Um, yeah…so it’s been a while, huh? I was honestly starting to think that after SIX months, I might never flip again! But lo and behold, here I am! That’s right folks, your Pancake Queen is BACK! Now, cue the slow clap and start the chant…

It happened one regular Thursday morning…after weeks of toying with the idea of pulling out the old griddle, I finally gave in. It was nerve-racking to say the least. What if I forgot how? What if all the stressors of calorie counts come back? WHAT if they end up tasting like cardboard?!

To help put my mind at ease, I threw on my fluffy QUEENLY robe, grabbed my ROYAL spatula, pulled up my favorite playlist on my iPod IMPERIAL auditory device and hit shuffle…

Coconut Raspberry Pancakes with Coconut Yogurt Sauce via Kiss My Broccoli

What? I told you I was a total ROCKSTAR! And yeah, I may or may not have tied scarves to my spatula and used it as a microphone while I was anxiously waiting to flip! Obviously, plants aren’t the only things that take well to the musical environment because these babies they came out perfectly on the FIRST try! They’re superhuman, hippie-fied, and OH sooooooo SEXY on the inside! 😉

Coconut Raspberry Pancakes (GF)

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients (Serves 1)

  • 1/4 cup gluten-free instant oats
  • 1/8 cup brown rice flour
  • 1/8 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon xanthan gum
  • 1/3 cup coconut milk
  • 1 teaspoon apple cider vinegar
  • 1 egg + 3 egg whites
  • 1/2 teaspoon vanilla
  • 1/4 cup chopped fresh raspberries
  • Toppings: Coconut-flavored yogurt thinned with water (or milk), raspberries, shredded coconut, and cacao nibs

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. Combine coconut milk and vinegar, stir and allow to set for 4-5 minutes.
3. In a medium-sized bowl, combine dry ingredients and stir with a wire whisk to break up any lumps.
4. In a separate bowl, whisk egg and egg whites.
5. Stir in milk and vanilla to eggs and then add to dry ingredients, mix well.
6. Spoon batter onto skillet, forming 4 small-medium sized pancakes (batter will be thick).
7. Cook 6-7 minutes before flipping (batter will not bubble) and another 3-4 minutes on the other side before transferring to a plate.
8. Top with thinned coconut yogurt, raspberries, shredded coconut, and cacao nibs.

Not a single thought or worry over calories, fat grams, or sugar entered my head once I took that first bite…and cardboard was the absolute FURTHEST thing from my mind. The texture was unreal…so soft and cakey! And the juicy raspberries were like little “pops” of surprises scattered throughout! I used coconut-flavored Yoplait Greek yogurt for sauce along with some crunchy toppings, but if you go with a non-dairy yogurt, these babies can also be completely DAIRY-FREE!!

Falling for Summer

Happy Friday, pumpkins!

Wait…no, no, NO!!! Ok, I enjoy fall as much as the next pumpkin-obsessed foodie. I mean, it IS my favorite season, but this summer just went by WAY too fast! The weather here didn’t get too hot, the bugs weren’t that bad, and the summer produce? Well, I just haven’t had my fill yet! I’ve got  a fridge FULL of blueberries, cucumber, and raspberries…and that’s still not stopping me from stuffing ma’ FACE with as many peaches and nectarines as I can find!

But herein lies the real problem. Like I said yesterday, I kinda rocked out in the kitchen last week and now I feel like I’m running out of time to share! Seriously, I can’t be the ONLY food blogger out there who feels the pressure…

Creamy Coconut Raspberry Oats

Prep Time: 3 minutes

Cook Time: 2-3 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 3/4 cup water
  • 1/4 cup coconut-flavored yogurt (I used Yoplait Greek)
  • 1 Tablespoon coconut flour
  • 1/4 cup chopped raspberries
  • Toppings: 1 Tablespoon coconut-flavored yogurt thinned with water, raspberries, unsweetened shredded coconut and chia seeds (optional)

Instructions

1. In a microwave-safe bowl, combine oats, water, and yogurt and stir well.
2. Cook on high for 2-3 minutes, stirring halfway through.
3. Stir in coconut flour.
4. Stir in raspberries.
5. Add desired toppings and enjoy!

Rockin’, Flowin’, and Zippin’ Through the Week!

Happy Thursday broccoli fans! I know, I know…I have entirely too much energy right now…on a Thursday morning…but that’s probably becawwwwwse I just had a cup of coffee the size of my face in order to assure myself I can make it through the last bit  of my shift! NOT that I’m blogging at work or anything…no…because that would just be wronnnng!

Oh and if you’ve ever wondered why the hell I use so many “dot dot dots” all the time, that’s just how my brain works…if I type how I think/speak, my life is basically just a series of run-on sentences strung together…sometimes with a little song and dance thrown in just for good measure! 😉

Duh duh duhhhhh! The illustrious Week in Review!

Since I’ve been jabbering on and on about meal-prepping, kitchen b!tchin’, and basically slapping you upside the face with two pieces of bread (or something like that), I haven’t had ANY time lately to tell you guys about some recent happenings over here in Broccoli Land!

While I am definitely part of the list-making crowd, I am soooo not of the Type A mentality…sorry to all you structured and organized people, but this post is gonna be all over the place!

So…last week, I worked a lot, I slept a lot (score!) annnnd…

Week in Review Eats

I ate very very VERY well!

A couple of recipes that’ll be heading your way soon AND I may or may not have made a total ROCKSTAR out of myself in the kitchen on Thursday…perrrrrhaps prompting some new confessions? But that’s a topic for a an entirely DIFFERENT day! 😉

But back to those eats…notice anything about them? I didn’t at first…which only makes me want to pat myself on the back even more, but how about the balance? And that’s even without the horribly un-photogenic but definitely delicious pizza I had on Saturday night! Yep, salads…candy…oats…chocolate…red meat…no meat…and enough nut butter to finally quell my craving! I’ve actually only recently noticed that for the past week and a half, I am thinking less and less about food and feeling more and more “normal.” I haven’t felt this way in over a YEAR! I am satisfying cravings, savoring my food, and things are
FINALLY flowing! 😀

On Tuesday, I got back in the gym…

I DID actually workout and not just take 14 pictures of myself in the abandoned studio room! 

It was only the ONE day…but I’m totally ok with that. The motivation is still there, but unfortunately, my knee is not. The last few things I’ve done (even just walking) has left me sore and limping. I’ve had a lot of popping and cracking going on lately so I think it’s just the scar tissue breaking up, but to be on the safe side, I’m taking a bit of a break right now…which just gives me more time in the kitchen! 😉

Eh, walking is entirely overrated anyway…ESPECIALLY when you can fly ZIP!

My very first time ZIPLINGING!!!

Last Saturday, the man-friend and I traveled to Bottom View Farm in Portland, TN, crossed a line off my bucket list, and zipped our way around the acreage!

IMG_7271 IMG_7275IMG_7283It was the absolute BEST day to do it…clear blue skies, around 80 degrees and the views weren’t half bad to look at! There was only about 7-8 lines and maybe one that went kinda fast, but I’m definitely geared up to do it again sometime!

Afterwards, spontaneously met some friends for some UN-feng shui pizza, but not before heading to the TJ Maxx to lust over the foodie finds find me something to wear other than a t-shirt and yoga pants…

I found the CUTEST shirt (love the one-side zipper!) and the man-friend INSISTED on paying for it (so sweet!)…once I changed, I INSISTED on taking another 14 pictures of myself!

Oh and we also went to the movies to see Mortal Instruments! It was really good and I couldn’t help but think that Kammie looks a LOT like Lily Collins! Now I want to read the books (number 393 on my summer FALL reading list) while eating a double chocolate microwave mug cake! 😉
