For me it’s a long list of things…but at the top of that list are hugs from my mama, letting my arm “fly” out the window while riding in the car, and always, always, ALWAYS the salty sweet combo of peanut butter and jelly.

Since I first whipped up a batch of this granola to gift to my friends at work for Christmas, I’ve made three additional batches…each one with a little tweak here and a little tweak there, but let me tell you, this is one recipe you canNOT mess up…well, unless you forget the sugar…then it kinda tastes like air.

This is the perfect on-the-go breakfast or snack for children of ANY age! It’s free of refined sugar and, with a little added protein boost from the peanut flour, it’s incredibly filling! If you don’t have peanut flour, simply replace it with more wheat germ which I love using since it helps form great granola clusters! And for all my friends out there with peanut allergies, this would be just as tasty with nut butter alternative…I think my next batch will be involving some sunflower seed butter!

PB&J Granola

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients (5 cups)

  • 1 1/2 cups old-fashioned rolled oats
  • 1/4 cup wheat germ
  • 1/4 cup peanut flour (or more wheat germ)
  • 2 Tablespoons Demerara sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 Tablespoons grapeseed oil (or olive or coconut)
  • 2 Tablespoons unsweetened applesauce
  • 1/2 cup roasted salted peanuts
  • 3/4-1 cup dried fruit (cranberries, blueberries, cherries, raisins)

Instructions

1. Preheat oven to 350Β°F. Line a baking sheet with parchment paper and set aside.
2. To a large bowl, add oats, wheat germ, peanut flour (if using), cinnamon, and sugar and stir to combine.
3. In a microwave-safe bowl, stir together peanut butter and syrup and heat on high for 30 seconds.
4. Pour peanut butter sauce over oat mixture and stir until all the dry ingredients are coated well.
5. Spread evenly on prepared baking sheet and bake for 20 minutes, stirring halfway through.
6. Allow to cool for at least 10 minutes before combining with peanuts and dried fruit.
7. Store in an airtight container for up to 2 weeks.

Saved by the Spoons!

Happy OVER the hump day!

Ok, ever have one of those days where you have so much to say but none of the words seem to find their way to your lips keyboard? Well, I’ve been sitting here for over an hour now and have typed, deleted, and REtyped an intro and have yet to come up with anything remotely entertaining…

But thanks to Amanda and her link up-O-randomness, I don’t have to sit here and try to think of a way to string all my thoughts together…I’ll just throw them out there and you can catch ’em! Ok, are you ready….annnnnnd BREAK!

Popped Quinoa & Cheesy Eggs

1. An egg shell that is! πŸ˜‰ Last Thursday, I decided it had been FAR too long since I’d made Spabetti’s Popped Quinoa and Cheesy Eggs…so I made sure to remedy that with some of the quinoa I had leftover from my Detox Quinoa Salad. Just as good if not BETTER than I remember and SO easy!

2. I’ve found one thing that kinda sorta doesn’t suck about winter…I forgot how red my hair gets! I’m always closer to a strawberry blonde in the summer, but in the winter it gets dark. I guess you could call me a seasonal ginger! πŸ˜‰

3. Last Friday, I ventured out to check out the YMCA by the man-friend’s house. Nearly two HOURS later, I left with one huge grin on my face and two arms made of jello after playing with what I am now referring to as the rope pulley downy thing. Anyone ever tried it before? It’s awesome!

4. The night before, the man-friend and I added number 936 to our winter movie list with The Lone Ranger. I know the critics ripped this apart when it first came out, but honestly, I have no idea why…we both really liked it! And Johnny Depp was amazing as always!

5. While watching our flick, we kept warm with a big bowl of “spaghetti”! The man-friend got curious a few months back and decided to order some Quest pasta when stocking up on bars and we finally got around to try it…I’ll be honest, it took a little getting used to, but not bad! Just make sure you rinse them THOROUGHLY before eating since they smell like straight up bad fish right out of the package! πŸ˜•

6. Smelly fish and all, Thursday night’s dinner was a HELL of a lot better than Friday’s. We went to Genghis Grill for the first time and it was SUCH a disappointment. It took forever to get through the line and then (probably because I opted to go sans starch), my bowl was drowning in oil…which later made me sick for the rest of the night.

7. But luckily before heading home, we popped in a Marshall’s and found…

9. I finally finished the Divergent series!! I say “finally” because after a weekend of restoring/crying over deleted pictures, I only had a chance to read a couple of paragraphs. Luckily, we had a bit of a slow night at work on Monday…and I read the whole SECOND HALF! Seriously people, if you haven’t already, you’ve GOT to read this! And then email me so we can talk about it! πŸ˜‰

WIAW: Back From Hiatus

Alternate title: Where the HELL has Broccoli been?!

I know, I know…it’s been a while since I’ve partied…SIX WEEKS to be exact! 😯 As someone who has been participating in Jenn’s fun-filled foodie finkup since the beginning, I once thought I would never miss a celebration. But over these last several weeks, I got to thinking…after hitting MY rock bottom last month, I started looking at things a bit differently…and I STOPPED putting so much emphasis on my meals. I know this seems a little weird coming from a food blogger, but honestly, I think it was the best thing for me.

When I participated in WIAW early on, I used to just snap pictures all willy nilly, never really giving much thought to how it all came together. Then, as time went on and I developed more of a “writer’s perspective”, I started trying to make it more entertaining and make a story out of each one…OR I would dwell on the “balance” for the day…which would obviously change my food choices.

When I stopped feeling compelled to take a picture of every.single.thing I ate, eating began to feel natural…and normal. So much so that sometimes I couldn’t even remember what I had for lunch the day before! And while this may not be conducive to food blogging, I hope you guys will cut me some slack on the food front while I work on sorting things out.

All that being said, I DO have a WIAW post for you today!

Luckily, I’ve been repeating some meals over the last week or so, so I actually have a picture of everything I ate yesterday…plucked from the FULLY RESTORED photo libraryΒ (hal-lay-LOOYAH!) and ready for your viewing pleasure. And since this was a working night, we have twenty-four food-filled hours…or 1440 mouth-watering minutes! πŸ˜‰

The “day” started at 12:30am with a mug of green tea and aΒ Kabocha Donut eaten between patients!

A few hours later, at 3:30am, I indulged in another mouthgasmic cookie dough Quest bar and I guess I was thirsty because I ended up chugging a 32oz bottle of water.

Is it sad that I’m hoarding the last bar I have of this box now? I think I may hunt down some heads-up pennies and horseshoes before getting more…fingers crossed the next box is just as doughy!

Once my shift ended, I made my way home through the “snow” and ice. I walked in the door and KNEW I needed something warm in my belly…but it had to be quick because it was getting close to 8am and I was fading fast!

For some reason, I’ve been waking up earlier than usual lately and this day was no different. Right at 1:00pm, I was wide awake…and suddenly ravenous!Β Since I just hopped out of my 100 degree bed…thank you man-friend for buying me that electric blanket in 2012 (wow, that sounds like forever ago!)…it was time for a bowl of my current obsession…

Corn Chex mixed with Mom’s Best “Lucky Charms” and topped with peanut flour, half a banana, and some almond milk! I think I could eat this every day…wait, I HAVE! πŸ˜‰

After I finished eating, I worked on some chores around the house…because the thought of going outside made my bones hurt…high of 18? I don’t THINK SO!

At 5:30pm I was feeling tired again…but snacky too so I tossed back two or three handfuls of salty and sweet deliciousness:Β White cheddar Mini Pops and cherry cordial M&M’s (which taste EXACTLY like chocolate-covered cherries…SO good!).

After my little schmack, I laid down for about an hour before it was time to get up and get ready for work! On before heading out the door, I made a cup of half-caff (ha, I just typed calf!) coffee and took it with me on the road…

Actually it was in a travel cup, but this one is prettier! Moooo! πŸ˜‰

A couple of hours after my shift started, I had some down time for dinner so I opened my lunch bag and pulled out the tupperware blue plate special!

Turkey & Cheese Wrap with Potatoes and Kabocha

Grilled Wrap with turkey, Swiss, kale, pickled red cabbage (like sauerkraut only sweeter), and some smokey onion mustard with roasted red potatoes and kabocha on the side…all eaten cold because I was too lazy to walk to the break room to use the microwave it taste better that way, right Arman?

I washed this down with a lime flavored LaCroix and then ended up drinking ANOTHER 32oz of water before the clock struck midnight…not bad for not trying…definitely a proud moment in my intuitive eating journey! πŸ˜€
