Umm, hello?

My name is Heather. It has been 2 days since my last Quest bar. 😉

It’s no secret that I have an addictive personality…whether it be a brand new CD that I play on repeat for weeks or foregoing sleep to marathon-watch all of the first season of Orange is the New Black! Ugh, does ANYONE know when the new episodes are coming out?! While my latest addiction may seem to revolve around my dwindling stash of protein bars, actually, there have been quite a few things I’ve been addicted to lately…
and I have some of my fellow bloggers to thank for that!

Goat Cheese

Or more specifically, Meghan’s Blackberry Peach Grilled Goat Cheese!

After having not one, not two, but THREE bunches of cilantro go bad on me, I FINALLY got my hands on some blackberry jam, broke out the last of my unseasonal peaches, and made the sandwich I’ve been dreaming about for MONTHS! And? It was totally worth the wait!! Creamy honey-sweetened goat cheese, warm, grilled peaches, spicy cilantro…and why yes, all that would happen to be my FREE cinnamon raisin bread!

Just to be sure that plate wasn’t just a figment of my imagination, the next morning, I decided to make it again…for breakfast! Only this time, I added a little signature Heather-strange-but-good-twist! 😉

Strawberry Jalapeno Peach Grilled Goat Cheese

I figured if regular honey and blackberry jam is delicious, then red pepper honey and strawberry jalapeno jam would probably be pretty tasty too SMACK YO MAMA GOOD! And thus the Strawberry Pepper Peach Grilled Goat Cheese was born! Oh and I also threw in some sweet sautéed onions…because duh, I’mma genius! 😉

Flatbreads

After seeing EVERYONE make these, I FINALLY made Khushboo’s Oat Flatbreads

And while I had a hard time getting them to roll out at first, they were a cinch to cook up and transformed nicely into some “tostadas” topped with Tasty Bite Madras Lentils (review coming soon), sautéed peppers and onions, tomatoes, Greek yogurt, and cilantro…with steamed spinach, avocado, and my favorite hot sauce on the side!

But don’t for a second think that this pretty plating means these babies weren’t eaten with anything but my hands…mmmm, my messy little Mexican pizzas! 😉

Brussels Sprouts

After roasting up a pan of brussels sprouts and eating them straight up with a little honey mustard (yeah, we’ve established that I’m weird. Moving on!), I knew I had to have more and since I was totally on a roll, I decided to go for a little stretch and try Jenn’s Cranberry Cucumber Shredded Sprout Salad.

I say “stretch” because as much as I wanted to make it, I didn’t have any feta or Caesar dressing. Instead of doing what I always do and SWEARING that I’ll make it after my next trip to the grocery store, I came to terms with my ADD and early onset Alzheimer’s and decided to just wing it with some substitutions.

I threw in some steamed chicken breast, hemp seeds, and goat cheese instead of feta and then drizzled it with a homemade honey mustard Greek yogurt dressing.

2 T Greek yogurt + 1 T honey mustard + 1 T apple cider vinegar = YUM!

And well, let’s just say there’s a reason why this looks like Christmas on a plate…

Chocolate

While I’m not usually a HUGE chocolate person, I’ve mentioned over the last few months that I’ve come around a bit. So when I saw Amanda’s Double Chocolate Mug Cake last week, I couldn’t help but be a little curious…

I also couldn’t help subbing in some peanut butter chips! Sorry, while I may have crossed over to the “dark” side (haha, get it?), I’m no choco-holic…and well, these babies are like pure CRACK! I’m sure Arman would agree with me on this one!

Donuts

After all the kitchen success this week, I decided to revisit my little muffins…yeah, remember those guys? But I guess after seeing Amanda AND Melissa both whip up some  chocolatey coffee dunkers, I couldn’t help but follow suit!

RECIPE-LOVIN Addiction

After getting so excited over how many people made my Crock Pot Pumpkin Chili, it feels SO good (in my heart AND my tummy) to return the favor! Plus, it just reminds me that I need to try more recipes more often! 😀

  1. I have been wanting to try Amanda’s chocolate mug cake, but I don’t have a microwave! ha! Ever since mine broke I have felt so left out with all the mug cakes flying around the internet.. Goat cheese is heaven in my eyes- I love it, and that sandwich looks amazing! The last blogger recipe I have tried was Heather’s (from Housewife Glamour) light and healthy turkey chili and it was great. I could literally eat chili every day of the week in the winter.

      All the HEATHERS!!! Lol! You and me both on the chili! It’s definitely one of my favorite warm-me-up meals! 🙂 And I totally feel ya on the microwave thing. Mine broke a few years ago (in the MIDDLE of cooking/prepping Thanksgiving dinner) and I went about 4 months without one. Heating up leftovers sucked SO bad! Haha!

  4. I don’t think new Orange is the New Black episodes come out until NEXT YEAR! But… but… I can’t wait that long. I’m getting all twitchy just thinking about it. WHAT’S GOING TO HAPPEN?!

    I so badly want to sink my teef into that first sandwich. You know how I love ’em.

    Lately, I’ve been addicted to this extra sharp white cheddar cheese that I bought at Trader Joe’s. It’s just so much more amazing than any regular ol’ cheddar. Plus twice as expensive, but eh. YOCO (you only cheese once), right?

      YOCO! hahaha! Love it! Have you seen the cocoa crusted cheddar at TJ’s? Melissa bought some when she was visiting and omg, SO GOOD!

      And seriously?! Next YEAR?! I’m going to die…I’m also going to be forced to watch season one all over again because I’m sure I’ll have forgotten everything by then! Frick!

    I wish peanut butter chips were available in the UK! I’m so terrible at following recipes I haven’t made any exact goodies from my favourite bloggers…. but every time I see a variation of a mug cake I have to make one happen in my day 😉 I’ve been pretty addicted to persimmons lately – it happens every year. I become a Jekyll/Hyde orange fruit fiend until the summer…

      Honestly, I’ve taken peanut butter chips for granted for so long…I just happened to grab a bag on a whim one day (pretty sure I had a reason, but can’t for the life of me think of it right now) and they sat in my pantry for MONTHS before I thought to open them! Yeah, I have foodie ADD! Lol! And I can totally feel ya on the Jekyll/Hyde orange fruit thing…can’t stop won’t stop! :mrgreen:

Actually, I should probably whip out my donut pan again after neglecting it ever since I made that first batch 😆 So chop, chop with the recipe sharing! — I need an excuse 😛

    Oh, and addiction? ALL the chocolate!!

      Haha! Well you’ll be happy to know that in about five hours, it will be ALL yours! 😀 Side note: I’m ashamed to admit that I’ve had this pan for over two years now and this is only my SECOND batch of donuts! Oops?

  9. Love peanut butter chips! I recently made and loved Hannah’s vegan lentil loaf, it was wonderful! There are so many recipes I want to try but have a hard time since I’m usually just cooking for one and lots of recipes make a lot.

      I run into that problem too sometimes. I mean, I love leftovers, but you can only eat something so much for so long…that’s where it’s handy to have a freezer to put things in and forget about save things for later! 😉

  12. I LOVE goat cheese!! I just made a carrott-zucchini omelette the other day STUFFED with it – SO GOOD!
    Oh, and the idea of peanut butter things in that mug cake?? Genius. These will be on my next Vitacost order!
    Haha, you know what my last recipe was. I am still in Chilli and Pumpkin Bread Heaven. if all goes well I will bake another batch tomorrow, I’m literally already drooooling!!

  13. I definitely have an addictive personality, which I think is one reason why I’m susceptible to bingeing – I just want to eat the same thing over and over! Right now I’m addicted to popcorn! I make it in a brown paper bag and then either add cinnamon and sugar, or salt depending on if I want salty or sweet!

      I feel the EXACT same way…it can be so hard to pull myself out of binge ruts sometimes. I tried that brown bag popcorn trick a couple months ago! love making it with coconut oil and cocoa powder!

  14. Hi Heather! I just made dailybitesblog’s sweet potato “tots”. They taste fantastic, but I don’t think I squeezed all the water out of the yams before I made the recipe. Will make it again though. As for addictions? No laughing, I can’t stop listening to the latest Bruno Mars album. over and over and over. My poor husband. Have a great day!

    Addictions lately? I’ve severely been addicted to mugcakes…I’m only now slowly breaking said addiction but it calls to me at night time… ‘make me…make me’

      Ohhh, applesauce overnight oats…can’t believe I’ve never thought of that! I swear I used to eat OO’s all the time, but now I can’t think of the last time I had any…I’m so bad at remembering to plan ahead when it comes to breakfast, but thankfully there are stand quick stand ins out there, like mug cakes, to save me! 😉

  18. There is so much goodness in the post… I want to keep the window open and make all the things this weekend. Especially the spicy grilled cheese. That must happen. I was craving that and a bowl of hot soup tonight. Maybe pumpkin chili? I actually am sending that to my mom now ’cause I want it for Thanksgiving (none of us love traditional whole turkey). I agree with you – you are a genius.

  23. I literally have maybe half a package of peanut butter chips left which I’m hoarding for a cookie experiment…which is kind of scary as my previous use of them only required 2 T…. I wonder how that happened.

    Oh you give me sandwich envy every time I come on here- seriously. I don’t know if your Subway ads are like ours, but their ‘motto’ here is like ‘we are sandwich artists.’ pfft sandwich artists my ass. Maybe a preschool sandwich artist.

      Haha! Aww! I saw some pb chips in the store today and thought of you! I almost bought some, but then I got to thinking…I bet it would be so hard to make some myself! I need to get in the kitchen and play around a bit, but I will keep ya posted for sure!
