nuts, toasty bread (I somehow am not really attracted to chips and crackers though), and cookies. Definitely can’t live without cookies.

      I’m kind of a wimp when it comes to spicy food, but whenever the craving hits, all I want is Ethiopian! Plus, it just gives me a reason to eat with my hands! 😉

      I definitely crave a lot of variety. That is probably one of the first things I started to notice since I haven’t been working on recipes non-stop lately. Whenever I make a recipe and it doesn’t come out on the first try, I get so OCD about it and will make it over and over and over until I get it right…even if it’s not what I want to eat! I know, I’m crazy!

      And I’m just as crazy when it comes to crunch! I’ve GOT to have my raw veggies (going through a bit of a celery kick right now), cereal, granola, and the apple crunch crackers from Dr. Kracker are INSANE! I’m not even much on chips and crackers normally! But my cookies? My cookies HAVE to be chewy and soft!

  34. All these recipes look amazing!!! you had some pretty delicious eats this week, I’m jealous! Looks like your love for eggs is like the love I have for kale chips haha! I could eat kale chips all day, everyday! Weird I know but I just can’t get enough! I’ve noticed I go through phases though. For awhile I’ll be obsessed with one food, then I’ll change my craving and be obsessed with that food! I JUST LOVE FOOD , I guess!

    Your green oats sound delicious so I think I’ll make some now 🙂

      Oh, I am the same way! I can have the same exact breakfast every day for nearly a week straight and then move onto something else and not even think about it again for MONTHS! And it’s not that I get burnt out on it or anything…I just think I have foodie ADD! 😉

  35. Good for you; I think listening to your body is the way to go, except when it tells you to eat the cookies, ALL the cookies. I think mine actually says eat just one or two cookies, but then some other voice takes over with the “all” business.
    It seems you’re body is on a protein/iron kick with the eggs and spinach. It all looks great to me, but I’m a huge fan of green food and your photography.

  38. Omgnesss….You’re seriously making me hunnnngry as I’m already getting there! I love hearty, wholesome meals b/c they’re filling and satisfying. I’m all about the variety of textures and smells, so having a bunch of random veggies in one plate makes me smile. And that rice stuffed chicken sounds so fantastic!

    The last green thing I ate was a few spinach leaves mixed in with bison cabbage rolls & melty goat cheddar. I feel like you’re my foodie-soul sister. <3 BE MINE? <3
    I can't live without eggs, butter, goat cheese, olives, avocado, canned coconut milk, almond butter, wine and vodka. Clearly I have a love affair with fat & booze. 😀

  41. I’ve never tried roasted cabbage… I actually don’t really eat it that much because I don’t really know what to do with it. I’ll have to try roasting it though! How do you do it? Also you should try braising cabbage! The chef at work made braised red cabbage a few weeks ago and it was seriously amazing. I have no idea what she put it in, but it almost tasted sweet!

    The last green thing I ate is Brussels sprouts in my dinner right now!

    And one food I can’t live without is definitely bananas. I eat one (or more) pretty much every day.

      Oh I know! I swear I’ve never been a big cabbage eater at all, but I just happened to pick up a small bag on sale at the store a couple of weeks ago, and then I remembered seeing Kristen (Stuft Mama) roasting it so I tried it out…and seriously, it canNOT get any easier! Just spread it out on a baking sheet, spray it with cooking spray, add spices (or none at all…I actually like the natural sweet flavor that comes from roasting), and then pop it under the broiler until it’s nice and wilted! Takes about 10 minutes or so!

  43. Last green thing I ate–lots of SPINACH today! I love the stuff!
    And I couldn’t live without NUT BUTTER. I’m pretty sure I could live on nothing BUT nut butter, but don’t want to take any chances… 😉 It’s just so…creamy and crunchy and salty and gaah!
    I’ve eaten so many eggs this week too! Nice thing is, they’re high in protein AND photogenic–love the falafel burger photo!

  49. I think if I ate intuitively I would mainly eat peanut butter m&m’s… that said I know I crave veggies like a crazy person if I haven’t eaten then at least once a day. Your food is freakin’ amazing that green egg white muffin is my idea of heaven.

  51. When I first started eating more intuitively the first thing I noticed is that I really LOVE vegetables, and I wasn’t just eating them in the past for the nutritional benefits. Another thing I realized? I love dark chocolate and it deserves a large space in all of my days ;-).

    OK, so I’m over here silently cheering about the roasted cabbage. [You know I love it.] But when you say roasted coleslaw are you doing something special to season it? Or are you roasting shredded coleslaw mix? What’s happening here? DO TELL!!!

      Haha, no magical happenings going on here…I just happened to run across a huge bag of coleslaw mix (like HUGE…we’re talking a two pounder from Sam’s Club…haha!). So you know, if roasting cabbage weren’t already easy enough, now I don’t have to shred it first! 😀 And actually, most of the time, I don’t season it at all…I like that natural sweet flavor it gets! Now I just need to try roasted celery…oh, and apples! 😀
