Waffle Wednesday!

Hello my WONDERFUL friends!

I hope you are feeling as fantastical as I am right now! I just finished reading through all of your SWEET comments on yesterday’s “funkified” post and I am SO filled with joy…seriously, if you were in the room with me right now, I’d annoy the piss out of you! ๐Ÿ˜‰

I’m sure a great deal of my funk has to do with the whole “winter blues” thing. I just never feel like I have enough “day” to get stuff done! Guess it’s a good thing that…

SPRING is only THREE WEEKS AWAY!! ๐Ÿ˜€

Until then, since my mood is not ONLY dependent on the weather but ALSO on the amount of deliciousness in my life, I’ve been trying my best to listen to my body lately and give it what it wants…

Which brings me to the title of this post!

I know what you’re thinking…”But Heather, we ALL know you don’t make waffles!”

But as of yesterday…oh, I most certainly DO!

The Elvis Waffle

I have no idea where it came from but as I rolled over in bed yesterday morning afternoon, I was hit with the biggest, most INTENSE CRAVINGย for waffles! As I stumbled my way into the kitchen, I siked myself up Rocky styleย (puh-LEEEASE click that!) and fought back the terrifying images of waffles past…

I whipped up my batter, poured it into my THOROUGHLY greased waffle iron, closed the lid and crossed my fingers!

Once that little orange light went off, I took a deep breath…

I slowly put my hand on the handle…

I lifted up…

and…?

IT DIDN’T STICK!!!

*Happy dance*

I’d like to say this is the product of some INTENSE kitchen research…countless days of measuring…complex mathematical equations to get just the right ratios of ingredients, but…?

It was a total FLUKE!

A complete, oh-my-god-I-can’t-believe-this-actually-worked FLUKE!

Quick! Somebody get me a lotto ticket! ๐Ÿ˜‰

The “Elvis” Waffle

Prep Time: 5 minutes

Cook Time: 5-7 minutes

Keywords: breakfast high protein gluten-free dairy-free peanut flour bananas

Ingredients (Serves 1)

  • 1/4 cup peanut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 medium banana, mashed
  • 1 large egg white
  • 3 Tablespoons unsweetened almond milk
  • 1/2 teaspoon maple extract (or vanilla)
  • 5-7 drops liquid stevia (or other preferred sweetener)

Instructions

1. Preheat waffle iron and coat LIBERALLY with non-stick spray!
2. Combine all ingredients in a bowl and mix well.
3. Transfer batter to center of waffle iron, close lid, and cook until done.
4. Plate and top with Healthy Chocolate Sauce and bacon “sprinkles”.

Missing My Marvelousness

Hey guys!

I hope you all had a fantastic weekend and are getting your Monday off to a good start today. I got a (much-needed) change of pace this weekend where I found myself with a completely EMPTY and commitment-FREE Friday…

Yep, it only took meย TWO WEEKSย to finally break open my new IKEA milk frother! And Kat was definitely right…best 2 bucks spent EVER!

And while I was in the fridge for the almond milk, I made sure to stop, admire (and take pictures of) the result of the previous night’s adventure in insomnia…FridgePlease tell me I’m not the only person who’s totally overhauled the fridge at midnight!?!

I had to make room for all the kombucha, my never-ending collection of mustard, and oh yeah, I got a little visit from the Chobani fairy last week (just pretend you don’t see that Fage container, mmmkay?)…

The company graciously sent me a case of their two new flavors AND I also won a giveaway on facebook…so now I have 24 containers of yogurt spilling out of my fridge strategically stacked in Tetris fashion. ๐Ÿ˜‰

Then I fixed breakfast…something OTHER than pancakes for a change!

Toast with the last of my peach honey I’ve been hoarding for MONTHS and a side of plain Greek yogurt topped with Healthy Chocolate Sauce and raw pepitas.

Don’t get me wrong, I LOVE my pancakes, but lately, I’ve been working on 2 recipes a week (recipe tweaking and photo shooting)ย in order to get them readyย in time for posting on Sundays, and to tell you the truth, sometimes I just want something SIMPLE!

I LOVE sharing recipes with you guys and I have a TON of ideas, but there just isn’t enough time in the day week for me to do all that I want to do. I’m not quite sure what this means…or what direction I need to take to get more balance, but these things have just been on my mind lately and I wanted to share.

Growing up, maple and brown sugar was my FAVORITE flavor in the oatmeal variety box…well, unless I lucked up and my mom bought the fruity ones…
Helloooooo strawberries ‘n cream! ๐Ÿ˜€

But wait a minute, today is Pancake Sunday!

So WHY am I talking about oatmeal??

Oh yeah, because I made these…

Maple & Brown Sugar Oatmeal Pancakes with Butter & Syrup

Oatmeal PANCAKES!

Maple & Brown Sugar Oatmeal Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 1/3 cup water
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons ground flax
  • 1/2 scoop vanilla protein powder (30g scoop)
  • 1/2 teaspoon sodium-free baking powder
  • 1 large egg white
  • 1-1 1/2 teaspoons* brown sugar, packed
  • 1 teaspoon maple extract

*I found that with 1/2 teaspoon more, the flavor was much more pronounced without being overly sweet.

Instructions

1. Preheat a skillet or griddle over medium heat and coat with non-stick spray.
2. Cook oats and water in a microwave-safe bowl in the microwave for 1 minute, stir and set aside to thicken (2-3 minutes).
3. In a small bowl, combine almond milk and vinegar, stir and set aside for 2-3 minutes (this is your buttermilk).
4. Combine all ingredients, including oats and “buttermilk” in a small blender and blend until smooth.
5. Transfer batter to skillet, forming 4 small to medium-sized pancakes and cook 4-5 minutes before flipping (small bubbles will form).
6. Cook an additional 2-3 minutes on the other side.
7. Plate and top with butter and maple syrup, or…
